Stéphane Aviron can be considered a pioneer is his approach to winemaking in Beaujolais, however he would just tell you that he’s simply returning to the traditional practices that have always made fantastic Gamay wines. Sustainable viticulture, extremely old vines and classic Burgundian techniques.
Aviron sources his Juliénas from the areas of “Vayolette” and “La Prat” from two well-established growers in the appellation. The soils in these parcels are granite with clay and limestone with old vines ranging in age from 45 to 55 years old. This wine has complex herbal, red cherry and wild strawberry aromas.
The flavours are ripe and concentrated with structure. The wine has a packed character that speaks of firm but still soft tannins that will help the wine age for years.
