Zesty & Mineral

Gilvesy winery is located in the outskirts of Lake Balaton, near an ancient dormant volcano, in Hungary. Hungarian expat Robert Gilvesy moved back to his homeland from Canada to start this exciting project involving native grape varieties and volcanic soils.

This blend is light and fresh. On the nose, it's all about hints of mint, lemon and fresh cucumber, while on the palate it's zesty, with notes of green apple and citrus fruit.

It's delicious when paired with summer meals: fresh salads dressed with dried fruits such as cranberries and walnuts, grilled fish with potatoes and zesty ceviches.

About the Winery

Gilvesy Pincészet

Hungarian expat Róbert Gilvesy moved back to his homeland from Canada, and began building the Gilvesy winemaking empire on the former Esterházy estate on Szent György Hill. Thanks to years of hard work, the Hegymagas-based facility now includes a modern building complex and about 13 hectares of vineyards, in addition to being the home of the family. The area is shaped by 6 million years old volcanoes, where indigenous and international varieties grow organically.

Robert’s absolute admiration for nature and the terroir translates into an immense respect for the environment. By farming using organic practices, the soils and the vines stay healthy. In the winery, by letting nature take its course without controlling the processes, and using local resources, such as Hungarian oak barrels, Gilvesy promotes and protects the Balaton region.

Gilvesy's 2020 Bohém see pinot gris dropped from the blend, composed in this vintage of olaszrizling (welschriesling), riesling and sauvignon blanc. The result is a display of ripe but fresh nose of yellow-fleshed orchard fruit, lemon and lime zest and pith, thyme and sage in a tonic and refreshing ensemble. The palate is light-medium-bodied with crunchy-fresh, zesty acids, moderate complexity, and saline finish. I like the crystalline purity on offer, like a cold mountain spring, the seamless texture, the refreshment provided. Well made, transparent and delicious. Drink or hold into the mid-'20s. Tasted June 2022.

Floral & Textured

Born from a partnership that started on Lighthall Road between Vigneron Glenn Symons & Négociant Nicholas Pearce. Hand harvested Pinot Gris from vineyards in South Bay, PEC blended with Vidal from Wismer-Foxcroft Vineyards in Niagara bring you the 2021 edition of Ward 5 PGV. Each variety was de-stemmed and fermented separately. Pinot Gris was left on The skins to ferment for 27 days, while the Vidal was left for 12 days on skins. The wines were blended together at pressing, and left to bind together before tartaric stabilization. The wine was then filtered with a 0.2 micron cross-flow system prior to bottling.

The vibrant orange colour of this wine certainly matches the initial aromas – dried apricot and orange peel greet the nose right away, while notes of steeped black tea, late-season lilacs, and honeysuckle also linger. The brightness of the Vidal shines through on the palate with a citrus driven profile up front, while more rounded notes of Earl Grey tea and extra virgin olive oil leave a smooth finish.

All the flavours from the bordering countries around the Mediterranean Sea are a match made in heaven. North African, Middle Eastern, and Southern European flavours of olive oil, savoury herbs, cumin, cinnamon, saffron, and citrus are all ideal. These flavours with grilled fish, legumes, vegetables, and stewed meats all excel.

The label features artwork by Lilja Schaer, an up and coming local artist based in Toronto's Eastside Leslieville. Lilja draws her inspiration from the natural environment that surrounds her. She is also influenced by her Estonian-Canadian heritage. Lilja also happens to be Nick's 7 year old niece.

About the Winery

Pearce Family Wines

In the early 2000's Nicholas Pearce was exposed to the garagiste movement in Bordeaux and was particularly inspired by négociants like Jean Luc Thunevin (Saint Emilion), James Sichel (Margaux) and Nicolas Potel (Beaune) from Burgundy.

After returning home to Ontario and starting his own wine company, he has had a hand in making 10+ wines in two hemispheres, 3 countries and 5 different appellations since the 2013 vintage.
