Pearce Family Wines
In the early 2000's Nicholas Pearce was exposed to the garagiste movement in Bordeaux and was particularly inspired by négociants like Jean Luc Thunevin (Saint Emilion), James Sichel (Margaux) and Nicolas Potel (Beaune) from Burgundy.
After returning home to Ontario and starting his own wine company, he has had a hand in making 10+ wines in two hemispheres, 3 countries and 5 different appellations since the 2013 vintage.
Pearce Predhomme
Pearce Predhomme is a collaboration of like-minded individuals from around the globe. Founded with a mission to build and import wines from our favourite appellations while offering an unequaled value/quality ratio for the sommeliers & wine buyers in Ontario. This is a project between Toronto Sommelier and entrepreneur Will Predhomme and Ontario wine importer Nicholas Pearce. They have partnered with Radford Dale in South Africa and NorthWest Wine Co. in Oregon to create these special cuvées.

Good Stellenbsoch season, of that there can be no doubt and surely less complaints, especially as it goes for chenin blanc. By count this is the eighth take on the variety by winemaker Jacques de Klerk for the négoce duo of Nicholas Pearce and Will Predhomme, always wild, always alive and never boring. This hums that familiar tune and reminds us all how chenin and Stellenbosch are so intrinsically connected so that a winemaker need only pay attention to timing and details for the wine to make itself. Feels so natural, in synch and on time. Drink 2024-2027. Tasted April 2024.

About the Winery
Domaine Andre Aubert
At the very heart of the Rhône Valley, at the northerly tip of the Southern Rhône, lie the vineyards of Grignan-Les-Adhémar. The chances are you haven’t heard the name before, few people have, but the wines are worth seeking out. It’s not a new wine region – vines have been planted here since around 500BC but it is a new name (formerly known as Côteaux-du-Tricastin). Domaine André Aubert, has been formed over decades and today comprises of more than 280 hectares spread from north to south of the prestigious Southern Rhone Valley on the appellations Côtes du Rhône, Côtes du Rhône villages, Visan, and Grignan-les-Adhémar.

Huge value in a very stylish, pure and correct southern Rhone blend from a region in the north of the region. This shows a lovely, generous sweet strawberry/cherry nose with vanillin/nougat, red rose fine tobacco/dried herbs. It is medium weight, open knit, smooth and almost a touch sweet with very fine chalky tannin. Great fruit presence and warmth make this so appealing. And the length is excellent. Tasted May 2026.

The Auberts farm 280 hectares throughout the southern Rhône, this northerly appellation of Grignan-les-Adémar is the family's home base and they are considered pioneers in the region. The 2022 Le Devoy is a blend of grenache (40%), syrah (40%) and carignan (20%) whose vines average 40-years of age on galets roulés, is matured in cement vats. Its oak-free flavour profile highlights youthful fruit, pepper, and garrigue from this windswept appellation. Concentration is notable and the tannins are firm and linear. Excellent length. Best 2026-2029. Tasted April 2026.

Tommaso is third-generation winemaker at Cortonesi that owns some of the most prized vineyards in the north and south-east of Montalcino. Favourable geography, rocky soils, and ingenious winemaking all come together to create some of the region's deepest and most elegant Brunello wines.
The Cortonesi family has been making wine since the 1970s. At first, wines were made to be enjoyed by family, friends and neighbours, but then in 1985, Cortonesi had gained enough traction within their community that they began to offer their wines commercially. Today, Cortonesi remains a family business that continues to work according to tradition, while employing modern technologies to the enhance the quality of their production.
Lovers of Sangiovese must experience “La Mannella”, a collection of wines exclusively sourced from Cortonesi's private vine land. This farm covers 56 hectares, eight of which are devoted to the production of some of the world's most coveted and age-worthy Brunello di Montalcino.

I have always been a fan of this wine. I like its energy, balance and lift. The fragrance is led by fresh rosemary and juicy pomegranate/raspberry red fruits. It is mid-weight, lively, juicy and youthfully fresh. Almost succulent, yet jammy and warm too, with some nervy tannin. The length is excellent. Chill a bit. Tasted January 2026

If ever there were a Léonus from Montalcino sangiovese meant to be bought, sold and consumed one glass at a time, night after night, bottle to bottle and case after case - the 2024 would be that one. Lightest, juiciest, most forthright and getable Léonus ever, or at least in the last 12 years. Indubitably getable and so bloody correct for the Tuscan vintage. Drink 2026-2028. Tasted January 2026.

Deliciously plump and juicy, very fruity, raspberry and blueberry purée flavoured, Cortonesi's 2024 Léonus made from sangiovese grown in the Montalcino area (a declassified, young vines Rosso di Montalcino essentially) is immediately engaging and accessible, soft and ready to enjoy. I love the succulent acids and pure, pristine, ripe fruit, unencumbered by either oak or oxidation. A wine to chill lightly and enjoy over the next year or two. Tasted January 2026.

Cleanly made and poised, with well-balanced alcohol, it’s light on its feet, offering notes of wild raspberry and peony. There is something spontaneous and genuinely charming about this youthful sangiovese from Montalcino. It is appealingly herbal, then fruity, with notes of ripe red berries, red plums, dark cherries joined by subtle tones of toasted cloves and nutmeg. Oak influence is well-integrated. The palate is supple and succulent, with fresh acidity and fine-grained tannins. I especially like the uplifting and bright finish. Tasted January 2026.

Domaine Baud Père et Fils
The history of Domaine Baud dates back to 1742, and it wasn't until 1950 when René Baud, the 7th generation, rebuilt the vineyard which had suffered from the phylloxera crisis and two World Wars.
Starting with only 4 hectares, the vineyard progressively expanded to 20 hectares with the help of successive generations. Now, managed by siblings Clémentine and Bastien, the 9th generation, the estate continues to flourish and grow, with a strong commitment to sustainable viticulture and preserving the traditions and style that makes the wines of the Jura so unique and incredible.
The estate achieved the Terra Vitis certification in 2014 for its eco-friendly work and environmental preservation.

This is a very tasty, rich, golden hued, well aged chardonnay-based sparkler with an involved nose of cashew, baked apple, nougat and honey. It is almost creamy in texture with fine mousse and very good acidity providing counterpoint. There is pleasant nutty bitterness on the finish; length is excellent.

A traditional method, pure chardonnay bubbly from the Jura of considerable maturity and toasty-oxidative character, also notable dosage - the style has changed little since last reviewed almost 8 years ago (though this is a new, non-vintage bottling, of course). It's maple syrup and curry-infused with dried citrus and apples, indeed with quite impressive complexity in a mature style. Length and depth are very good. Increased autolysis and also richness from the present bottle of Baud’s Blanc de Blanc. Some maturity here, an evolution of bread and gingered elements that make the wine feel like it’s reached the peak. Complex and flavourful in any case with creamy textures and mouthfeel in between. From an old estate now in the hands of ninth-generation family upstarts, this traditional-method chardonnay Blanc de Blanc comes from the remote, rocky, high-altitude Jura, wedged between Burgundy and Switzerland. Generous yet clean, it leans pleasantly conventional in the best sense. Autolytic notes mingle with florals, tender fruit, and subtle toasty layers. A measured dosage adds welcome weight to an otherwise light-footed palate. Lemon zest, white grapefruit, and sweet cream lead into a nicely poised finish of memorable length. Tasted January 2026.

This is a winsome chardonnay-based crémant, with a subtly toasty flavour profile, led by flavours of green orchard fruit and juicy citrus fruit. It has begun to evolve, showing signs of maturity in the form of notes of toasted nuts and fruit flavours transitioning towards the dried end of the spectrum. The palate has lively acidity and subtle sweetness, with a finish that is slightly bitter adding to the overall sense of freshness. This balanced and classic sparkling is ready to go. This family estate dates back to 1742, but it wasn't until 1950 when René Baud, 7th generation, rebuilt the vineyards, expanding from 4 hectares into 20 hectares over the years. Today the estate is managed by siblings Clémentine and Bastien, 9th generation. This sustainably farmed chardonnay is rooted in the Jura's marl and limestone soils and was fermented in stainless before a year on lees before disgorgement and release. Green apple, white florals, oyster shells, meadow herbs, meringue run the bright, sleek palate, with a bed of creamy lees. There's a lovely streaming anise note that leads to a lengthy finish. Drinking beautifully now, but will hold over the next couple years easy.

Über clean C-S joint this time around from the Pearce-Predhomme duo by way of Radford Dale in Stellenbosch and the winemaking acumen of Jacques de Klerk. No lack for aromatic volume and syrah adds palate density to otherwise light and transparent Western Cape cinsault. Good showing from 2022, missing some of the natural and volatile swarthiness of previous vintages so look at this as something gained over something lost. Those who wish for crisp, crunchy and as mentioned, very clean will get on board this time. Drink 2024-2027. Tasted April 2024.

Azienda Agricola Jasci
Located on the hills that rise 250 meters above sea level from the Adriatic Sea just above the seaside resort town of Vasto in Abruzzo, here the Jasci family has been growing grapes and producing wine for three generations. Starting In the early 1960s, Pasquale and Maria turned the focus of their farm to producing estate wines.
In 1980, their son Giuseppe decided to convert the farm to organic, becoming one of the first ten wineries in all of Italy to be certified. Today led by grandson Donatello Jasci and his wife Piera, the family is the second largest single grower in all of the region. Donatello’s approach in the cellar is consistent with his farming: clean and simple. The wines see little or no oak and have a purity of flavor that is rare at the price. In addition to his duties at the winery, Donatello Jasci has served as President of the local Organic Growers’ Consortium.

From vines near to the village of Vasto at 250m on hillsides above the Adriatic. Usually light, crisp and simply refreshing but 2024 takes it just a bit further. More luxe feels and phenolic grip this time for a pecorino that actually shows off a little bit of its varietal woolliness. Great persistence and length for an “entry-level” example with proof that Jasci does not mess around when quality is at stake. Drink 2026-2028. Tasted February 2026.

Clos del Rey
In the foothills of the Pyrénées Mountains, not far from the Mediterranean sea, Clos del Rey is situated in the high altitude hills over the tiny village of Maury. The estate has been owned and farmed by the Montagne family for generations. The vineyard itself is nestled among a protected area of garrigues (rosemary and thyme). The vines of up to 120 years old are allowed to grow natural and untrained, in the old-fashioned way, known as the goblet or bush style. However, it is what lies beneath the vineyard that lends much of the character and complexity found in their wines. Julien Montagne makes complex wines that truly represent his vineyards and his Catalan roots--you can almost smell the sun in the glass.

This sports a very pretty, lifted nose plum, cranberry and blackberry, with lifted lilac florals and a subtext of pepper. It is quite lively, refined and energized for the genre from the south of France, perhaps due to the schist and limestone soils in Maury (which is more famous for its sweet vins doux natural. This is almost silky texture with 14.5% abv heat and fine, drying tannin and minerality on the finish. The length is excellent. Drinks now. Tasted Feb 2026

A classic red from Maury, an appellation in Rousillon, this is a blend of grenache, samsó (a.k.a carignan), and syrah. I find its flavour profile enchanting - it is vibrant and vivid, showcasing both generosity and poise. Resinous herbs, some fresh, some gently roasted, and wild flowers are juxtaposed with ripe fruit flavours, including plums and blueberries. The palate is voluptuous, warm, and dense, supported by firm acidity and fine-grained tannins. The long, flavourful finish features a botanical bitterness, while warmth diffuses over the palate. The black schist at 200m of elevation looking up at Maury with soils edging and abutting a line of limestone work to build character and Roussillon expression for grenache noir, carignan and syrah. Château du Moulin Noir
This beautiful right-bank Bordeaux estate consistently produces high-value, elegant and classic Merlot dominant wines and is considered one of the most famous Château of this appellation. Located in Montagne-Saint-Emilion, Château Moulin Noir consists of seven hectares of vineyards on clay and limestone soils.
This château owes its name to a family feuddating back to the Middle Ages. Two brothers were arguing about their father’s legacy with the youngest brother being incredibly jealous that everything went to the elder. He was so jealous that he burnt the château to the ground - Moulin Noir translates to “blackened Mill”.

There's a pleasant ease and accessibility on the palate, an inviting profile that will be best enjoyed over the next 2-3 years. Textbook; certified organic as a bonus. Tasted January 2026.

The Farm
“The Farm” is a 10-acre vineyard in Niagara’s Twenty Mile Bench, planted to Pinot Noir. The Neudorf vineyard was originally planted with Pinot Noir in 2000 for Le Clos Jordanne and aptly named “La Petite Colline”, meaning “little hill”, a nod to the gentle slopes that permeate the plot.
The property is rooted in traditions of gathering family & friends, and where Peter and Dora Neudorf call home. The cellar door opens once a year for guests to taste new releases, and enjoy live music and local food.

Pago Aylés
Pago Aylés was founded by Federico Ramón, who in 2003 began his dream of classifying this unique land as the first Vino de Pago in the Aragon region. In the Spanish wine quality pyramid, the Pago stands as a top tier or grand cru winery. Just before Federico died, his dream came true in 2010, as Aylés became the 10th Vino de Pago in Spain.
Today his three children continue to produce wines from this special land. The vineyard site has a long history of winemaking, dating back to the 12th century by Spanish monks. Influenced by the River Huerva and the Monte San Pablo mountain, the soil is a mixture of clay, limestone and chalk – ideal for making high-quality wine. Caves, ravines and old river beds can be found all over the estate, which is brimming with wildlife.

Unexpected would indicate that strange things are forecast to occur but this garnacha from the large and historical Finca Aylés estate in Cariñena pretty much does the expected. Delivers dark varietal fruit with a mineral streak as salty as it is firm. Crunchy garnacha, full bodied and flavoured for the foreseen and well, expected. Garnacha of empowerment, helping consumers trust themselves and their palates and opinions, ultimately enabling them to confidently make wine purchasing decisions. Drink 2025-2027. Tasted March 2025.

From a large and distinguished vineyard, this is a very smart and delicious garnacha. The ripe sweet almost candied nose black cherry, pomegranate juice is also quite floral. This vegan garnacha from Aragón is almost lavishly fruity, with an engaging array of red fruit, some lightly candied. Undertones of woody spices and violet petals add to its appeal. The palate is supple, with juicy acidity, subtle warmth, and a gentle viscosity that lends it a sense of fullness. I really like the woody herbal note that lingers on the long finish. Bold, easy-to-like, and full of varietal character, this garnacha should ideally be enjoyed over the next year or so. Tasted January 2026.

Tommaso is third-generation winemaker at Cortonesi that owns some of the most prized vineyards in the north and south-east of Montalcino. Favourable geography, rocky soils, and ingenious winemaking all come together to create some of the region's deepest and most elegant Brunello wines.
The Cortonesi family has been making wine since the 1970s. At first, wines were made to be enjoyed by family, friends and neighbours, but then in 1985, Cortonesi had gained enough traction within their community that they began to offer their wines commercially. Today, Cortonesi remains a family business that continues to work according to tradition, while employing modern technologies to the enhance the quality of their production.
Lovers of Sangiovese must experience “La Mannella”, a collection of wines exclusively sourced from Cortonesi's private vine land. This farm covers 56 hectares, eight of which are devoted to the production of some of the world's most coveted and age-worthy Brunello di Montalcino.

Just bottled one week ago and hello to a '23 that Tommaso Cortonesi says is "very close to the Rosso di Montalcino style that I want for my winery." Tommaso has been working and honing his concept of Rosso for more than a decade and this first look at its next iteration seems somewhat of an aggressive one. That is the idea and Cortonesi admits how others who faced major 2023 challenges were jealous of the quality and quantity of La Mannella's harvest. Palate intensity is off the charts, there is a spicy element happening and structure is tops for Rosso. There are Brunello makers who would kill for this combination of substance and style. This is a firm, flavourful, and elegant chardonnay, made with fruit that were organically, bio-dynamically, and sustainably grown. I like the balance between crunchy orchard fruit and juicy lemons, on the one hand, and finely-integrated notes of spice and toast on the other. Stéphane Aviron can be considered a pioneer in his approach to winemaking in Beaujolais, however he would just tell you that he’s simply returning to the traditional practices that have always made fantastic Gamay wines. Sustainable viticulture, extremely old vines and classic Burgundian techniques. He focuses on the Beaujolais village crus, all but forgotten gems of vineyards when the nouveau craze took over, which are the best sites for unique, expressive and terroir driven wines. All of the fruit is sourced from old vines (40+ years), so seeing Vieilles Vignes on the label is a rite of passage, not a privilege. Authenticity and a distinctly Beaujolais style of winemaking is what sets Stéphane apart from the rest.

This is a delicious, fairly juicy and charming young gamay. There is a hint of meatiness on the nose but all kinds of candied strawberry/cherry as well, and violet-like florals. It is light to medium bodied, open knit, slightly sour-edged with very generous fruit on the palate. The tannins are notably mild, the alcohol provides some power and the length is very good to excellent. Tasted June 2022

The wood is still very much in charge and if the 2014 showing at this stage is any indication then 2016 will need even more time to unwind. Weingut Matthias Hager
The Hager Matthias winery is located in the small village of Mollands in the Kamptal area of Lower Austria. Matthias took over the 12-hectare land and the family business at an early age. He aims to produce the best quality wine possible and to focus on being in balance with nature. The lands are cultivated according to biodynamic principles and are certified Demeter.
Matthias has a vast knowledge about plants and insects, and about keeping the flora and fauna in harmony with the vines. Matthias Hager is one of the most experimental winemakers in the Kamptal region, Austria. He understood early how to work with different soil types from loess to clay. He established different product lines to highlight these differences: the blue one representing fresh, lively wines including Grüner Veltliner and Sauvignon Blanc; and the brown line gravitating towards more earthy, flavourful produce and the red line stands for no sulphites!

Subtlety be darned, caution to the wind and thrown out the window for an Austrian white with serious game. This is a fruitier iteration of grüner veltliner than many, brimming with sweet green apples, nectarines, and oranges, with only subtle undertones of herbs and toast. I like the glassy palate, energised by acidity and dissolved carbon dioxide, as also the long, crisp finish. Balanced, correct, and appealingly clean and clear, this grüner veltliner will pair well with seafood - perhaps a cilantro-topped ceviche? Tasted February 2026.

Chateau Barouillet has been a family business going back at least 8 generations. Vincent Alexis works alongside his father and grandfather to cultivate the land and has moved the winery into organic viticulture, starting to convert the soil in 2010 and fully converting all the vineyards by 2014. In 2020, the obtained their biodynamic certification.

The nose is quite reserved but showing ripe peach, leesy pastry (sur lie) notes and subtle citrus marmalade. It is quite rich and soft for muscadet, with almost creamy texture, modest acidity and pleasant bitterness on the finish. Excellent length. Chill fairly well. Tasted May 2026

Stylishly stony the way we like Muscadet, from 40+ year-old vines on south- and southeast-facing slopes in the Côtes de Grand Lieu sub-zone and aged 11 months on its fine lees, this is also quite dense and richly proportioned at just 12% ABV declared, indicating genuine concentration and richness. The finish also lingers admirably. More than oysters, this is a Loire white for lobster and scallops; even roast chicken wouldn't be out of place. Tasted May 2026.

Not a skin-macerated style but well-pressed to eek out high volume fruit intensity and so the levels of extract, pulpy muskiness and tannin are all on order. I really like the unaffected charm of this Bobal - there is a generosity and diversity of flavour here, and yet a lightness and ease of being. Flavours of red berries, cherries, and pomegranates mingle playfully with notes of savoury herbs, underbrush, and violets. The medium-bodied palate feels tender and tart, in the most pleasing way, and happily, the peppy energy, candour, and clarity of this wine continue on the long finish. Tasted November 2025.

Azienda Agricola Jasci
Located on the hills that rise 250 meters above sea level from the Adriatic Sea just above the seaside resort town of Vasto in Abruzzo, here the Jasci family has been growing grapes and producing wine for three generations. Starting In the early 1960s, Pasquale and Maria turned the focus of their farm to producing estate wines.
In 1980, their son Giuseppe decided to convert the farm to organic, becoming one of the first ten wineries in all of Italy to be certified. Today led by grandson Donatello Jasci and his wife Piera, the family is the second largest single grower in all of the region. Donatello’s approach in the cellar is consistent with his farming: clean and simple. The wines see little or no oak and have a purity of flavor that is rare at the price. In addition to his duties at the winery, Donatello Jasci has served as President of the local Organic Growers’ Consortium.

Classic perfume and style, salty upfront for montepulciano with florals part fresh and part dried. Rich as need be, full and substantial on the mid palate and then a return to savoury and also salty at the finish. Really good barrel usage and integration. Clean and classic. Will age a bit. A long, flavourful finish features notes of oak spice and cedar alongside supple dark fruit.
