Earthy & Rustic

The construction of Château Plaisance dates back to the 1780s, however its vineyards are much older. Bordering the Margaux appellation, Château Plaisance's vineyards overlooks the Garonne River and counts with ten hectares. 

The soils name 'palues' are mostly composed of clay, with a small percentage of sand. Its particularity is that is is located only a few meters away from the Garonne River. The 'palues' were gained on the river thanks to a draining technique implemented in Bordeaux by the Dutch. The 'palues' contain a large amount of sediments that were before underwater, making it a rich and fertile soil. In the past, wines produced on 'palues' were considered the best of their appellation.

An elegantly matured Bordeaux Superieur with surprising persistence. Named after the limestone soils ('palues') of the vineyards, this blend of 70% Merlot with 20% Cabernet Sauvignon and 10% Petit Verdot is showing lovely earthy, leather and licorice notes along with cherry, raspberry and blackcurrant.

Rich & Bold

Finca Aylés is located in the northeast of Spain, near the city of Zaragoza, halfway between Madrid and Barcelona.  The wine project of the Ramón Reula family began its journey in the 1980s and ended with the reunification of various properties that had belonged to the Finca Aylés since the Middle Ages. Today, Aylés is one of the largest private historical farms in Aragón.  

Attractive deep cherry red in colour. The wine displays a pronounced intensity on the nose, well defined, with an extraordinarily complex and wide range of aromas; think dark red fruits, ink, and spices.  On the palate the wine is clearly defined by its elegance and ripe fruit intensity. It's harmonious and well balanced leading to a rich finish. 

It's the perfect wine to pair with rich meats and anything on the BBQ.

Rich & Elegant

Softly-textured wine from an estate in Lussac-Saint-Emilion. Moulin Noir consists of seven hectares of vineyards on a good clay and limestone site. The wine is a blend of 60% Merlot and 40% Cabernet Franc and is aged 12 months in oak.

This notably complex right bank blend from a satellite appellation of Saint-Emilion offers appealing savoury notes along with a mineral, iron component and liquorice spice. The oak treatment is wonderfully integrated with wood spice elevating the bright red fruit. Harmoniously matured, graceful and very elegant. The staying power of the finish is impressive. Drinking very well now.

The high content of Merlot in this wines makes it perfect with spicy Asian dishes like Korean hotspots or Chinese food. It also pairs nicely with roasted lamb or duck terrines and with fatty cheeses like Comté.

Classy & Complex

Château Les Paruades is located in Macau en Médoc, on the foothills of the Margaux appellation and on the edge of the Gironde. The estate covers an area of 3.5 hectares with Merlot, Cabernet Sauvignon and Cabernet Franc planted on clayey palus soil.  The vinification process follows the traditional methods of the Médoc, with total destemming and fermentation in stainless steel and concrete vats.

A blend of merlot, cabernet sauvignon and cabernet franc in Pomerol mimic, attractive and edgy when it wants or needs to be. Right Bank stylistic in any case, herbals and amaro welling through with liqueur consistency and fashion. Quite chic and notably concentrated, really credible, with brisk acidity and plenty of toughness keeping the wine safe, elongated and with portents of further potential. Quite a steal actually.

Rich & Fruity

Located 50 km east from Saint-Émilion, the Barouillet family has been growing grapes for at least 8 generations in Pécharment, Monbazillac and Bergerac. Vincent Alexis, who joined his father in 2010, converted the vineyards to organic and is about to obtain the biodynamic certification. 

This is organic and low intervention at its best. Made with Cabernet Sauvignon, Malbec and Merlot, and a hint of Cabernet Franc, the wine is filled with liquorice and ripe red fruit aromas. Notes of blackcurrant reveal a fruity and rich mouthfeel that still maintains freshness. The structure is subtle but very persistent. It will pair perfectly with grilled meats, roasts. It is ideal for friendly occasions with friends.

The freshly harvested grapes are destemmed and lightly crushed before going into stainless steel vats, where they ferment from their indigenous yeasts. This wine is sulphur-free, it is neither filtered nor fined.

Fresh & Juicy

To express their love for great flavours, Winemaker Julien Bonneau (Château Haut Grelot) and Chef Alexandre Lavigne dreamt up their own range of wines and created Cuvée Emma. 

Bunches of Merlot grapes are sourced from the hillsides of St Bonnet sur Gironde in the south of the Charente Maritime, a sub-region near the Ocean, on the outskirts of Bordeaux.

Emma embodies the purity of a natural wine, the commitment to sustainable viticulture, and the importance of the vine balance. Winemaking is naturally done without the use of sulphites. The wine boasts notes of black fruits and candied fruit. It is fruit-forward, full-bodied, with a beautiful length.

Suggested pairing: red meats and umami flavours, such as cacio e pepe or carbonara pastas. 

Big & Bold

Joan Ramón Escoda has been shaking the pillars of winemaking in his home-country and abroad since the 90's. He is an absolute anarchist, a radical winemaker, a rock'n'roller and a grass-roots innovator; and his wines are everything but banal.

Nas del Gegant is a blend of Cabernet Franc, Cariñena, Garnacha, Merlot, aged in amphora and utterly unique with wild herb, savory notes integrated with deep, dark earthy fruit. It somehow tastes ancient and fresh simultaneously.Full-bodied, fruity. A big wild wine with lots of fruit, character, and structure to hold up against the lush palate. This wine finishes slightly off-dry but remains balanced.

Decant for best flavour. Pair with BBQ, highly spiced roast meats, rich stews.

Fruity & Bright

Château Haut Grelot, situated near the Gironde Estuary north of Bordeaux, has been dedicated to vineyard care and winemaking since 1920. 

This classic Bordeaux blend features 70% Merlot and 30% Cabernet Sauvignon, cultivated in the gravelly, sandy, and silty soils of Côtes de Bordeaux. Exhibiting a deep ruby hue, its bouquet reveals vibrant red berry aromas complemented by vanilla and spice. On the palate, the wine is smooth, fruit-forward, and well-structured, making it an excellent companion to game or red meat dishes.

Fresh & Juicy

Fabio Motta, originally from Lombardia, began his adventure as a winemaker in Bolgheri in 2010 when he was thirty years old. However, he first came to the area 10 years earlier when he ventured into the vineyards to take part in the grape harvest as a student of agronomy.
It was love at first sight in more ways than one; he fell in love with the territory and met his future wife, Benedetta Satta, daughter of Michele Satta, a vintner who has been part of Bolgheri’s history and progress over the years.

This Bolgheri blend of 50% Merlot, 25% Sangiovese, and 25% Cabernet Sauvignon is aged for 12 months in cement. Fabio Motta describes it as the wine that launched his winemaking journey, expressing everything he loves about Bolgheri: clear, juicy fruit, harmony, and effortless drinkability. Merlot brings softness and volume, Cabernet Sauvignon adds structure, while the Sangiovese contributes freshness and complexity. Lighter and fresher than expected for the region, it shows silky tannins and aromas of cooked cherry, blackberry jam, mint, and rosemary.

Pair with typical Italian fare - Le Pievi shines next to pizza, light meats and pasta. 

Floral & Fruity

Lighthall Vineyards is a small, proud, low volume and high quality winery located in enchanting Prince Edward County, Ontario, Canada. All their wines are produced in a non-interventionist manner and fuelled by passion as hearty as our vines. They also make cheese, designed to pair with their wines.

Cool-climate Merlot at its best. This wine is loaded with all things blue and moody: damson plums, violet, fig, blue-acai, and chocolate-covered blueberry. Rich oak tones of vanilla, chocolate, and marshmallow balance out the fruit intensity and leave a long yet distinguished finish.

Fatty, high protein foods are recommended to bind with the high tannin and balance the acidity. Roasted leg of lamb with Saskatoon berry compote, coffee-rubbed steak, seared duck breast, creole jambalaya, pork loin with roasted plums, and blue cheeses all go
great.

In 1985, Mario and Nancy Adamo transformed a 28‑room inn north of Toronto into Hockley Valley Resort, embracing a location that truly felt like home. Inspired by the vine‑covered hills of his hometown in Calabria, Italy, Mario envisioned the slopes of Hockley Valley as a place where grapes could thrive. In 2000, the first test vines on a newly purchased 77‑acre property were planted, and by 2015, Adamo Estate Winery was born. Today, this boutique, small‑batch winery boasts over 28,000 vines, farmed with organic and biodynamic principles. Led by winemaker Shauna White, the team crafts terroir‑driven wines that showcase both the character of Hockley Valley and select sites from Niagara’s most renowned vineyards.

This Bordeaux-inspired blend opens with a youthful, vibrant nose of ripe red and black berries, accented by floral notes, hints of liquorice, and a touch of toasted almond. On the palate, juicy redcurrant and ripe strawberry flavours are supported by silky tannins and balanced acidity, creating a smooth, refreshing profile. Clos Bel-Air is a charming 3-hectare estate set on the clay-limestone hillsides bordering the village of Lussac in Saint-Émilion, where Merlot dominates the plantings alongside a smaller proportion of Cabernet Franc. Managed under the Sustainable HVE designation since 2016, the vineyard embraces regenerative, biodiversity-focused viticulture that prioritizes environmental stewardship and soil health. Owned by the Tessandier family—longstanding members of the Bordeaux wine community and proprietors of Château Moulin Noir, Château Lescalle, Château Maucamps, and Clos de May—the estate reflects an artisanal and responsible approach to winemaking, uniting family tradition, respect for the environment, and the authentic expression of the Lussac terroir.

Its 23-hectare vineyard, planted with 80% Merlot on clay soils and 20% Cabernet Sauvignon on sandy gravel, benefits from exceptional sunshine and warm temperatures, ensuring full grape ripening. Under the stewardship of Philippe Magrez, a fourth-generation winegrower, modern winemaking techniques are seamlessly combined with the finest Bordeaux traditions. The 2020 vintage of our Merlot captures the essence of a warm year in the cool-climate terroir of the Niagara Lakeshore. This sub-appellation’s proximity to Lake Ontario tempers the summer heat, preserving fresh acidity and allowing the fruit to ripen slowly and evenly.

For pairing this Merlot, think: roast turkey, beef short rib, or a rustic ratatouille! For braised meat pairings, try complementing Merlot’s boisterous fruit notes with chimichurri sauce.

The Merlot Vin Nature 2019 is a truly deep and fascinating wine, it reminds us of walking through the pine and mossy dampness of a forest path by a lake in the Canadian Shield on a cool autumn evening, stopping to pick some wild-blueberries and noticing in the background a roaring fire.
