Textured & Mineral

Pearce Predhomme is a collaboration between Nicholas Pearce and Will Predhomme focusing on terroir driven wines from old vine vineyards in Stellenbosch, SA & Willamette Valley, US.

This Chenin is made from old bush vines grown in decomposed granite/quartz on the Helderburg (Clear Mountain), in the southwestern-most corner of Stellenbosch.

Behold, Chenin Blanc! The most widely planted varietal in South Africa simply shines in this charming expression from Stellenbosch. Sourced from old vines and naturally fermented, expect elegant notes of white peach, lemon, and tangerine with an underlying layer of crisp yellow apple. Bright and fresh on the palate, but with good depth and concentration, this wine is ready to drink now but will also cellar nicely for the next 2-3 years.

This Chenin Blanc pairs perfectly with all kinds of fresh seafood; and also with tartare. Smoked salmon or trout would also be delicious next to a glass of this old vines Chenin. Its rich texture makes it suitable to be paired with goat cheese, roast chicken and butternut squash.

Fresh & Mineral - The Pinot Grigio Killer

Wines from Soave are made with the local grape Garganega. Cantina Tessari has its vineyards in the volcanic hills above il Castello di Soave, which is the original - or 'Classico' - wine growing area in Soave, the best vines are located here. 

Tessari’s golden straw coloured Grisela is the backbone of the vineyard; a delicious entry level wine that is meant to be enjoyed on any occasion. Melba toast, elderflower and chamomile aromatics fill the glass with a notable mineral quality. The taste of crushed seashells dance on your tongue with a fun duo of stone fruit and citrus. The finish is refreshing with balanced acidity.

Grisela is excellent as an aperitif and for accompanying rich Italian seafood recipes and risottos.

Mineral & Zesty

From a new family (relatively speaking) in Chablis, the estate belongs to Marie-Noëlle & Laurent Ternynck. They have deep roots in the surrounding area of AOC Burgundy, farming for multiple generations. 

This old vines Chardonnay is wild fermented fermented in stainless steel tanks, then ages “Sur Lee” for 12 months after malolactic fermentation is complete. The fruit is gathered from vineyards in Fleys and this area sits at a higher altitude on a windswept plateau, which helps maintain the acidity in the wine.  Fresh, floral and mineral on the nose. There are notes of fresh almond, hazelnut, citrus and white flowers on the palate. It is balanced, structured and texture example of classic favourite. 

Keep it chilled in the fridge, uncork it at the end of the day and pour yourself a glass! Also pairs well with oysters, all kinds of fish dishes, and roasted chicken.

Domaine de la Garenne's Sancerre, made from 100% Sauvignon Blanc, is crafted from 7 hectares of vineyards primarily located in Verdigny, with a small parcel in Sancerre. The wine is grown on a mix of calcareous "Caillottes," clay-limestone "Terres Blanches," and flint soils, offering a vibrant, full-bodied character with mineral complexity. 

The colour is crystalline with golden reflections. The blend of the different terroirs, combined with a harvest at perfect maturity give a good harmony to this wine. During the tasting, the elegant notes of citrus and white-fleshed fruits give way to mineral and floral aromas.

With its crisp acidity and zesty flavors, this wine pairs well with a variety of foods, particularly seafood dishes like oysters or fresh fish, and dishes with goat cheese, along with lighter fares like salads and sushi. 

Elegant & Crisp

Château Haut Grelot is located near the Gironde Estuaire, north of the town of Bordeaux. Haut Grelot has been making wine and taking great care of their vineyards since its establishment in 1920!

This Crémant de Bordeaux is crafted from 100 % Sémillon, cultivated at a yield of 60 hl/ha on a 1‑hectare plot with sandy‑loamy and clayey soils, giving it a distinctive terroir. The grapes are manually harvested and immediately cold‑pressed under an inert atmosphere, ensuring delicate handling and preservation of freshness. After 9 months of élevage, it is bottled with sugar liqueur and yeast, and the bottles are turned daily to gently shift the lees. Final disgorgement with liqueur enhances the mousse, culminating in a wine with a pale‑yellow robe and fine bubbles. On the palate, it presents elegant, lovely floral and fruity flavors, marrying freshness, harmony, and complexity, and finishing with a long, graceful aftertaste.

Ideal as an aperitif or with cake and pastries.

Textured & Bright

Once the site of a monastery of the Olivetan order, Giovanni Cenci lives and works his family’s generations- old farm, producing some of the most compelling, complete wines of the region. The family farm spans 30 hectares for grains and grazing, with only 7 hectares planted to ancient clones of Grechetto, Trebbiano Toscana, Sangiovese, Merlot, and more; above all, this is an ecosystem for living, not a winery for churning out bottles.

Wine has of course been crucial to this site for hundreds of years, not just because of the people who have worked the land, but rather the uniqueness of the place itself: massive blocks of travertine marble are visible alongside limestone-rich clay soils, giving the wines definition alongside meaningful substance.

Anticello is made with Grechetto grapes, which are destemmed and left in contact with skins for about an hour before starting fermentation. The grapes are then fermented in stainless steel (80%) and wooden barrels (20%). It ages for 7 months in steel with frequent bâtonnage. 

In the glass, it has a deep straw yellow colour with golden hues. On the nose, it has aromas of stone fruit, citrus, and wild flowers. The palate is fruity, savoury, fresh, slightly tannic, soft and powerful.

Mineral & Zesty

Lighthall Vineyards is a small, proud, low volume and high quality winery located in enchanting Prince Edward County, Ontario, Canada. All their wines are produced in a non-interventionist manner and fuelled by passion as hearty as our vines. They also make cheese, designed to pair with their wines.

As typically found in County Chardonnay, this wine starts with aromas of flinty
minerality, Asian pear, and salted caramel. A round palate is filled with flavours of golden delicious apple, baking spices, and a hint of lemon. Put together, it’s like an apple crumble before it’s been baked! The smooth texture and long finish leave you satiating for more.

Our Phillipston Road (Manchego-style) cheese is literally made for this wine. Rich, salty, and nutty, it makes a perfect match. Coquilles St. Jaques, Oysters Rockefeller, halibut, spaghetti cacio e pepe, zucchini ravioli with grated lemon zest, butter poached cod, and chicken with a cream sauce are all wonderful pairings.
