The Baud estate dates back to 1742. Today, ninth generation vignerons Clementine and Bastien Baud are making some of the best-value wines in Jura. This unique wine region is a narrow valley in the remote hills between Burgundy and Switzerland that was once covered by an ocean millions of years ago. If you kick a stone in a Jura vineyard, it will probably be a fossil!

Savagnin is a unique grape variety and the crown jewel of the winery. Its utmost expression comes from the blue and grey marls it sinks its roots into. To produce a Vin Jaune, the Savagnin needs to be aged for a minimum of 6 years and 3 months in oak barrels. Internationally renowned for its aromatic bouquet, the Vin jaune is one of the main ingredients used in gastronomic courses. What’s more, the Château-Chalon appellation is considered as been the Grand Cru of Vin Jaune! The colour of this wine is deep yellow with golden tones. This is a powerful and full-bodied wine developing aromas of walnut, hazelnut, almond and even truffle and curry. 

This wine is best when brought to room temperature before serving. Excellent for cooking, it will enhance every mushroom and cream-based course as well as exotic and spicy courses. It matches perfectly with fried foie gras and amazingly with a rooster « au vin Jaune » and morels. It can also be paired with lobster dishes.

This is a project between Toronto Sommelier and entrepreneur Will Predhomme and Ontario wine importer Nicholas Pearce. They have partnered with Radford Dale in South Africa and NorthWest Wine Co. in Oregon to create these special cuvées.
