Tropical & Mineral

This is by far one of the coolest Sauvignon Blanc wines we have ever tasted. This white wine is made next door to Auxerre, in the region of Chablis. It's kind of a unicorn wine: in Burgundy, Chardonnay and Aligoté are generally the only white varieties allowed to be grown. However, St Bris is the exception!

This white Burgundy is made with 100% Sauvignon Blanc. The Saint Bris has aromas of citrus fruits like grapefruit and mandarin orange that jump out of the glass, this is followed by peach, and crushed blackcurrant leaves with light exotic scents like lychee. This complexity on the nose follows through on the palate which is textured, soft and floral, with a distinct minerality on the finish.

Saint Bris calls for oysters! It's also a wonderful choice with herb-driven sauces over chicken and fish dishes. We also love pairing it with Vietnamese and Thai meals with lots of lemon-grass, and fresh cheeses.

Creamy & Fresh

3XP is a tribute to Paul Pender and Ontario Chardonnay by négociants Nicholas Pearce & Will Predhomme.

3XP is a blend of french oak barrels from mostly Tawse Estate all farmed using sustainable, organic and/or biodynamic practices. A large portion is from the infamous Quarry Road Vineyard blended with select barrels from other sites such as Limestone Ridge, Cherry Avenue and a small portion (8%) sourced from like minded sustainable growers.

We strive to show the delicacy, tension & purity of Ontario-grown Chardonnay with this small-production collaboration. Brilliant straw colour, youthful, light-intensity aromas of white peach, green apple, citrus, with delicate integrated subtle lees. Bright lemony & limestone acidity on the palate with a round & refreshing mouthfeel. A clean, fresh, textured... distinctly Ontarian-style Chardonnay.

Ideas for pairing 3XP? This full throttle Chardonnay calls for all shades of seafood and fish: spaghetti with clams and tons of parsley, halibut, crab cakes... or even pork tenderloin! It's also wonderful as an apéro wine.

Textured & Mineral

Pearce Predhomme is a collaboration between Nicholas Pearce and Will Predhomme focusing on terroir driven wines from old vine vineyards in Stellenbosch, SA & Willamette Valley, US.

This Chenin is made from old bush vines grown in decomposed granite/quartz on the Helderburg (Clear Mountain), in the southwestern-most corner of Stellenbosch.

Behold, Chenin Blanc! The most widely planted varietal in South Africa simply shines in this charming expression from Stellenbosch. Sourced from old vines and naturally fermented, expect elegant notes of white peach, lemon, and tangerine with an underlying layer of crisp yellow apple. Bright and fresh on the palate, but with good depth and concentration, this wine is ready to drink now but will also cellar nicely for the next 2-3 years.

This Chenin Blanc pairs perfectly with all kinds of fresh seafood; and also with tartare. Smoked salmon or trout would also be delicious next to a glass of this old vines Chenin. Its rich texture makes it suitable to be paired with goat cheese, roast chicken and butternut squash.

Mellow & Salty

Cantine Barbera is located in Menfi, on the west coast of Sicily. The vineyards, that are farmed following organic and biodynamic practices, are about one mile from the Mediterranean Sea: an uncontaminated deep blue sea. The low cliffs and sandy dunes create a beautiful environment for the grapes to thrive, and are also protected by the Belice River Natural Reservation Fund.

Fresh and pleasant like the briny wind blowing from the Mediterranean, this Inzolia comes from young vineyards and is a charming white wine that offers pure Sicilian pleasure at every sip. The wine has a fresh and charming bouquet of pear, broom and almond blossoms that melt into lush and intense scents of white peach and fine herbs. On the palate, it's juicy and tastes of white orchard fruit and is well balanced by a fresh acidity and an intense saline quality.

Pair this wonderful and textured white with rich fish dishes, Moroccan cuisine and other spiced meals. It is also great with fresh salads and grilled vegetables.

Mineral & Zesty

From a new family (relatively speaking) in Chablis, the estate belongs to Marie-Noëlle & Laurent Ternynck. They have deep roots in the surrounding area of AOC Burgundy, farming for multiple generations. 

This old vines Chardonnay is wild fermented fermented in stainless steel tanks, then ages “Sur Lee” for 12 months after malolactic fermentation is complete. The fruit is gathered from vineyards in Fleys and this area sits at a higher altitude on a windswept plateau, which helps maintain the acidity in the wine.  Fresh, floral and mineral on the nose. There are notes of fresh almond, hazelnut, citrus and white flowers on the palate. It is balanced, structured and texture example of classic favourite. 

Keep it chilled in the fridge, uncork it at the end of the day and pour yourself a glass! Also pairs well with oysters, all kinds of fish dishes, and roasted chicken.

Fresh & Mineral

Wines from Soave are made with the local grape Garganega. Cantina Tessari has its vineyards in the volcanic hills above il Castello di Soave, which is the original - or 'Classico' - wine growing area in Soave, the best vines are located here. 

Tessari’s golden straw coloured Grisela is the backbone of the vineyard; a delicious entry level wine that is meant to be enjoyed on any occasion. Melba toast, elderflower and chamomile aromatics fill the glass with a notable mineral quality. The taste of crushed seashells dance on your tongue with a fun duo of stone fruit and citrus. The finish is refreshing with balanced acidity.

Grisela is excellent as an aperitif and for accompanying rich Italian seafood recipes and risottos.

Elegant & Crisp

Château Haut Grelot is located near the Gironde Estuaire, north of the town of Bordeaux. Haut Grelot has been making wine and taking great care of their vineyards since its establishment in 1920!

This is a classic Bordeaux blend: 90% Sauvignon Blanc, 5% Sémillon & 5% Muscadelle. It's a floral, crisp, and elegant wine that offers exotic fruit aromas: grapefruit, gooseberry, and wild herbs that intermingle with ample citrus fruit on the palate. It has a generous weight, roundness, and a perfect balance that lets you savour every drop.

Perfect to drink by itself or pair with seafood, chicken, fresh salads, and cheese boards.

Floral & Fresh

The Puiggros family has been producing wines from their own vineyards in Odena since 1843 for friends and family, however their wines have only been available commercially since 2008. Working exclusively with Garnatxas, the family came to realize that their traditional techniques and special terroir were something worth sharing with the rest of the world.

Exedra Blanc comes from a beautiful vineyard surrounded by pine trees planted with Garnatxa Blanca on limestone and clay soils, at 500 meters above sea level, with a breath-taking view to the beautiful mountains of Montserrat. Hand-harvested, the wine ferments and ages naturally in 800-litre clay amphorae. 

On the nose, the wine is extremely aromatic: lemon zest, fleshy peaches, pineapple; and hints of sweet flowers such as jasmine, Mediterranean herbs and a delicate note of beeswax. On the palate, it has a nice mouthfeel and an ample freshness.

This wine is perfect to pair with seafood and to have on its own as an aperitif.

Soft & Creamy

Just across the Rhône river from the beautiful vineyards of Châteauneuf-du-Pape, the Lirac appellation extends over the low hills alongside the river.

This is a blend of Marsanne, Clairette, Grenache Blanc and Picpoul. The grapes are hand-picked and aged for 8 months in oak barrels.

This wine is creamy and lush, with hints of honeyed tangerine, melon and lime. Backed by a palate that's medium to full-bodied, slowly fading in intensity on the finish. A great example of how deliciously amazing Lirac can be.

What to drink with a Lirac Blanc? This wine and the mediterranean flavours of Bouillabaisse are a super match! It also pairs beautifully with poulet au citron et lavande (Lemon Lavender Chicken), another iconic recipe from the south of France.

Fresh & Balanced

Emblematically Niagara, this vibrant Chardonnay is made with organic, biodynamic and sustainably-farmed grapes from the Niagara Peninsula. The 2021 Crew Sauvage a blockbuster; 100% Tawse Estate fruit, mainly from the Robyn's Block young vines (2 Cadus puncheons, 4 barrels) which were showing best in the initial tastings with Moray and Jessica. This created the baseline for cuvée which was then blended with 3 beautifully balanced barrels from the Tawse Hillside vineyard and 2 immensely structured barrels from the Robyn's Block Old Vines parcel; the oldest Chard on the property. Et voila, another star is born.

Expect straw gold in the glass with gorgeous orchard fruits, apple and peach on the nose with notes of marine, hazelnut, lemon custard, and blonde caramel essence. This elegant wine offers a lovely texture on the palate, rich and round with biscuits and cream, while boasting a lip-smacking acidity with an herbal tea tannin.

This world class Niagara Chardonnay is ready to pair with just about anything, but we are thinking white fish in beurre blanc, cream based pastas or fresh salads garnished with lots of cheese.

Fresh & Crisp

Located on the hills that rise from the Adriatic Sea and neighbouring the coastal town of Vasto in Abruzzo, the Jasci family has been growing grapes and producing wine for three generations.

This vegan-certified wine made from Pecorino grapes is elegant and delicate, and shows aromas of grapefruit, apricots and nectarines. On the palate is pleasant, fresh and light-bodied. This Pecorino wine has a special saltiness and an aftertaste of bitter almonds.

Wines made from Pecorino pair extremely well with Pecorino cheeses drizzled with a bit of honey as well as vegetables, fish and white meats.

Elegant & Crisp

Château Haut Grelot is located near the Gironde Estuaire, north of the town of Bordeaux. Haut Grelot has been making wine and taking great care of their vineyards since its establishment in 1920!

This Crémant de Bordeaux is crafted from 100 % Sémillon, cultivated at a yield of 60 hl/ha on a 1‑hectare plot with sandy‑loamy and clayey soils, giving it a distinctive terroir. The grapes are manually harvested and immediately cold‑pressed under an inert atmosphere, ensuring delicate handling and preservation of freshness. After 9 months of élevage, it is bottled with sugar liqueur and yeast, and the bottles are turned daily to gently shift the lees. Final disgorgement with liqueur enhances the mousse, culminating in a wine with a pale‑yellow robe and fine bubbles. On the palate, it presents elegant, lovely floral and fruity flavors, marrying freshness, harmony, and complexity, and finishing with a long, graceful aftertaste.

Ideal as an aperitif or with cake and pastries.
