Oenops was founded in 2015 by talented winemaker Nikos Karatzas, who produces a stunning range of distinctive wines from his newly established state-of-the-art winery. He sources indigenous and rare grape varieties grown on exceptional terroir focusing on cool-climate sites and old-vine plots, from carefully selected vineyards in Drama and Macedonia, which have been cultivated by ambitious winegrowers using an organic philosophy. 

Niko adopts a minimal intervention approach and vinifies plot by plot using stainless steel, concrete, oak barrels, and amphora. His aim is to source great fruit and craft wines that reflect the nuances of the native varieties and the identity of the terroir and as a result, he produces a collection of authentic, elegant, and delicious wines. 

The “Dots family” consists of single-varietal wines from indigenous varieties; it is named this way after its illusional label of dots where one can find the name of the variety the wine is made from Exceptional terroirs, minimal intervention viticulture, and wine making with a unique goal: to express clearly and honestly each variety’s character.

Grapes are sourced from contract growers, mostly from mountainous sites of Heraklion, Crete. After their chilling at 5°C, the grapes are carefully sorted and pressed as whole clusters in a vertical press. Spontaneous fermentation takes place slowly in 4 different types of vessels, from 4 different elements: clay amphorae, concrete tanks, large barrels of 600L and stainless steel tanks, providing the wine with impressive complexity and depth.
Wine is aged for 6 to 9 months in amphorae and concrete tanks, with only a small percentage in the old large barrels, in order to preserve all of its purity of fruit and taste; after that, wine is bottled unfiltered to retain its purity and elegance.

Complex nose of citrus with hints of white flowers and herbs on a mineral shade. It is creamy and layered in the mouth with flavors of stone fruits, lime and spices. It’s lively acidity provides freshness to the wine and a persistent after taste.

Great match for fish, oysters, Asian cuisine, pasta, and a wide selection of cheeses.

Vidiano is a high acid white native to Crete. This shows fairly lifted lemon peel, salty minerality and some leesy character on the nose. It is medium weight, fairly richly textured and warming with some anise in the background. Minerality trails on the finish. The length is excellent. Good and proper Mediterranean white. Nikos Karatzas' vidiano (a white variety reportedly local to Crete) is intriguing. It was spontaneously fermented in four different types of vessels made of 4 different materials: clay amphorae, concrete tanks, large barrels of 600L, and stainless steel. This process has lent the palate a nuanced and alluring texture - it is rounded and fleshy, supported by refreshing acidity. Flavours of orchard and citrus fruit are joined by fresh herbs and wet stones here. Bitterness on the long finish adds even more freshness. Tasted February 2026.

From Drama, northeastern (Macedonian) Greece and a solo vidiano raised in a tripartite mix of amphora, wood and stainless steel. Naturally fermented while the amphora part sees six months on the lees to smooth and in effect cream (like churned ice cream) the green to yellow freshness of fruit. Cool, no doubt herbal and the citrus partially replaced by phenolics in this vintage. Not quite the same energy though that loss is made up in complex gains. Drink 2026-2028. Tasted February 2026.
