Château de La Chaize is among the oldest, most historic estates in Burgundy’s Beaujolais region. Cared for by the same family for nearly three and a half centuries, the estate has been passed on to new owners, the Gruy family, who are equally committed to managing the estate with the utmost care, while implementing an ambitious environmental plan.

Brouilly is the southernmost appellation in Beaujolais. This cru site specifically - but apparent in the entire Beaujolais region – are hills more pronounced than you will find in Burgundy. Some are rolling while some are steeper, and this topography has a direct influence on the way the vine rows are planted, how they are tended (by hand or machine), and how the vines are pruned. Château de La Chaize estate is located on a natural amphitheater with south/southeast exposure, on steep hillsides of sandy pink granite that allow for excellent drainage.

For this wine, fermentation takes place in stainless steel tanks using indigenous yeasts with semi-carbonic maceration - 50% Burgundian (destemmed) and 50% whole cluster. Pumping-over is practiced without punching down, to preserve the fruit and freshness of the wine. 70% of the wine is aged in stainless steel, 30% in foudres for 12 months.

Delectable, fruity nose underscored with aromas of red fruits and notes of nutmeg spice. Generous and aromatic on the palate, with supple, mellow tannins. Notes of red fruit and spice offer depth and lively acidity. Expressive, generous and enjoyable right now, this is a perfect wine to enjoy with a slight chill.

Pair with all meats, chicken, wild mushrooms, and strong cheeses.

Mineral & Fresh

Réva winery focuses on producing wines of excellence with extreme attention to the particular characteristics of each grape variety and the utmost respect for diversity. All the vineyards are cultivated organically and the estate is run by a group of young professionals who value both tradition and innovation. 

This wine is made from Sauvignon Blanc (30%) and Sauvignon Gris (70%) planted on soils with lequio formation clay and limestone, with marl and fossiliferous sandstone, a mix locally known as “elveziano”. After the harvest, which takes place very early in the morning, the grapes stay on the skins for about 8 hours.

Straw yellow in color. The nose is complex and pleasant, characterized by notes of citrus, passion fruit, sage, and flint. The palate is fresh, lively, and supported by a good acidity. Excellent length.

Pair this wine with seafood pasta, pesto or grilled vegetables.

Bold & Earthy

Unlike many winemakers, Frédéric Brouca is largely self-taught and took no formal courses on viticulture or winemaking.  His concept of growing grapes and winemaking focuses on reducing human intervention in the processes, and making it as natural as possible.

Frédéric makes a extremely small amount of red, sweet Vermouth from Grenache, Carignan and Terret Blanc at this winery in Faugères, South of France.

He makes it classically by adding neutral spirits produced from his own 1933 Cognac Still. On the side he macerates local botanicals; thyme, rosemary, lavender, rose petals and add some Moroccan Orange peels, local honey and 20% of the microscopic production is aged in barrels outside in the sun for 3 weeks or so to develop some oxidative complexities.

Floral and fresh, this vermouth is perfect to enjoy on its own with just an ice cube and a small bit of the best orange rind you can find.

Floral & Bold

While the vineyards that form Punset have been farmed by the Marcarino family for generations, it is truly thanks to Marina and her incredible energy that the estate is how it is nowadays. Her passion for the soil and the environment led her to embrace biodynamics and the agronomic philosophy of Manasobu Fukuoka. From one of the healthiest vineyards in Italy, Marina crafts wines that brim with life, energy, and pure terroir.

Bright and balanced, this Barbaresco has an intriguing balsamic fragrance of menthol and eucalyptus layered with black cherry, leather and sandalwood. The fresh, delineated palate offers wild cherry, crushed raspberry, white pepper, mint and balsamic notes alongside supple tannins that give a smooth texture.

Enjoy this with beef and or game such as beefsteak, lamb, veal, rabbit and wild boar. Classic pairing with truffles! 

Herbal & Textured

Located in Snežatno in the Goriška Brda zone of Slovenia, near the border of Italy, Štekar winery is known for producing wines in the traditional manner, with extended skin contact and little or no sulphur added.  The hilly rugged terrain is marked with monuments to both world wars.

Rebula, also known as Ribolla Gialla, is a grape native to Friuli in Italy and this little corner of western Slovenia. As the natural fermentation began, the skins remained with the must for 24 days before being removed. The wine remained in giant Acacia wood barrels for eight months before being bottled without filtration. The result is expressive and spectacular; aromatic and inviting on the nose, the Rebula showcases yellow fruit, a firm structure. 

Orange wine made from Ribolla Gialla grapes pairs beautifully with a variety of dishes due to its unique flavour profile and aromatic qualities. Consider serving it alongside roasted vegetable dishes, as the wine’s acidity complements the sweetness of the vegetables. Additionally, it goes well with savoury dishes like pork loin or chicken marinated in herbs, and it can also enhance the flavours of a cheese platter, especially with aged cheeses or those with a bit of funk, like aged Gouda or blue cheese. For a delightful finish, try it with a citrus-based dessert or a fruit tart, which echoes the wine's fruity notes.

Floral & Fruity

Punset is an innovator when it comes to organic wine. Inheriting the estate in 1982, Marina Marcarino is a fifth generation winemaker.

This white is called 'Ne?' after a popular Piedmontese slang, used to finish a sentence, similar to  'eh. It is a blend of Arneis and Nascetta, local grapes in Piedmont. About 30% of the grapes macerate on their skins before starting fermentation, acquiring a special texture both on the palate and the nose. The wine ferments for month and ages in stainless steel. 

Rich and fruity on the nose, displaying floral notes and white fruit flavours, with a hint of spice. This fruity sensation transitions in the mouth to deeper notes of honey, mellow butter and a light acidity that swiftly cleanses the palate. Well structured, with excellent acidity and balance.

Marina recommends to enjoy this wine as an aperitif, with fish or white meat.

Domaine de la Garenne's Sancerre, made from 100% Sauvignon Blanc, is crafted from 7 hectares of vineyards primarily located in Verdigny, with a small parcel in Sancerre. The wine is grown on a mix of calcareous "Caillottes," clay-limestone "Terres Blanches," and flint soils, offering a vibrant, full-bodied character with mineral complexity. 

The colour is crystalline with golden reflections. The blend of the different terroirs, combined with a harvest at perfect maturity give a good harmony to this wine. During the tasting, the elegant notes of citrus and white-fleshed fruits give way to mineral and floral aromas.

With its crisp acidity and zesty flavors, this wine pairs well with a variety of foods, particularly seafood dishes like oysters or fresh fish, and dishes with goat cheese, along with lighter fares like salads and sushi.
