It is rare to see a 100% bobal, a variety localized in southeastern Spain. This provides impressive lift and complexity for the price with pomegranate-cherry fruit, and a scent of evergreen/fresh herbs and wood spice. It is medium weight with good structure - warm alcohol, brisk sour-edged acidity and slightly crusty tannin. But there is also generosity and balance with more energy and complexity than expected. I really like the unaffected charm of this Bobal - there is a generosity and diversity of flavour here, and yet a lightness and ease of being. Flavours of red berries, cherries, and pomegranates mingle playfully with notes of savoury herbs, underbrush, and violets. The medium-bodied palate feels tender and tart, in the most pleasing way, and happily, the peppy energy, candour, and clarity of this wine continue on the long finish. Tasted November 2025.

The dream of 4 French partners in Argentina's Mendoza region can be found 200 kilometers from the district capital, in the South of the region, in the town of San Rafael. This is a quite bright and juicy young malbec. The nose has some energy with lifted mulberry/raspberry, fresh herbs, red rose and some shrubby character. This is quite a classic representation of malbec, with notes of nutmeg, cloves, and dried leaves serving as top notes, followed by flavours of damson plums and blueberries. The palate is medium to full bodied and approachable, with fine-grained tannins and succulent acidity. The long finish displays accents of vanilla and dried henna, then diffused warmth. Balanced, with very good concentration and length, this is wine that should appeal to most. Tasted January 2026.

Yet another riper-than-expected Muscadet as warming settles in, but this may also be intentionally later harvested. It pours with deeper more golden than expected colour. The nose is quite reserved but showing ripe peach, leesy pastry (sur lie) notes and subtle citrus marmalade. It is quite rich and soft for muscadet, with almost creamy texture, modest acidity and pleasant bitterness on the finish. Excellent length. Chill fairly well. Tasted May 2026

A gutsy wine with more oomph than the norm for Muscadet with an almost buttery, leesy richness that doesn't feel overdone from 11 months of sur lie aging. Stylishly stony the way we like Muscadet, from 40+ year-old vines on south- and southeast-facing slopes in the Côtes de Grand Lieu sub-zone and aged 11 months on its fine lees, this is also quite dense and richly proportioned at just 12% ABV declared, indicating genuine concentration and richness. The finish also lingers admirably. More than oysters, this is a Loire white for lobster and scallops; even roast chicken wouldn't be out of place. Tasted May 2026.

Weingut Matthias Hager
The Hager Matthias winery is located in the small village of Mollands in the Kamptal area of Lower Austria. Matthias took over the 12-hectare land and the family business at an early age. He aims to produce the best quality wine possible and to focus on being in balance with nature. The lands are cultivated according to biodynamic principles and are certified Demeter.
Matthias has a vast knowledge about plants and insects, and about keeping the flora and fauna in harmony with the vines. Matthias Hager is one of the most experimental winemakers in the Kamptal region, Austria. He understood early how to work with different soil types from loess to clay. He established different product lines to highlight these differences: the blue one representing fresh, lively wines including Grüner Veltliner and Sauvignon Blanc; and the brown line gravitating towards more earthy, flavourful produce and the red line stands for no sulphites!

Cut above energy and buzz from the Hager Matthias grüner veltliner, once again pumping up the aromatic volume, even more CO2 varietal buzz and kinetic, if this time frenetic energy. Subtlety be darned, caution to the wind and thrown out the window for an Austrian white with serious game. Vllages-level grüner veltliner from Mollands in the northern, higher-altitude part the Kamptal gets no more noticeable than this. Might be unusual for some. Drink 2026-2028. Tasted February 2026.

This is a fruitier iteration of grüner veltliner than many, brimming with sweet green apples, nectarines, and oranges, with only subtle undertones of herbs and toast. I like the glassy palate, energised by acidity and dissolved carbon dioxide, as also the long, crisp finish. Balanced, correct, and appealingly clean and clear, this grüner veltliner will pair well with seafood - perhaps a cilantro-topped ceviche? Tasted February 2026.

In the early 2000's Nicholas Pearce was exposed to the garagiste movement in Bordeaux and was particularly inspired by négociants like Jean Luc Thunevin (Saint Emilion), James Sichel (Margaux) and Nicolas Potel (Beaune) from Burgundy.
After returning home to Ontario and starting his own wine company, he has had a hand in making 10+ wines in two hemispheres, 3 countries and 5 different appellations since the 2013 vintage.

Pearce Predhomme is a collaboration of like-minded individuals from around the globe. Founded with a mission to build and import wines from our favourite appellations while offering an unequaled value/quality ratio for the sommeliers & wine buyers in Ontario. This is a project between Toronto Sommelier and entrepreneur Will Predhomme and Ontario wine importer Nicholas Pearce. They have partnered with Radford Dale in South Africa and NorthWest Wine Co. in Oregon to create these special cuvées.

Über clean C-S joint this time around from the Pearce-Predhomme duo by way of Radford Dale in Stellenbosch and the winemaking acumen of Jacques de Klerk. No lack for aromatic volume and syrah adds palate density to otherwise light and transparent Western Cape cinsault. Good showing from 2022, missing some of the natural and volatile swarthiness of previous vintages so look at this as something gained over something lost. Those who wish for crisp, crunchy and as mentioned, very clean will get on board this time. Drink 2024-2027. Tasted April 2024.

Azienda Agricola Tessari
The Tessari family have Soave in their blood. For three generations they have been extracting delectable wine from the well cared for vines of their Monteforte d’Alpone vineyards. With only a little over a hectare of Garganega grapes in the prestigious volcanic solis of Soave Classico, Antonio Tessari hand dug his cellar back in 1933 and started the legacy that continues today with his grandchildren: Germano, Antonio and Cornelia.
From vineyard to bottle, these three siblings oversee it all; with unwavering respect for tradition, quality and passion for the art of winemaking. The volcanic soils of the hillside are rich with basaltic rocks and clays, which guarantees the health of the plant and the promotes the mineral and floral aromas that are characteristic of the Garganega grape. Truly artisanal wine making at it’s best.

This shows the vivid yellow colour I expect from good Soave. It also shows the complex, detailed nose honeysuckle, lemon blossom, camomile and almost tropical peach/mango fruit. It is mid-weight, rich and viscous yet shows some enlivening freshness, spritz and tenderness at the same time. Slightly bitter and lemony on the finish. The length is excellent. Tasted January 2023.

The latest volcanically driven garganega from the Tessari family is a child of a promising vintage full of sun, fun and support. The sky is the limit for just how well this will drink and please. It is in fact bottled salty and fruit crunchy deliciousness and why shouldn’t it be? Made simply with tradition in mind, basalt in pocket and all the modern facility made available. Citrus and nectarine, basil and Maldon salt. Lime all over the finish. Spot on. Drink 2023-2025. Tasted January 2023.

Nervy and salty with a dash of elderflower and pear, this stylish Soave Classico is a favourite of restauranteurs. Richly textured with notes of apple and lemon zest, salt and lime. Quite chalky and dry, with a pleasant degree of roundness despite the moderate level of alcohol. Nicely balanced with a pleasant finish of good length. Drink now. Tasted January 2023.

Over generations they had come to realize that their vineyards and techniques were something worth sharing with the world. A sincere dedication to the terroir in their zone and the indigenous varieties that grow there, allows them to constantly discover ways to unlock all of the magic that lies within their land.
Starting with conscious and clean farming in the vineyard, they hand-harvest only the best fruit for their production, and ferment each vineyard separately in varying vessels to accentuate what the vines have to show; some in stainless steel, and many in clay amphora of differing sizes. All the while seeing very little sulfur use (if any) until bottling. Puiggros is pushing the quality of northeastern Spain's wines forward, and doing so in a clean and unique way.

Of Catalonian garnatxa blanca planted upwards of 600m on limestone and clay before aging judiciously inside 800L clay amphora. A going concern of method and style for white grenache in this northerly part of Spain and 2023 comes away as clean and fleshy as any previous vintages. Sapid with an herbal-botanical element while fruit is so bloody persistent in its ability to shine. These are the right kinds of tonics and bitters to fulfill a garnacha raised in amphora dream. Exedra Negre is 100% Garnatxa (Catalan for grenache) planted on limestone and clay soils at 500 meters. Part is fermented in large concrete, part in amphora. It pours fairly pale but bright ruby. The aromas are classic grenache strawberry jam with fine, subtle array of tobacco, pepper and herbs in the background. It is medium weight, fresh, balanced and almost refined - not really showing its 14.5% alcohol except for a slight kirsch flavour to the fruit on the finish. The length is excellent. Chill a bit. Warm vintage for garnatxa aged in clay-pot (amphora) from Odena’s limestone and clay soils at 500m in the shadow of the Montserrat massif. Consistent sweet red candied fruit aroma, always alluring and quite naturally so. The amphora does not take over the character but seems to simply allow the land to do the talking. Drink 2026-2029. Pure grenache vinified and aged in amphora, the wine shows oxidative aromatics, candied/dried fruit and shoe polish, more advanced than one would hope for at this relatively young age. The palate is nonetheless, silky-smooth and broadly appealing, soft and round as it is, generous without heaviness. I like the saline nature that encourages another sip and brings the fruit and wild herb flavours into sharper relief. Acids are equally helpful in framing the ensemble. In the end it works nicely; drink over the near term to capture the fading freshness. Tasted January 2026.

Pago Aylés
Pago Aylés was founded by Federico Ramón, who in 2003 began his dream of classifying this unique land as the first Vino de Pago in the Aragon region. In the Spanish wine quality pyramid, the Pago stands as a top tier or grand cru winery. Just before Federico died, his dream came true in 2010, as Aylés became the 10th Vino de Pago in Spain.
Today his three children continue to produce wines from this special land. The vineyard site has a long history of winemaking, dating back to the 12th century by Spanish monks. Influenced by the River Huerva and the Monte San Pablo mountain, the soil is a mixture of clay, limestone and chalk – ideal for making high-quality wine. Caves, ravines and old river beds can be found all over the estate, which is brimming with wildlife.

Dark plummy fruit, vanilla and dark chocolate flavours dominate with a dash of savoury herbs . I find it still a little tight and astringent, and would cellar another 2-3 years for additional softening; the sweet fruit will appeal widely no doubt. Bonus: certified organic. Tasted January 2026.

Labelled as Vino de Pago, this wine comes from a single estate and is an organic blend of merlot, garnacha, tempranillo, and cabernet sauvignon grown on clay and calcareous soils at 500–700 m in Aragon, northeastern Spain. It shows some oak influence and a warming 14.5% alcohol, yet the palate is surprisingly balanced, filled with zesty, jammy red and black fruit. Licorice, white pepper, cedar spice, concentrated violet, and a hint of black tapenade add complexity. Very good length completes a wine that’s generous in flavour but lighter than expected on the finish. Tasted January 2026.
