Lighthall Vineyards is a small, proud, low volume and high quality winery located in enchanting Prince Edward County, Ontario, Canada. A cooler vintage brings freshness to one of the county’s best varieties. Strawberry, red currant, candied cherry, and a savoury garrigue all burst from the glass. Tones of sumac, cedar, bittersweet chocolate and cinnamon bark bring a discerning finish to this elegant grape. The classic pairing of seared duck breast and mushroom risotto are a must-have.

Classically, a pan seared or confit duck breast with black pepper and wild mushroom risotto is delightful. We also recommend blue cheeses, gruyere, taleggio, jollof with smoked mackerel, grilled pork butt chop with a sumac compote, black truffles, miso chicken, grilled salmon, or tuna sashimi.

Mineral & Zesty

This, Lighthall's first edition of concrete aged Chardonnay, paints the clearest image yet of county terroir. Clear and authentic, the nose is brimming with honeyed apple, lemon yogurt, salted oyster shell, and beeswax. The flavours continue in the palate, but the star of the show is the opulent, luscious, yet elegant mouthfeel that lingers with finesse.

A brilliant seafood wine, this is a knockout with oysters, halibut, butter-poached cod,
lobster, crab, and scallops. Lemon chicken, rabbit, and quail are good meat options, while grilled asparagus, hummus, creamy orzo, and tofu souvlaki make delightful vegetarian picks. Rich, creamy, and mild cheeses are well balanced by the bright acidity and round texture.

The Baud estate dates back to 1742, today the 9th generation manages the winery. Siblings Clementine and Bastien, both under 30, are making some of the best value wines in the area. Jura is that narrow valley in the remote hills between Burgundy and Switzerland, which millions of years ago was covered by an Ocean and today still bares many of the fossils from that time. If you kick a stone in a Jura vineyard, it will probably be a fossil.

Trousseau is by far the rarest grape variety in the Jura, planted in less than 8% of the total Jura vineyard, it has a biological relationship with the white grape Savagnin, being originally from this magical region. The vineyards are planted on rich red marl and gravel soils, along the Cotes du Jura appellation. On the nose, it has aromas of red fruits and leather, with a hint of sub-bois. Tannins are soft and silky, and the palate is very well-balanced.

Enjoy it on its own, or pair it with red meats such as game and venison.

Spicy & Tropical

Husband and wife duo Ilya and Nadia started Leaning Post winery in Niagara over 10 years ago. Initially a virtual set up, the winery now located on Highway 8, has become a reference producer in Niagara.

Harvested on September 25, 2021, the grapes were destemmed, into concrete tanks where it went through a spontaneous fermentation. It remained in concrete and aged on skins for 25 days, then it was gently pressed into clay amphora (17%) and stainless steel (83%). This wine was racked only a handful of times prior to being bottled unfiltered on April 13, 2022.

This wine represents the evolving nature of wine in Niagara. Orange marmalade, jalapeño pepper jelly, and passionfruit dominate the nose and palate, while elderflower honey, cream and lemon dominate the palate with a rich and oily texture. It is all tied together with bracing acidity, gorgeous texture and a seam of fine tannin. Chill and drink as it warms to reveal new facets of its unique personality.

Enjoy with fish tacos or fish and chips.

Spiced & Round

Husband and wife duo Ilya and Nadia started Leaning Post winery in Niagara over 10 years ago. Initially a virtual set up, the winery now located on Highway 8, has become a reference producer in Niagara.

This blended wine (61% Merlot, 39& Cabernet Franc) always over-delivers massively for the price. Blackberry, cassis, raspberry and mulberry instantly appear on the nose, with lilac, cracked white pepper, licorice and pancetta following closely behind. On the palate, it has a very broad and weighty mid-palate featuring plum, wild-blueberry, and strawberry layered over dark- chocolate and graphite with wisps of herbs-de-provence and black olive fading in and out.

The powerful but soft tannins make it satisfying to drink now with a good decant, but it will certainly age well over the next 5-8 years. Great with burgers, cured meat, and hard cheese.

Crafted from a blend of Beaune 1er Cru terroirs—Les Aigrots, Les Bressandes, and Les Toussaints—this wine is the result of Maison Roche de Bellene’s skilled selection from elevated vineyard sites in Beaune.

Pair this wine with mild cheeses, chicken or rabbit in a creamy mustard sauce or mushroom risotto.

Nicolas Potel is an iconic producer and pioneer in the Burgundy winemaking scene. He grew up in a family dedicated to wine; and after gaining some experience internationally, he started his own project in the late 90's. The Maison Roche de Bellene offers a complete range of carefully cultivated and versatile wines, often made from old vines. All of the Maison wines are made with respect to sustainable and natural farming practices, with as little intervention as necessary to showcase their individual terroirs.

Potel created the Bellenum Collection to offer exceptional wines at an affordable price. These wines highlight the developmental stages of specific vintages and showcase the diversity of Burgundy's climats. He selected the best crus and cuvées from over 2,500 wines, featuring notable vintages from as early as 1959.

With age, this wine has developed aromas of dried currants along with earthy undertones of forest floor. The palate reveals delicately balanced components of sweet, developed fruit with finely polished tannins and gentle weight. The finish is smooth and refined, offering the drinker lingering waves of iron-like minerality and a soft persistence of dried florals.  

Serve with braised beef and morels to compliment this wine's mature flavours.  

Château Haut Grelot, situated near the Gironde Estuary north of Bordeaux, has been dedicated to vineyard care and winemaking since 1920. 

This classic Bordeaux blend features 70% Merlot and 30% Cabernet Sauvignon, cultivated in the gravelly, sandy, and silty soils of Côtes de Bordeaux. Exhibiting a deep ruby hue, its bouquet reveals vibrant red berry aromas complemented by vanilla and spice. On the palate, the wine is smooth, fruit-forward, and well-structured, making it an excellent companion to game or red meat dishes.

In 2013, husband & wife team Chris and Andrea Mullineux partnered with Analjit Singh (BAS) to establish Leeu Passant winery on the beautiful Leeu Estates in Franschhoek. The winery is dedicated to showcasing the South African landscape and climate, with a strong commitment to environmental stewardship and community upliftment. By working with some of the Cape’s oldest and most exceptional vineyards, they honour the country’s rich winemaking and viticultural heritage.

Sourced from a historic parcel of dry-farmed bush vine Cinsault planted in 1900, rooted in deep sandy alluvial soils in Wellington. Recognized as South Africa’s oldest registered red wine vineyard, it continues to produce fruit of remarkable character and heritage.

This aromatic wine opens with an alluring, complex bouquet of roses, cranberries, cherries, warm spice, and a whisper of thyme. The palate is fresh and silky, layered with notes of orange peel, rhubarb, maraschino cherry, pink peppercorn, and clove. Fine tannins provide elegant structure, carrying the flavours through to a refined finish.

Stéphane Riffault, Claude Riffault's son, is turning out Sancerre bottlings that are the envy of many producers twice his age. Stéphane studied in Beaune and then learned with Olivier Leflaive in Burgundy. After his time in Burgundy, the vintner went to Bordeaux, where he stayed for some years at Château Angélus, and returned to Sancerre in 2001. When his father Claude retired, Stéphane took over the winery, and converted the vineyards to organic and biodynamic. He has become one of the most sought-after producers in the region.

Sourced from several plots all situated in the lieu-dit of Les Boucauds, this cuvée employs close to 50% of the Sauvignon Blanc planted on the estate. Entirely from terres blanches soils – marls and clays over Kimmeridgian limestone – this wine represents a pure expression of this site as well as the deft winemaking of Stéphane Riffault.

After a meticulous 10-month aging in oak barrels, it unveils an enchanting bouquet of ripe pear, succulent peach, delicate spring flowers, warming spices, and a hint of menthol. On the palate, bright acidity complements a luxurious texture, creating a perfect balance among its intricate flavours. The finish is long and ethereal, marked by a subtle saline note that invites you to savour another sip.

It can be enjoyed on its own or with shell-fish or fish dishes.

In 1985, Mario and Nancy Adamo transformed a 28‑room inn north of Toronto into Hockley Valley Resort, embracing a location that truly felt like home. Inspired by the vine‑covered hills of his hometown in Calabria, Italy, Mario envisioned the slopes of Hockley Valley as a place where grapes could thrive. In 2000, the first test vines on a newly purchased 77‑acre property were planted, and by 2015, Adamo Estate Winery was born. Today, this boutique, small‑batch winery boasts over 28,000 vines, farmed with organic and biodynamic principles. Led by winemaker Shauna White, the team crafts terroir‑driven wines that showcase both the character of Hockley Valley and select sites from Niagara’s most renowned vineyards.

This Bordeaux-inspired blend opens with a youthful, vibrant nose of ripe red and black berries, accented by floral notes, hints of licorice, and a touch of toasted almond. On the palate, juicy redcurrant and ripe strawberry flavours are supported by silky tannins and balanced acidity, creating a smooth, refreshing profile. Domaine du Bollenburg is an independent, family-run winery in the heart of Alsace, with roots dating back to 1887. It was in 1947 however, that the Clos came to the Meyer family, who refocused the estate on producing high-quality wines that honour and preserve Alsatian cultural identity. Situated on Bollenberg - the largest limestone hill in the canton of Rouffach - the vineyard spans 25 hectares, showcasing the unique terroir of the region. 

This Sylvaner opens with delicate botanical and mineral nuances, revealing aromas of dried chamomile, thyme leaves, and a subtle hint of blanched almonds. On the palate, it’s medium-bodied, with the grape’s naturally crisp acidity balanced by soft notes of beeswax and a touch of salty brine. The finish is long and tangy, reminiscent of the elegant, savoury lift of a fine Fino Sherry.

A dry, food-friendly white that shines as an apéritif and pairs well with fish and delicate white meats.

Creamy & Zesty

The vintage allowed Chardonnay to ripen very slowly and evenly, gaining full flavour while keeping the balance of fresh crisp acidity. Immediately on the nose there is a wave of pineapple, lemon-curd, lime- leaf, and apricot pith, followed immediately by sea salt and wet-stone minerality. The palate brings beautiful richness but still balance with white peach, spice, and lemon-meringue mingling with crème fraiche, flint and roasted almond. The finish is silky smooth and exceptionally long but is eventually overtaken by wet-stone and crisp acidity. A truly beautiful example of Niagara Chardonnay!

Pair this wine with meaty fish like halibut or cod. Shellfish including lobster, shrimp, crab and scallops work stunningly with this Chardonnay.

Perched atop the Côte de Cadet on Saint-Émilion’s limestone plateau, Château Soutard-Cadet is a small, single-block vineyard spanning just 2.7 hectares. Primarily planted to old-vine Merlot with a small portion of Cabernet Franc, the estate reflects the classic character of Bordeaux’s Right Bank. Its long-standing winemaking tradition was given new energy in 2015, when the property was acquired by the Lefévère family, renowned proprietors of several distinguished neighbouring estates, including Sansonnet, Villemaurine, Moulin de Cadet, and Harmonie. The wines continue to embody the region’s warmth and charm with a dedicated commitment to sustainable viticulture.

Soutard-Cadet pours a deep, inky hue and serves aromatic intensity, giving layers of blackberry, blackcurrant, and delicate hints of tobacco leaf and spice. On the palate, ripe dark fruit blooms alongside finely beaded tannins, lending structure and a refined texture to the plush mouthfeel, which lingers with lasting notes of sweet, spiced preserves.
