Pearce Family Wines

In the early 2000's Nicholas Pearce was exposed to the garagiste movement in Bordeaux and was particularly inspired by négociants like Jean Luc Thunevin (Saint Emilion), James Sichel (Margaux) and Nicolas Potel (Beaune) from Burgundy.
After returning home to Ontario and starting his own wine company, he has had a hand in making 10+ wines in two hemispheres, 3 countries and 5 different appellations since the 2013 vintage.
Pearce Predhomme

Pearce Predhomme is a collaboration of like-minded individuals from around the globe. Founded with a mission to build and import wines from our favourite appellations while offering an unequaled value/quality ratio for the sommeliers & wine buyers in Ontario. This is a project between Toronto Sommelier and entrepreneur Will Predhomme and Ontario wine importer Nicholas Pearce. They have partnered with Radford Dale in South Africa and NorthWest Wine Co. in Oregon to create these special cuvées.

Good Stellenbsoch season, of that there can be no doubt and surely less complaints, especially as it goes for chenin blanc. By count this is the eighth take on the variety by winemaker Jacques de Klerk for the négoce duo of Nicholas Pearce and Will Predhomme, always wild, always alive and never boring. This hums that familiar tune and reminds us all how chenin and Stellenbosch are so intrinsically connected so that a winemaker need only pay attention to timing and details for the wine to make itself. Feels so natural, in synch and on time. Drink 2024-2027. Tasted April 2024.

A family estate created by Marie-Noëlle & Laurent Ternynck, Domaine de Mauperthuis is located in Prehy, near the town of Chablis. Their wines express the terroir of this amazing region and the vineyards are currently undergoing the transition to organic. Domaine de Mauperthuis covers around twenty hectares of vineyards around Chablis. The estate, in the Burgundy appellation, is planted in Chardonnay, Pinot Noir, Sauvignon and César, on land facing south, benefiting from exceptional sunshine.

This is a quite rich, slightly oxidative style of unoaked chardonnay with pale golden colour and a ripe nose of baked apple. Peach pie, toasty lees and vague nuttiness. It is medium weight, smooth and almost creamy with fine acidity and mineral underpinning. The length is excellent. Tasted June 2022

The dream of 4 French partners in Argentina's Mendoza region can be found 200 kilometers from the district capital, in the South of the region, in the town of San Rafael. It's an oasis surrounded by large canyons and crossed by two rivers, Diamante and Atuel, vital for agriculture and tourism in the region.The arid climate, rugged landscape coupled with the plane trees located along the country roads and weeping willows bordering its rivers that makes the area reminiscent of the midi region in the South of France.
The thirty-hectare vineyard boasts an exceptional site and an idyllic regional climate for wine producing. The low rainfall, vineyard altitude (670m) and high temperature variations are key to the diversity and quality of San Rafael’s terroir and offers the ideal setting for a truly exceptional quality of grape.

This is a quite bright and juicy young malbec. The nose has some energy with lifted mulberry/raspberry, fresh herbs, red rose and some shrubby character. It is medium-full bodied, with good acidity, some heat and slightly astringent tannin. Lacks elegance perhaps, but has some life. Very good length. Tasted January 2026. Tasted January 2026

This is quite a classic representation of malbec, with notes of nutmeg, cloves, and dried leaves serving as top notes, followed by flavours of damson plums and blueberries. The palate is medium to full bodied and approachable, with fine-grained tannins and succulent acidity. The long finish displays accents of vanilla and dried henna, then diffused warmth. Balanced, with very good concentration and length, this is wine that should appeal to most. Tasted January 2026.

It is rare to see a 100% bobal, a variety localized in southeastern Spain. This provides impressive lift and complexity for the price with pomegranate-cherry fruit, and a scent of evergreen/fresh herbs and wood spice. It is medium weight with good structure - warm alcohol, brisk sour-edged acidity and slightly crusty tannin. But there is also generosity and balance with more energy and complexity than expected. Very good to excellent length. Tasted November 2025.

I really like the unaffected charm of this Bobal - there is a generosity and diversity of flavour here, and yet a lightness and ease of being. Flavours of red berries, cherries, and pomegranates mingle playfully with notes of savoury herbs, underbrush, and violets. The medium-bodied palate feels tender and tart, in the most pleasing way, and happily, the peppy energy, candour, and clarity of this wine continue on the long finish. Tasted November 2025.

Bodegas y Viñedos Pardevalles
Pardevalles is recognized for being one of the driving forces behind the D.O Tierra de León, betting on the development of the indigenous grape varieties Prieto Picudo and Albarín Blanco. In 1949 Rafael Alonso founded Pardevalles continuing with the family tradition of growing grapes and making wine. The winemaking tradition in León goes back more than 400 years, famous for its centuries-old caves where wine was originally made.The vineyards of Pardevalles are located between 750 and 820 metres above sea level, in an area with a Continental climate. They grow in poor, rocky alluvial soils which helps maintain the freshness in the wines. The philosophy of the Estate is grounded in making wines which express the character and identity of their origin, with a deep respect for the earth and the indigenous varieties of grape, combining tradition, innovation, and hard work.

Pours a luminous, deep pink, this rosada from Leon is made entirely of the indigenous prieto picudo grape, more typically a blending variety with dark skins and often resulting in wines with licorice-tinged black and red fruit. With youthful exuberance and potency, this salty and succulent expression features a wealth of lightly candied red berries, slippery tannins and a touch of welcome bitterness that contributes balance and a sensation of freshness. Best to enjoy in its youthful condition but it has the concentration for another year or two of aging. Tasted February 2024.

Garage Wine Co.

Garage Wine was literally started in a garage in 2001, by Etobicoke expat Derek Mossman and his wife Pilar Miranda. Since then, the dynamic duo handcraft wines from a series of individual vineyards located in the Maule and Itata Valleys, in the south of Santiago, Chile.
Garage Wine Co makes wines from a series of individual parcels, small lots / bottlings of 8-22 barrels that include a series of dry-farmed field-blends of Carignan, Garnacha, Monastrell, País, Cinsault and Cab Franc grown on pre-phylloxera rootstock with small farmers in the Maule and Itata. Each wine is from a 1-2 hectare parcel in a different place.
Over the years working in the community they have raised a veritable posse of vineyard hands whose skills are working the vineyards the old way / the traditional way– originario. The vineyards are on the old coastal range of mountains closer to the Pacific and have granitic soils with cracks for roots to get deep down into.
When GWCo. speaks of the provenance of these wines they mean more than just the geological terroir. Derek and Pilar think the farming practices that have evolved over generations have as much to do with the wines’ personalities as the soils. All the wines are made by hand with native yeasts in small tanks, punched down manually and pressed out in a small basket press. GWCo is still very much a DIY operation and we still tow much of the crop back to the winery in trailers behind trusty pickup trucks 2,000 kilos at a time.

Pais is one of the oldest commercial grapes of Chile, long used for bulk wine, but now enjoying an renaissance as a light, fresh fruited red. This is quite delicious with pomegranate seed, cherry, a light leafiness and pink rose. It is light bodied (12.5%) with a certain crispness and freshness. Almost tart but it is balanced. The length is very good to excellent. Chill a bit. Tasted January 2026

The idea might be a little salty but país by Garage Wine is always a top hit in the making and more than just an interlude set between more serious wines, and songs. Salty yes and while some won’t get the vibe, consider what this varietal mission is all about, to revive old vines and make wines from some of the world’s older plant DNA. Now imagine a red wine of unique tang and wild backwoods fruit as if it were music with a back beat, no melodies or rap overtop, from a sound that could be both Regina Spektor or Eminem. Now you get the idea for país and a must try wine from Chile’s Maule Valley Secano Interior Caquenes. Drink 2026-2028. Tasted January 2026.

Maison Arnaud Baillot

Arnaud Baillot is a young winemaker based in Beaune, in the heart of the Côte de Beaune. Owner and winemaker, he has been working with lutte raisonnée since 2014 and supplements his Domaine with judicious grape purchases.
As a winemaker, he is passionate about the diversity of wine profiles Burgundy has to offer. So he teams up with Laure Hudelot-Noellat, his wife and granddaughter from the eponymous Domaine, based in Chambolle-Musigny. Together, they produce a comprehensive range of wines, from regional appellation to Grand Cru. Arnaud is very keen to get the best out of every stage of the process, which means he selects the origin of his grapes with the utmost care. He oversees the entire winemaking process, carefully selects his barrels according to the nuances he wishes to bring (wood origin, cooper, toasting, grain, etc.) and finally applies his own ageing policy according to the cuvées... nothing is left to chance, because the treasures a terroir brings are to be earned!

Domaine de Pellehaut

"Pellehaut" gets its name from the Roman or medieval word pila (meaning any kind of solid, pillar-like construction). The presence two kilometres away of mosaics decorated with vines at the Gallo-Roman site of Séviac bears witness to the fact that vines were already grown at Pellehaut in Roman times.
Pellehaut follows a traditional, low-intervention approach to winemaking, using native yeasts from its own vineyards and avoiding thermovinification in favor of cooler fermentation to preserve varietal aromas. After fermentation, the wines are either kept cool in stainless steel tanks or aged for up to two years in fine-grain oak barrels from the Allier forests. Though not part of a prestigious appellation, the estate takes pride in its diverse range of 16 wines, aiming to offer authentic expressions of Gascogne that inspire curiosity and pleasantly surprise wine enthusiasts.
