In 1985, Mario and Nancy Adamo transformed a 28‑room inn north of Toronto into Hockley Valley Resort, embracing a location that truly felt like home. Inspired by the vine‑covered hills of his hometown in Calabria, Italy, Mario envisioned the slopes of Hockley Valley as a place where grapes could thrive. In 2000, the first test vines on a newly purchased 77‑acre property were planted, and by 2015, Adamo Estate Winery was born. Today, this boutique, small‑batch winery boasts over 28,000 vines, farmed with organic and biodynamic principles. Led by winemaker Shauna White, the team crafts terroir‑driven wines that showcase both the character of Hockley Valley and select sites from Niagara’s most renowned vineyards.
This Bordeaux-inspired blend opens with a youthful, vibrant nose of ripe red and black berries, accented by floral notes, hints of licorice, and a touch of toasted almond. On the palate, juicy redcurrant and ripe strawberry flavours are supported by silky tannins and balanced acidity, creating a smooth, refreshing profile. Subtle toasty undertones carry through to a fruity finish.

Oenops Wines is the visionary project started by dedicated oenologist Nikos Karatzas, founded in late 2015 in the historic winemaking region of Drama in Northern Greece - the land of Dionysus.
After gaining valuable experience with some of the area’s leading wineries, Nikos set out to discover old vineyards planted with indigenous Greek varieties across the country, forging close collaborations with passionate growers in exceptional terroirs.
The wines reflect both the character of each variety and its place of origin, blending the team’s expertise and meticulous approach with the growers’ deep connection to their land. By sourcing grapes from diverse plots and distinctive regions, Oenops Wines achieves fruit of outstanding quality and authenticity, remaining true to a shared passion for the vine and the earth.
Apla is a blend of Xinomavro, Limniona, and Mavroudi grapes sourced from select vineyards aged between 15 and 50 years. This is a perfect summer red, with a lifted aromatic profile of fresh cherry and wild strawberries, underpinned by gentle notes of fragrant Mediterranean herbs. On the palate, it is light and lively, with bright acidity complementing the crunchy red fruit flavours and sleek tannins that carry through to a satisfying, elegant finish.
Pairs well grilled meats, cold cuts and cheese and will be a great complement to any dish served with a spicy sauce.
About the Winery
Oenops

Founded in 2015, Oenops, meaning ‘wine face’, is a pioneering project whose mastermind is the talented winemaker Nikos Karatzas. Following the micro-négociant system, Oenops aims to produce high quality, great value wines. Rather than owning vineyards, the company sources grapes from selected plots across Greece’s best terroirs, with a focus on cool-climate sites and old vines of indigenous varieties.
At the core of the company’s philosophy is the close partnership with ambitious growers who share a same sustainability-focused approach. Oenops mission is to source great fruit and craft wines that fully express its quality and sense of time and place. By using simple methods, led by the profile of the grapes rather than by any winemaking protocols, the company has built a range of authentic, fruit-forward wines that bring out the best of each variety, terroir and style.
The team tastes meticulously and tailors its approach to each plot and variety, based on the core philosophy and ethos. By vinifying each plot and variety separately the team has grown an understanding of the specificity of each vineyard and of the work done each year, in turn allowing for improvement in each vintage.
A repertoire of indigenous grape varieties, such as Malagousia, Assyrtiko, Vidiano, Roditis, Xinomavro, Limniona, and Mavroudi, is expressed through different styles of Greek varietal wines and in labels that have gained widespread recognition, among consumers and critics alike.
What the team at Oenops strives for is, ultimately, to produce tasteful, elegant wines that work as perfect companions to every meal and special occasion.

Three indigenous varieties get together and Oenops just seems to be the master Drama blender to tie them all together. They being xinomavro, limniona and mavroudi come one, come all for the easiest access in northeastern (Macedonian) Greek reds. The 2021 gifted ease, simplicity and apt resourcefulness but this ’22 moves forward, ahead and into another space. Perhaps a step towards rapture with the vintage lens opening and allowing more light, the truss of fruits all sharing the same even levelled platform. More layers to peel away, acids in synch and a spice masala marking territory at every step. Complexity is a beautiful thing when clarity, purity and focus are all aligned. Drink 2024-2027.
