The Baud estate dates back to 1742, today the 9th generation manages the winery. Siblings Clementine and Bastien, both under 30, are making some of the best-value wines in the area. Jura is that narrow valley in the remote hills between Burgundy and Switzerland, which millions of years ago was covered by an Ocean and today still bares many of the fossils from that time. If you kick a stone in a Jura vineyard, it will probably be a fossil!

This sparkler, or Crémant, is made in the traditional Champagne style, where the second fermentation happens inside the bottle. Expect rich aromatics of apple fruit with citrus, toasted brioche and a striking minerality. It sparks a great balance between creaminess and vivacity.  If you like Champagne, but not the price tag, then this is the wine of choice for you. 

It is very versatile at the table and you can drink this with almost any dish: try it with all types of classic cuisine or even spicy Asian dishes.

Mineral & Zesty

From a new family (relatively speaking) in Chablis, the estate belongs to Marie-Noëlle & Laurent Ternynck. They have deep roots in the surrounding area of AOC Burgundy, farming for multiple generations. 

This old vines Chardonnay is wild fermented fermented in stainless steel tanks, then ages “Sur Lee” for 12 months after malolactic fermentation is complete. The fruit is gathered from vineyards in Fleys and this area sits at a higher altitude on a windswept plateau, which helps maintain the acidity in the wine.  Fresh, floral and mineral on the nose. There are notes of fresh almond, hazelnut, citrus and white flowers on the palate. It is balanced, structured and texture example of classic favourite. 

Keep it chilled in the fridge, uncork it at the end of the day and pour yourself a glass! Also pairs well with oysters, all kinds of fish dishes, and roasted chicken.

Bright & Creamy

Fresne-Ducret is rich in family history and has been rooted in the premier cru village of Villedommange since the mid 1800s. Le Chemin du Chemin is a foray into the essence of their winery.

The first aromas are of apricot and fresh bread, with floral notes, giving way to more complex notes of praline, hazelnut and shortbread. In the mouth, delicate brioche aromas, creamy and buttery, followed by a savouriness with hints of tea. Particularly well-balanced, with a soft astringency.  Aged for a minimum of 48 months on the lees in underground cellars.

Pair this excellent champagne with all the classics matches: oysters, light fish dishes... We also recommend to pair it with fried chicken, porchetta, potato chips or seared scallops. It really does goes with everything!

Fresh & Balanced

Emblematically Niagara, this vibrant Chardonnay is made with organic, biodynamic and sustainably-farmed grapes from the Niagara Peninsula. The 2021 Crew Sauvage a blockbuster; 100% Tawse Estate fruit, mainly from the Robyn's Block young vines (2 Cadus puncheons, 4 barrels) which were showing best in the initial tastings with Moray and Jessica. This created the baseline for cuvée which was then blended with 3 beautifully balanced barrels from the Tawse Hillside vineyard and 2 immensely structured barrels from the Robyn's Block Old Vines parcel; the oldest Chard on the property. Et voila, another star is born.

Expect straw gold in the glass with gorgeous orchard fruits, apple and peach on the nose with notes of marine, hazelnut, lemon custard, and blonde caramel essence. This elegant wine offers a lovely texture on the palate, rich and round with biscuits and cream, while boasting a lip-smacking acidity with an herbal tea tannin.

This world class Niagara Chardonnay is ready to pair with just about anything, but we are thinking white fish in beurre blanc, cream based pastas or fresh salads garnished with lots of cheese.

Mineral & Creamy

“The Farm” is a 10-acre vineyard in Niagara’s Twenty Mile Bench, planted to Pinot Noir. The property is rooted in traditions of gathering family & friends, and where Peter and Dora Neudorf call home.

Made from hand picked Chardonnay from the Beamsville Bench where the soil is rich in
limestone. Pressed whole cluster, wild fermented, aged in 50% stainless tanks and 50%
French oak Puncheons (500L barrels) for 16 months. During ageing the wine completed
Malolactic fermentation and was blended and bottled unfiltered in the farm cellar. 

This wine is vibrant with a chalky minerality – the wild ferment delivers layered notes of pear, lemon, honey and stone fruits. The finish is focused and complex.

Pair this creamy Chardonnay with any chicken dish, baked, grilled, or fried. It would also pair beautifully with seafood.

Mineral & Zesty

Husband and wife duo Ilya and Nadia started Leaning Post winery in Niagara over 10 years ago. Initially a virtual set up, the winery now located on Highway 8, has become a reference producer in Niagara.

The 2024 vintage was beautiful, and moderate, with a slight coolness in late August and early
September that really slowed ripening. Yields were average, and as a result, wines are very
concentrated, powerful with full flavour development and great acidity. The nose of this wine
is full of pineapple, lime zest, lemon-curd, and peach blossom followed by meringue and crème fraiche. The palate has a refreshing reflection of the nose, adding peach, pear, honeysuckle and spice, but it also showcases a mineral and wet stone characteristic that leads to the long,
elegant finish. 

This wine will age well for the next 5-8 years. Enjoy with brie, sole meuniere, and lemon-roasted chicken.

Starting with only 4 hectares when René Baud took on the vineyard in 1950, Domaine Baud progressively expanded to 20 hectares with the help of successive generations. Now, managed by siblings Clémentine and Bastien, the 9th generation, the estate continues to flourish and grow, with a strong commitment to sustainable viticulture and preserving the traditions and style that makes the wines of the Jura so unique and incredible.

The estate achieved the Terra Vitis certification in 2014 for its eco-friendly work and environmental preservation.

Red | Trousseau

Trousseau is by far the rarest grape variety in the Jura, planted in less than 8% of the total Jura vineyard, it has a biological relationship with the white grape Savagnin, being originally from this magical region. The vineyards are planted on rich red marl and gravel soils, along the Cotes du Jura appellation. On the nose, it has aromas of red fruits and leather, with a hint of sub-bois. Tannins are soft and silky, and the palate is very well-balanced.

Pairing suggestion: Enjoy it on its own, or pair it with red meats such as game and venison.

Toasty & Citrusy

The Chardonnay in this wine comes from a beautiful old vines (35+ years old) block, while the Pinot Noir is from a younger block on the same property in Beamsville Bench.

If you can imagine dipping a freshly baked lemon/herb croissant into a cloud then you have some idea of how this wine tastes! The toasty/biscuity and lemon-curd aspect leaps immediately out of the glass, with a background of crème-fraiche and flowers. The palate is full and round, with a very fine mousse showing fresh-baked bread, lemon meringue, roasted almond and unicorn-dust. The terroir and old-vines really come through on the finish with an amazing mineral/flinty core and very present acidity.

Enjoy now, but this wine will age gracefully over the next 8+ years if you want it to. Drink with fresh Malpeque oysters, hazelnut crusted halibut, and soft white cheeses.
