Located in Traiguén in Chile’s southern Araucanía region, some 600 km south of Santiago, Baettig’s Viñedos Los Suizos site sits in a cool-climate zone shaped by volcanic soils, native forests, and abundant rainfall. With mild summers, cool, wet winters, and limited sunlight, conditions here allow Pinot Noir and Chardonnay to ripen slowly and evenly. The vineyards are rooted in ancient volcanic soils rich in clay, loam, and deep stony layers, which promote balanced vine growth, excellent drainage, and a distinctive mineral character in the wines.

The name Los Primos (the cousins) refers to the closeness of style and quality of the vineyard parcels that make up this Chardonnay. Sourced from a selection of both the Triángulo and Llaima parcels, the blend results in focused, stoney-edged wines with great tension. 

Highly refined and expertly balanced, showing aromas of citrus fruits, orange blossoms, honeysuckle and jasmine with light splashes of walnuts tossed in sweet spices. It has great energy and precision, but above all it stands out for its mineral texture and depth. Expect to find green apple and crunchy peach lasting long into the saline-tinged finish. 

Mineral & Zesty

Lighthall Vineyards is a small, proud, low volume and high quality winery located in enchanting Prince Edward County, Ontario, Canada. All their wines are produced in a non-interventionist manner and fuelled by passion as hearty as our vines. They also make cheese, designed to pair with their wines.

As typically found in County Chardonnay, this wine starts with aromas of flinty
minerality, Asian pear, and salted caramel. A round palate is filled with flavours of golden delicious apple, baking spices, and a hint of lemon. Put together, it’s like an apple crumble before it’s been baked! The smooth texture and long finish leave you satiating for more.

Our Phillipston Road (Manchego-style) cheese is literally made for this wine. Rich, salty, and nutty, it makes a perfect match. Coquilles St. Jaques, Oysters Rockefeller, halibut, spaghetti cacio e pepe, zucchini ravioli with grated lemon zest, butter poached cod, and chicken with a cream sauce are all wonderful pairings.

Proudly family owned, the Borthwick vineyard is an established vineyard situated in Gladstone, the heart of the Wairarapa. Producing quality wine for over a decade, Paddy, an experienced wine maker, has gained a reputation for producing consistently great wines. The twenty seven hectares of vines bordering the Ruamahunga River are growing on stony, free draining, alluvial soils, with a micro climate giving warm daily temperatures, cool nights and low rainfall; perfect conditions for producing distinctive, quality wines.

The outstanding 2025 growing season produced a Sauvignon of exceptional concentration and balance. Fragrant aromas of spiced stone fruit, tropical fruit, and subtle dark herbal notes lead into a richly flavoured palate centred on ripe nectarine and bright lemon-lime acidity. Fresh and vibrant, it finishes with impressive length and persistence.

Volcanic & Floral

A breakout star in the Etna DOC of Sicily, Tornatore has become one of the region's largest and most respected wineries. Established back in 1865, the estate continues to be run by the same family who have acted as the faithful custodians of the land for generations. Tending to high altitude vineyards on the north side of the active volcano, the conditions are ideal for indigenous grape varieties to thrive. The wines are distinctive bottlings which encapsulate the essence of Mount Etna and effortlessly reveal the unique characteristics that make the region one to watch.

The wine has enticing floral scents of spring blossoms and Spanish broom that mingle with summer orchard fruit and wet stone. The tangy, savoury palate boasts finesse and mineral tension, delivering juicy Meyer lemon, creamy pear, yellow apple and saline before a white pepper finish. Fresh acidity brightens the rich flavours.

This is perfect with young and medium-aged cheeses, poultry and fish. 

Complex & Silky

Château de La Chaize is among the oldest, most historic estates in Burgundy’s Beaujolais region. Cared for by the same family for nearly three and a half centuries, the estate has been passed on to new owners, the Gruy family, who are equally committed to managing the estate with the utmost care, while implementing an ambitious environmental plan.

Pale yellow colour with golden reflections, the nose opens on notes of citrus fruits and pear, with a delicate hint of acacia blossom enriching the aromatic palette. Expect a clean and balanced palate, reflecting the generosity of a sunny vintage with a pleasant volume and a delicate, mouth-watering finish.

Chill and serve with shellfish, white fish, or soft goat cheese.

The Schild Family have been grape growers in the Barossa Valley since 1952. Growing the estate from one vineyard to over 134ha across 11 precious sites, their generational wisdom and knowledge of the land allows for premium fruit to flourish each vintage. Their Estate Wine label was created as a small side project and quickly grew in reputation and is now loved worldwide.

This Chardonnay grown from old vines opens with aromas of citrus, green apple, and delicate white peach, complemented by subtle hints of vanilla and oak. The medium-bodied palate offers flavours of lemon and pear with a touch of creaminess, balanced by bright acidity and a gentle oak influence. The finish is crisp and refreshing, with lingering notes of citrus and a subtle hint of nuttiness.

Mineral & Zesty

In 2010, Joana and António founded Maçanita Vinhos after an invitation from a local Douro family who had read about these playful and ambitious sibling winemakers. Both siblings contribute to Maçanita Vinhos, but the challenging Douro Valley has been Joana’s passion project since the start, and Joana and her children even moved to the Porto area to be closer to the winery and vineyards. Setting down roots in the region has allowed her to focus her famous energy into expanding the rising star that is her Douro career.

Pale yellow in color with greenish nuances. Gouveio da Joaninha is a wine that expresses the variety in its purest version, where fruit and minerality are accentuated. On the palate it is powerful with great depth. Aged for 6 months in stainless steel.

Pair with grilled fish, mixed salads and white meat dishes.

Mineral & Spicy

Robert, whose family is originally from Hungary, was born in Canada and grew up on a farm. After some years working as an architect, he found his passion in winemaking, and relocated to his grandparent's country to start a winery.

Furmint is the historic grape of the region and this example shows its true strength. Alongside the lemon and lime rind nose, the palate is led by a lean minerality and exciting flavours that come from the various organically farmed vineyards across Szent György-hegy. The grapes are gently pressed, spontaneously fermented and aged in stainless steel tanks for 6 months. It has a complex character and long aging potential. 

Furmint complements herb-crusted poultry or fish. You can also try it with delicate Asian dishes like sushi or dumplings.

Cheerfully juicy. This amber-coloured potion spreads its aromas around in a manner that’s equally expressive and unobtrusive… This wine can indeed call itself ‘orange’, though far more delicate and tender than the buzzword ‘orange’ might suggest.

The Heinrich Naked Orange is an approachable wine that pairs well with Salmon tartare with pickled raspberries, couscous salad with feta and cranberry, toasted sourdough bread with avocado.

Raised amidst the vineyards, Alexandre Favier is part of a long line of winemakers in Châteauneuf-du-Pape. His grandfather, Noël Sabon, hails from one of the region’s most renowned winemaking families. Alexandre began his viticultural studies at the age of fifteen in Orange, completing his exams by 2001. Just a year later, at the age of twenty, he assumed full winemaking responsibilities at Domaine Chante Cigale when his father’s health declined. Today, Domaine Chante Cigale stands as one of the most important family estates in Châteauneuf-du-Pape.

Extrait consists of 50% Roussanne and 50% Grenache Blanc. The Roussanne for Extrait comes from a very specific plot and the vines are over 40 years old. For a wine this unctuous and textured, the palate shows remarkable balance and freshness. Aromas of apricot, peach and citrus are complemented by some perfumed florals and well integrated, savoury oak. The finish is incredibly long and fresh.

A relatively recent addition to the Borthwick Estate vineyard, Pinot Gris was planted in the Spring of 2006 and 2007. The outstanding 2025 growing season, marked by a long, dry summer, allowed the fruit to ripen fully before harvest, resulting in exceptional concentration, balance, and vibrant flavour throughout the winery's white wines.

Fragrant aromas of ripe apricot, nectarine, and green pear lead into a generous palate with subtle, well-integrated oak adding texture and depth. The finish is dry and crisp, with lingering notes of gentle baking spice that bring freshness and balance.

White | Chenin Blanc

The Kloof Street range is all about freshness, balance and great drinkability. This wine has notes of sun ripened pears and wet granite. The palate has a vibrant acidity balanced by a soft, round texture and some pithy character. The wine has a fresh, mineral finish.

We recommend to pair this zesty wine with ceviche-style dishes. Pasta al pesto is another terrific pairing option!

The Rouge is a delicious blend sourced from six sustainably farmed vineyard parcels across Swartland, with vines ranging from 7-48 years old. Bursting with juicy dark berry flavours on the nose and palate, this Swartland gem is beautifully balanced, with a hint of cozy holiday spice on the finish. Each grape in the blend brings something special: Cinsault adds a lovely perfume, Tinta Barocca brings a touch of tannin, Grenache amps up the fruitiness, and Syrah ties it all together seamlessly.

Pair this wine with grilled rosemary lamb chops, roasted eggplant, or a gourmet burger!

Zesty & Mineral

Husband and wife duo Ilya and Nadia started Leaning Post winery in Niagara over 10 years ago. Initially a virtual set up, the winery now located on Highway 8, has become a reference producer in Niagara. 

This Riesling shows why we get so excited about Riesling from Lincoln Lakeshore! The nose explodes with beautiful apricot-pith, peach-cobbler, lime-leaf, cardamom, and honey aromas. Those flavours continue on the palate while adding lemon-rind, honeycomb, elderflower and the distinctive stony minerality. This is a classically mid-weight Riesling but has lovely full texture, coming both from the vineyards and the lees aging. As the wine sweeps across the palate towards the finish, the balance of sweet and salty is sublime, with a bright green leafiness and flinty/minerally sensation appearing in waves, leading to an amazing, crunchy finish. The wine will age well for the next decade.

The best pairings for this Riesling include poached salmon, roasted chicken, ham, and veal or pork scallopini.

The palate is taut and structured, with firm acidity, a creamy texture, and a lightly phenolic grip, leading to a saline, herbaceous finish. The Weisze Freyheit is a distinctive blend of Chardonnay and Pinot Blanc from Lake Neusiedl, showcasing a bold, modern skin-contact style with notable depth and structure. It opens with complex aromas of dried herbs, roasted nuts, brioche, and subtle mineral tones, layered with hints of orchard fruit and citrus blossom. On the palate, it is taut with a firm, slightly bitter grip, balanced by a juicy core and a lingering herbal, nutty finish. Overall, it is an uncompromising, intellectually engaging wine with a strong sense of character and precision.

Creamy & Zesty

Full and round with a core of acidity, this Chardonnay shows what can be done with this variety in Niagara. The nose highlights lemon curd and mandarin orange that is rounded by hazelnut and soft baking spices. The palate follows the direction of the nose with the lemon curd morphing into lemon meringue pie, and a strong wet stone/mineral base. This wine will age well over the next 8+ years. Drink with roasted turkey, hazelnut crusted halibut, and soft white cheeses. Cheers!

Creamy & Zesty

Husband and wife duo Ilya and Nadia started Leaning Post winery in Niagara over 10 years ago. Initially a virtual set up, the winery now located on Highway 8, has become a reference producer in Niagara.

A warm spring and warm summer lead to an uneven and wet fall, however good viticulture and good terroir still allowed these grapes to develop complex aromatics and structure without losing acidity or freshness. The blocks of two different Chardonnay clones: clone 76 and clone 96, were hand picked on October 17th. The clones were kept separate throughout pressing and oak aging. The fruit was whole cluster pressed and allowed to settle for a couple of days before being put into barrel for spontaneous fermentation. Once fermentations were completed, the wine remained in French oak barriques on lees for 15 months. This wine was skillfully blended with the perfect percentage of each clone to truly showcase this vintage, (63% clone 76 and 37% clone 96). We bottled this wine in June of 2023. 

Creamy & Mineral

The “Geekiness” continues to rise in this wine. An experiment in lees aging, this Riesling ages 22 months on all the lees collected from all the white wine fermentations since vintage 2014.   Reductive notes of flint and mineral frame all the beautiful stone fruit and classic Riesling notes.   It has a wonderfully rich and creamy texture balanced by a distinct freshness. It is practically immortal and should age beautifully for the next decade and well beyond.
