Fresh & Balanced

Emblematically Niagara, this vibrant Chardonnay is made with organic, biodynamic and sustainably-farmed grapes from the Niagara Peninsula. The 2021 Crew Sauvage a blockbuster; 100% Tawse Estate fruit, mainly from the Robyn's Block young vines (2 Cadus puncheons, 4 barrels) which were showing best in the initial tastings with Moray and Jessica. This created the baseline for cuvée which was then blended with 3 beautifully balanced barrels from the Tawse Hillside vineyard and 2 immensely structured barrels from the Robyn's Block Old Vines parcel; the oldest Chard on the property. Et voila, another star is born.

Expect straw gold in the glass with gorgeous orchard fruits, apple and peach on the nose with notes of marine, hazelnut, lemon custard, and blonde caramel essence. This elegant wine offers a lovely texture on the palate, rich and round with biscuits and cream, while boasting a lip-smacking acidity with an herbal tea tannin.

This world class Niagara Chardonnay is ready to pair with just about anything, but we are thinking white fish in beurre blanc, cream based pastas or fresh salads garnished with lots of cheese.

Pearce Family Wines

In the early 2000's Nicholas Pearce was exposed to the garagiste movement in Bordeaux and was particularly inspired by négociants like Jean Luc Thunevin (Saint Emilion), James Sichel (Margaux) and Nicolas Potel (Beaune) from Burgundy.

After returning home to Ontario and starting his own wine company, he has had a hand in making 10+ wines in two hemispheres, 3 countries and 5 different appellations since the 2013 vintage.

This is a firm, flavourful, and elegant chardonnay, made with fruit that were organically, bio-dynamically, and sustainably grown. I like the balance between crunchy orchard fruit and juicy lemons, on the one hand, and finely-integrated notes of spice and toast on the other. It feels rounded and silky on the palate, lifted by taut acidity. The finish is long-lasting, leaving subtle salinity in its wake. Tasted April 2023 by Critic Understudy Megha Jandhyala.

This is a very fine, quite elegant chardonnay that over-delivers for $25. There is a sense of sophistication here.The nose is generous and clean with very well integrated peach/pear, subtle toast, spice and lees. It is mid-weight, polished and very well balanced, with some minerality on the finish. Tasted April 2023.

The Moreau family has been settled in the heart of Chablis since 1884. Louis Moreau, the sixth generation, studied oenology and viticulture in California and took over from his father when he returned to France in 1994. Nowadays, the domaine's vineyards extend all over the four levels of the appellation: Petit Chablis, Chablis, Premier Cru and Grand Cru.

What makes Chablis so exceptional? Evidently, the composition of the soils. The limestone soils of the Chablis appellation were formed in the upper Jurassic era, or Kimmeridgian; and contain lots of fossilized oyster shells that add a great complexity, volume and structure to the wine. On the palate, this Chablis is especially floral, and displays fresh aromas of apple and pear. On the palate, it has a vibrant mineral expression, balanced by a textured roundness and finesse.

Perfect to accompany with seafood, such as oysters or lobster risotto.

Domaine Louis Moreau

Winemaker Louis Moreau is the master of the Chablis terroir, where he bottles 100% Chardonnay wines from all four levels of appellation: Petit Chablis, Chablis, Chablis Premier Crus and Chablis Grands Cru.

The Domaine owns parcels in five of the seven Grands Cru climats, and works with many plots throughout the region in a sustainable manner. The most prestigious of its wines is the monopole Chablis Grand Cru 'Clos des Hospices' dans Les Clos AOC 2016, acquired by the Moreau family in 1904.

Louis Moreau, who has been leading the domaine since 1994, produces wines with a unique style. Louis Moreau studied oenology-viticulture at Fresno State University and worked at different Californian wineries before he took over the Domaine's operations in 1994, representing the family's sixth generation of vignerons.
