The Moreau family has been settled in the heart of Chablis since 1884. Louis Moreau, the sixth generation, studied oenology and viticulture in California and took over from his father when he returned to France in 1994. Nowadays, the Domaine's vineyards extend across the four levels of the appellation: Petit Chablis, Chablis, Premier Cru and Grand Cru.

Les Clos is the largest grand cru in Chablis and is considered the quintessential wine of the region for many. The site generally produces one of the most potent and longest-lived wines of the appellation and yet can be a pleasure to drink in its youth. Starting from 2013, the grapes from this parcel have been vinified and aged exclusively in stainless steel tanks, emphasizing the wine's polish and finesse to the fullest extent.

This wine captivates with its evocative mineral bouquet - an intricately woven tapestry crafted from the vineyard's distinguished terroir. Signature aromas of crushed flint and gentle sea breeze unfold between lifted floral scents and fresh stone fruits. The palate is carried effortlessly by a backbone of natural acidity, hinting at this wine's ability to further develop with age. 

Mineral & Zesty

Lighthall Vineyards is a small, proud, low volume and high quality winery located in enchanting Prince Edward County, Ontario, Canada. All their wines are produced in a non-interventionist manner and fuelled by passion as hearty as our vines. They also make cheese, designed to pair with their wines.

As typically found in County Chardonnay, this wine starts with aromas of flinty
minerality, Asian pear, and salted caramel. A round palate is filled with flavours of golden delicious apple, baking spices, and a hint of lemon. Put together, it’s like an apple crumble before it’s been baked! The smooth texture and long finish leave you satiating for more.

Our Phillipston Road (Manchego-style) cheese is literally made for this wine. Rich, salty, and nutty, it makes a perfect match. Coquilles St. Jaques, Oysters Rockefeller, halibut, spaghetti cacio e pepe, zucchini ravioli with grated lemon zest, butter poached cod, and chicken with a cream sauce are all wonderful pairings.

Located in Traiguén in Chile’s southern Araucanía region, some 600 km south of Santiago, Baettig’s Viñedos Los Suizos site sits in a cool-climate zone shaped by volcanic soils, native forests, and abundant rainfall. With mild summers, cool, wet winters, and limited sunlight, conditions here allow Pinot Noir and Chardonnay to ripen slowly and evenly. The vineyards are rooted in ancient volcanic soils rich in clay, loam, and deep stony layers, which promote balanced vine growth, excellent drainage, and a distinctive mineral character in the wines.

The name Los Primos (the cousins) refers to the closeness of style and quality of the vineyard parcels that make up this Chardonnay. Sourced from a selection of both the Triángulo and Llaima parcels, the blend results in focused, stoney-edged wines with great tension. 

Highly refined and expertly balanced, showing aromas of citrus fruits, orange blossoms, honeysuckle and jasmine with light splashes of walnuts tossed in sweet spices. It has great energy and precision, but above all it stands out for its mineral texture and depth. Expect to find green apple and crunchy peach lasting long into the saline-tinged finish.
