Bright & Creamy

Our favourite bubbly wine is, as always, made in partnership with Lighthall Vineyards in Prince Edward County. This is a small batch “Brut Blanc” Cuvée, made using the Charmat method bottled as VQA Ontario.

We had an instant crush on this new vintage: the beautiful bubbles are so nicely integrated and complement the wild floral and orchard fruit aromas, all backed by the bracing acidity of the Vidal grape (75%) and a hint of Riesling (25%) when grown in our cool climate. Dangerously delicious in the glass, this wine is built for both celebration and gastronomy.

The Ward 5 Brut Blanc’s very well balanced acidity makes it perfect to pair with oily and fatty foods, such as cheese boards, salmon, roasted chicken or even fish and chips!

Spicy & Smooth

“The Farm” is a 10-acre vineyard in Niagara’s Twenty Mile Bench, planted to Pinot Noir. The property is rooted in traditions of gathering family & friends, and where Peter and Dora Neudorf call home.

Made from a blend of Pinot Noir from select vineyards across Niagara. After fermentation, the wine was aged in French Oak Burgundy barrels (228L) for 14 months. This particular vintage we were given ideal weather conditions during ripening and at harvest with warm sunny days and cool nights.

This is translated through the glass as we find our Black Label has firm structured tannins with notes of dark cherries and earthy undertones. Blended and bottled unfiltered in The Farm cellar. 

Enjoy this Pinot with grilled salmon or other fatty fish. It would also be ideal with duck and other game birds.

Fresh & Balanced

Emblematically Niagara, this vibrant Chardonnay is made with organic, biodynamic and sustainably-farmed grapes from the Niagara Peninsula. The 2021 Crew Sauvage a blockbuster; 100% Tawse Estate fruit, mainly from the Robyn's Block young vines (2 Cadus puncheons, 4 barrels) which were showing best in the initial tastings with Moray and Jessica. This created the baseline for cuvée which was then blended with 3 beautifully balanced barrels from the Tawse Hillside vineyard and 2 immensely structured barrels from the Robyn's Block Old Vines parcel; the oldest Chard on the property. Et voila, another star is born.

Expect straw gold in the glass with gorgeous orchard fruits, apple and peach on the nose with notes of marine, hazelnut, lemon custard, and blonde caramel essence. This elegant wine offers a lovely texture on the palate, rich and round with biscuits and cream, while boasting a lip-smacking acidity with an herbal tea tannin.

This world class Niagara Chardonnay is ready to pair with just about anything, but we are thinking white fish in beurre blanc, cream based pastas or fresh salads garnished with lots of cheese.

Fresh & Balanced

A true Niagara Village wine focused on a blend of organic, biodynamic and uncertified sustainably farmed vineyards throughout the West Niagara appellation with a focus on Quarry Road (Vinemount Ridge), Cherry Road (Twenty Mile Bench) & the Tintern Vineyard. The grapes are harvested, destemmed, wild fermented "whole berry" for 18 days, before gravity flow takes them into French barrels. This fresh Pinot Noir was then left to age for 16 months in French Oak barrel before bottling.

Situated west of St. Catharines and the Welland Canal, the unique terroir of the West Niagara appellation encompasses six sub-appellations: Beamsville Bench, Twenty Mile Bench, Short Hills Bench, Lincoln Lakeshore, Creek Shores, and Vinemount Ridge.

These Crew Sauvage have a remarkable balance of concentration and weight, while remaining fresh and lifted in their youth.

This mixed case includes 6 bottles of 2023 Crew Sauvage Chardonnay and 6 bottles of 2024 Crew Sauvage Pinot Noir.

Nicholas Pearce Crew Sauvage Pinot Noir VQA Niagara Peninsula 2024. The 2024 vintage is marked by elegance over power, brimming with brightness and approachability straight out of the gate, with not hard edges. Light ruby-red in the glass, high toned aromas of cherry, strawberry, pomegranate, backed by roasted herbs, spice and pepper. Great weight and poise for Ontario, but still the light to medium bodied Pinot Spectrum with balanced tannins and acids holding on to fine and lengthy finish.

Certainly a vintage on the edge, marked by many cold and wet days. However, as every mother does, mother (nature) kicked in and saved the day with a gloriously warm and dry finally to the cooler growing season.

Strawberry, raspberry and red cherry aromas lead the way on the nose, with hints of sweet spice and tomato leaf in the background. Freshly crushed ripe berries continue on the palate, with dried leaf, minerality and spice in the background. The mouthfeel is lean and silky smooth, with very fine tannin and great County acidity.

This Pinot Noir is a very versatile wine given it’s acidity and low tannin. Pinot Noir pairs particularly well with duck, chicken, pork, and mushrooms.

This classic county chardonnay has a beautiful baked lemon nose, with some flinty reduction characteristics. The lean palate offers notes of green apple, with its age adding layers of brown sugar. The finish is quite refreshing and offers an additional lemon note that makes it a wonderful pairing wine. The refreshing acidity pairs perfectly with lemon chicken, mixed green salad with vinaigrette and seafood linguini.

Mineral & Zesty

The 2024 vintage was beautiful, and moderate, with a slight coolness in late August and early
September that really slowed ripening. Yields were average, and as a result, wines are very
concentrated, powerful with full flavour development and great acidity. The nose of this wine
is full of pineapple, lime zest, lemon-curd, and peach blossom followed by meringue and crème fraiche. The palate has a refreshing reflection of the nose, adding peach, pear, honeysuckle and spice, but it also showcases a mineral and wet stone characteristic that leads to the long,
elegant finish. 

This wine will age well for the next 5-8 years. Enjoy with brie, sole meuniere, and lemon-roasted chicken.

Earthy & Floral

A blend of fruit from 4 different Vineyards from 3 different sub-appellations, this wine explodes out of the glass with wonderful strawberry, raspberry, mulberry, and bing cherry followed closely by sugar beet, tobacco leaf, moss and fresh soil. The balance, coolness and bright acidity of the 2023 vintage is immediately evident, yet with extra air it starts to show more fullness and roundness than might be expected. The incredibly supple mouthfeel, medium body and balanced acidity frame exceptional flavour intensity, leading to a long, sweeping finish that ends on a decidedly mineral and crunchy note.  This wine is great now with a generous decant but will also age well for 3-4 years.

Pair this Pinot Noir with smoky glazed ham or grilled salmon.

Lighthall's famous sparkling Pinot Noir, re-fermented using the Charmat method. A slight change in production method saw a little less skin contact and more whole cluster pressing, presenting a wine packed full of strawberry flavour and hibiscus aroma. Very crisp and fruity while still refreshingly dry, this wine matches exceptionally with spicy rosé sauce, sweet red bell peppers and cheese boards.

Citrusy & Floral

The intense aromatics of this wine leap from the glass, lifted by beautiful, creamy bubbles. Explosive aromas of fresh mandarin orange, Meyer lemon, fresh ginger, and notions of nutmeg and honeysuckle immediately engage the olfactory senses. The palate echoes the nose, but also brings in mango, lychee and rose-petal with the light citrus and floral components wiping through the background. A rich mouthfeel is brought on with this warmer vintage as well as the lees in bottle. Serve well chilled. Pour immediately.

Nutty & Waxy

This wine is unmistakably County Pinot Gris. The aromas of pear and cantaloupe yogurt are delicate, rich, and inviting. The use of an Alsatian yeast strain and our method of partially fermenting in old French oak barrels give a smooth and rich mouthfeel, while the waxy finish of unctuous confit apple with a hint of nutmeg keep you coming back for more.

Choucroute garnie, foie gras, pork dishes, veal parmiggiano, chicken with cream sauces, and a traditional turkey dinner are all wonderful. Pizza bianca with a cream base, taleggio and pear is delightful, while meatier fish like halibut, cod, trout, or arctic char are ideal for the fish lovers. Chèvre and brie make great cheese options.

Tropical & Fresh

Leaning Post's goal for their Sauvignon Blanc is to reflect the unique Niagara terroir and this wine always delivers.

Very intense tropical aromas of pineapple, passionfruit and mango lead to kiwi, lemongrass and lime-leaf on the nose. The palate has bright acidity matched by a creamy texture, with key-lime and starfruit battling with passionfruit for supremacy, while lemongrass and honeysuckle stand back and watch. The finish is the most surprising, with the flintiest, most “wet stones in a mountain stream” minerality we have ever seen on our Sauvignon Blanc!

Drink now or over the next 3 years. Enjoy with pan-fried halibut, fresh pesto; anchovy-paste pasta, or lemon herb roasted chicken. 

Vibrant & Crunchy

THE FARM, Poolhouse Rosé, is made from Gamay grown in Lincoln Lakeshore where the soils are rich in clay and high in minerals. We macerated the grapes on skins for 12 hours before gently pressing into a stainless tank where we started with a slow cold wild ferment, which harnessed the vibrant, dark fruit characters and bright acidity. Fermented dry and bottled shortly after.

The wine is dry & refreshing with notes of cherry & raspberry, and a lingering bright acidity.

Toasty & Citrusy

The Chardonnay in this wine comes from a beautiful old vines (35+ years old) block, while the Pinot Noir is from a younger block on the same property in Beamsville Bench.

If you can imagine dipping a freshly baked lemon/herb croissant into a cloud then you have some idea of how this wine tastes! The toasty/biscuity and lemon-curd aspect leaps immediately out of the glass, with a background of crème-fraiche and flowers. The palate is full and round, with a very fine mousse showing fresh-baked bread, lemon meringue, roasted almond and unicorn-dust. The terroir and old-vines really come through on the finish with an amazing mineral/flinty core and very present acidity.

Enjoy now, but this wine will age gracefully over the next 8+ years if you want it to. Drink with fresh Malpeque oysters, hazelnut crusted halibut, and soft white cheeses.

It begins with a sparkle of salted lemon and an aroma reminiscent of the beautiful land on which it is grown - County limestone shale. The velvety shortbread and macadamia nut flavours on the palate are derived from its Traditional Method style, aging 2 years on lees in this very bottle. Santé!

The density, body, structure and balance of this wine is unparalleled. The nose shows beautiful sugar beet, bing cherry, rose petals and mushroom with a background of tarragon and basil and hints of peppery intensity. The palate follows the nose while adding mulberry, tobacco, and fresh-turned-earth and fallen leaves. A medium-full bodied wine with lots of fresh, young fruit and balanced acidity and tannin make this a wine that will age gracefully for at least 10 years.

Creamy & Zesty

The vintage allowed Chardonnay to ripen very slowly and evenly, gaining full flavour while keeping the balance of fresh crisp acidity. Immediately on the nose there is a wave of pineapple, lemon-curd, lime- leaf, and apricot pith, followed immediately by sea salt and wet-stone minerality. The palate brings beautiful richness but still balance with white peach, spice, and lemon-meringue mingling with crème fraiche, flint and roasted almond. The finish is silky smooth and exceptionally long but is eventually overtaken by wet-stone and crisp acidity. A truly beautiful example of Niagara Chardonnay!

Pair this wine with meaty fish like halibut or cod. Shellfish including lobster, shrimp, crab and scallops work stunningly with this Chardonnay.

This, Lighthall's first edition of concrete aged Chardonnay, paints the clearest image yet of county terroir. Clear and authentic, the nose is brimming with honeyed apple, lemon yogurt, salted oyster shell, and beeswax. The flavours continue in the palate, but the star of the show is the opulent, luscious, yet elegant mouthfeel that lingers with finesse.

A brilliant seafood wine, this is a knockout with oysters, halibut, butter-poached cod,
lobster, crab, and scallops. Lemon chicken, rabbit, and quail are good meat options, while grilled asparagus, hummus, creamy orzo, and tofu souvlaki make delightful vegetarian picks. Rich, creamy, and mild cheeses are well balanced by the bright acidity and round texture.

As typically found in County Chardonnay, this wine starts with aromas of flinty
minerality, Asian pear, and salted caramel. A round palate is filled with flavours of golden delicious apple, baking spices, and a hint of lemon. Put together, it’s like an apple crumble before it’s been baked! The smooth texture and long finish leave you satiating for more.

Our Phillipston Road (Manchego-style) cheese is literally made for this wine. Rich, salty, and nutty, it makes a perfect match. Coquilles St. Jaques, Oysters Rockefeller, halibut, spaghetti cacio e pepe, zucchini ravioli with grated lemon zest, butter poached cod, and chicken with a cream sauce are all wonderful pairings.

Cool-climate Merlot at its best. This wine is loaded with all things blue and moody: damson plums, violet, fig, blue-acai, and chocolate-covered blueberry. Rich oak tones of vanilla, chocolate, and marshmallow balance out the fruit intensity and leave a long yet distinguished finish.

Fatty, high protein foods are recommended to bind with the high tannin and balance the acidity. Roasted leg of lamb with Saskatoon berry compote, coffee-rubbed steak, seared duck breast, creole jambalaya, pork loin with roasted plums, and blue cheeses all go
great.

Spicy & Tropical

“Orange” wine (skin-fermented white) is an ancient technique for making wine and we continue to explore its potential. Harvested on September 30, 2022, the grapes were destemmed, into concrete tanks where it went through a spontaneous fermentation. It remained in concrete and aged on skins for 25 days, then it was gently pressed into clay amphora (35%) and stainless steel (65%) for aging. It was bottled unfined and unfiltered with minimal sulphite additions.

This Clockwork opens with vibrant aromas of elderflower honey, mandarin oranges, lemon curd, sweet Thai basil, and lemongrass. On the palate, it mirrors these notes while adding layers of honey, cream, and lemon, all carried by a rich, oily texture. A bright acidity, fine tannins, and a beautiful texture shape a dynamic finish that evolves as the wine warms. It pairs exceptionally well with briny or grilled seafood, such as oysters.

A strong ruby colour in the center of the glass. This shifts to brick on the edges. Vibrant throughout. The nose shows intense sour cherry, raspberry crumble and subtle notes of cedar forest. Soft tannin, cherry, black currant and hints of mushroom, work in concert with one another on the plate.

The high natural acidity and subtle tannins in this specific Prince Edward County Pinot Noir allow it to effortlessly cut through creamy or savoury textures without overpowering delicate flavours. 

Zesty & Mineral

This Riesling shows why we get so excited about Riesling from Lincoln Lakeshore! The nose explodes with beautiful apricot-pith, peach-cobbler, lime-leaf, cardamom, and honey aromas. Those flavours continue on the palate while adding lemon-rind, honeycomb, elderflower and the distinctive stony minerality. This is a classically mid-weight Riesling but has lovely full texture, coming both from the vineyards and the lees aging. As the wine sweeps across the palate towards the finish, the balance of sweet and salty is sublime, with a bright green leafiness and flinty/minerally sensation appearing in waves, leading to an amazing, crunchy finish. The wine will age well for the next decade.

The best pairings for this Riesling include poached salmon, roasted chicken, ham, and veal or pork scallopini.
