Stéphane Aviron can be considered a pioneer in his approach to winemaking in Beaujolais, however he would just tell you that he’s simply returning to the traditional practices that have always made fantastic Gamay wines. Sustainable viticulture, extremely old vines and classic Burgundian techniques.

The Morgon Côte du Py is Stéphane Aviron’s most structured, earthy wine, that is drinkable now and can age wonderfully for as much as ten years. The grapes are sourced from the slopes of an 1150-foot inactive volcano that is regarded as one of the top terroirs in all of Beaujolais. Vines face due south on a well-pitched hillside of volcanic soils with schist and blue stone.

The nose is refined and captivating, offering aromas of ripe berries layered with earthy and mineral undertones. On the palate, the wine is full-bodied and balanced, showcasing vibrant crushed berry flavors that lead into a firm, well-defined finish. It pairs beautifully with red meats, hearty stews, French onion soup, soft cheeses, and dark chocolate.

Stéphane Aviron can be considered a pioneer in his approach to winemaking in Beaujolais, however he would just tell you that he’s simply returning to the traditional practices that have always made fantastic Gamay wines. Sustainable viticulture, extremely old vines and classic Burgundian techniques. He focuses on the Beaujolais village crus, all but forgotten gems of vineyards when the nouveau craze took over, which are the best sites for unique, expressive and terroir driven wines. All of the fruit is sourced from old vines (40+ years), so seeing Vieilles Vignes on the label is a rite of passage, not a privilege. Authenticity and a distinctly Beaujolais style of winemaking is what sets Stéphane apart from the rest.

Morgon is known to be one of the firmest of the Beaujolais cru, and indeed there is solid structure here, plus meaty and earthy note character around the ripe cherry fruit. It is medium bodied, firm and somewhat tannic. There is impressive length here. I would drink up over the next two years. Tasted Feb 2026

From Côte du Py, hillside cru inside the centre of Morgon and a 2022 Aviron that represents the firmer and gripper gamay from the more specific location. Cool, almost blue fruit with an intense floral reduction and layers of interest to peel away. Lays down tracks on the palate with force, like a river dance and yet Beaujolais will always be just a little bit sing-song. “Les beaux messieurs font comme ça. Et puis encore comme ça.” Drink 2026-2029. Tasted February 2026.

This is a bright and flavourful Morgon, with lucent flavours of perfectly ripe, sweet and supple red berries and cherries, savoury herbs, toasted black pepper, and wildflowers. Crunchy acidity and fine tannins lend the palate a balanced structure. The long finish is infused with a hint of gravel and the charming scent of torn violet petals. Complex and unpretentious, this memorable gamay is ready to enjoy over the next two years. Tasted February 2026.
