Domaine du Bollenburg is an independent, family-run winery in the heart of Alsace, with roots dating back to 1887. It was in 1947 however, that the Clos came to the Meyer family, who refocused the estate on producing high-quality wines that honour and preserve Alsatian cultural identity. Situated on Bollenberg - the largest limestone hill in the canton of Rouffach - the vineyard spans 25 hectares, showcasing the unique terroir of the region.
This Sylvaner opens with delicate botanical and mineral nuances, revealing aromas of dried chamomile, thyme leaves, and a subtle hint of blanched almonds. On the palate, it’s medium-bodied, with the grape’s naturally crisp acidity balanced by soft notes of beeswax and a touch of salty brine. The finish is long and tangy, reminiscent of the elegant, savoury lift of a fine Fino Sherry.
A dry, food-friendly white that shines as an apéritif and pairs well with fish and delicate white meats.
