In 1984 Neil Ellis sourced grapes from vineyards not of his own and produced wine in rented cellar space. These grapes were sourced in the Stellenbosch district and meant a lot of nosing around the restrictive quota system prevalent at the time.
Today, the experience and knowledge of the past are applied to modern techniques and technologies for a new generation of winemaking. “Our vision remains to make distinctive, refined wines that are expressive of their terrain and rank amongst South Africa’s finest. The grapes were sourced from a south-west facing trellised vineyard grown
in decomposed granite and Table Mountain sandstone. These small, distinctive sites are enclosed in the valley of Jonkershoek where the south facing slopes are significantly cooler than the surrounding area of Stellenbosch.
Intense dark colour. A pretty subtle, intriguing and appetizing nose with
blue and blackberries and typical cedar aromas from the Jonkershoek
Valley. The palate is nervous and fresh, followed by a well defined tannin
structure. This is a wine built to last and early drinking would benefit with
decanting.

Hourglass sits in the narrowest pinch of the Valley. This constriction creates a crucial thermal dynamic drawing cooler bay air up from the south. The air “bottlenecks” at the narrow channel resulting in a cooling breeze that tempers late afternoon heat.
2019’s steady and temperate growing season allowed for three separate picks of the vineyard, resulting in optimal phenolic development, pristine fruit, and intricate dimensionality in the finished wine. The talented, young winemaker Elena Brooks (of Dandelion Vineyards and Heirloom Vineyards fame) wears steel cap work boots every day of course, but carries a pair of high heels in back of the ute - only for emergencies - like last minute invitations to accept trophies at gala wine show dinners and the like!
The Old Testament vineyard is located in the heart of the Coonawarra. The resulting wine produced suggests ripe mulberry and blueberry aromatics with gentle notes of shaved pencil and menthol on the nose. Soft red berry fruits begin to unfold on the palate, finishing with a spiced-liqueur like quality, carried by velvety tannins and perfectly judged acidity.
Serve with leg of lamb or other rich dishes - try a country steak and shoe string fries.
Coonawarra is defined by its famous red iron-oxide terra rossa soils and is one of the most distinct terroirs in the wine world. Rory Parks is the head winemaker at Moss Brothers, and after 20 years amongst the soil, the vines and the barrels, comes with a wealth of hands-on winemaking experience and a great passion for the art of winemaking. Based in Margaret River, which is embraced by the ocean on three sides resulting maritime influence lends itself to ideal growing conditions.
The Cabernet Sauvignon was machine harvested then destemmed/crushed into a static fermenter where it was fermented using yeast selected to express desirable varietal flavours and aromas. The fermenters were pumped over twice a day. Temperature was held between 24-26°C for a slow extraction of tannins and increased development of fermentation complexity. Maceration was not extended to prevent over extraction of tannin. The wine was pressed and transferred for malolactic fermentation on oak allowing a soft integration of the grape and oak tannins. The wine was blended and bottled after 15 months maturation.
A generous and flavorsome palate with concentrated dark fruits, blackcurrant and plum. Hints of dusty oak and a fine tannin structure lead to a long, savoury finish.
This wine is perfectly paired with Spice roasted lamb leg with beetroot sauce.

There are places where wine is the lifeblood. The Château Deyrem-Valentin in Margaux is such a place. The home of great vintages classed as “Grands crus”, this estate dates back to 1730. Just like his great grandfather, his grandfather and his father, the current owner Jean Sorge carries on the tradition with Sylvie and Christelle, his two daughters. With the terroir, the vines and the storehouse, they combine tradition and innovation to offer the very best quality to lovers of Margaux wine.
Château Deyrem Valentin comes with a delicately fleshy and suave mouthfeel and has an elegant structure with fruity and floral aromas.
One of the most classic food and wine pairings is Margaux with lamb. Of course Margaux pairs equally well with almost any grilled, braised or roasted meat ranging from beef, veal, pork, duck, pigeon, squab and game. The fruit was selective harvested and pumped to the fermenter with many whole berries intact. The cool temperature of the fruit allowed a slow start to fermentation, once inoculated, the ferments were pumped over and plunged twice a day, temperature was held around 28°C. A portion of the wine was left on skins post fermentation to soften the tannins and achieve structure
An elegant palate, flavours of and mint, some savoury dry herb notes and layers of mocha and spice from oak maturation. The structure is medium to full bodied with fine tannins and great length. An elegant style with great varietal and regional character.

Classic blackberry cassis along with cigar box on the nose and palate, with a touch of mulberry and silky tannins. A medium bodied wine with integrated complex flavours.

Fronsac vineyards stretch on hillsides overlooking the confluence of the Isle and the Dordogne rivers. Since 1532, Château du Gazin has stood on the slopes of Canon Fronsac. The Robert family has been making the most of this exceptional terroir for 80 years. And since 2018 the Château du Gazin and its wines have been in organic conversion.
Garnet colour, limpid with ruby reflections. The nose is complex with resinous, toasted notes, then with agitation the fruity aromas take over: black fruits, blackcurrant, blackberries, burlat cherry. The palate is smooth, with melted tannins. Balanced wine, with a long finish, with notes of coffee, blackcurrant, blueberry, cedar.

A perfect Cabernet entry. Alert bright fruit. Direct, full and fine and precise Cabernet softness. Rich mouth filling soft fruit, especially cedar and cassis. Juicy round blackberry sweetness, and red currant tartness tempered with some taut but typical Cabernet tannin.
This is a wine for grilled lamb burgers or steaks done medium-rare.

Matías Riccitelli was born in Cafayete, Salta. He identifies as a traveler and a tireless dreamer. After countless harvests throughout the world, he decided to combine everything he has learned and dedicate himself to exploring the excellent terroirs of Mendoza and the teachings of his mentor and father, Jorge Riccitelli.
The Winery is settled in the heart of Vistalba, in the region of Lujan de Cuyo, Mendoza. Today Riccitelli Wines manages 20 hectares, divided in three different vineyards at the foot of the Andes Mountains. Most of these vineyards were planted at beginning of 20th century.
A wine deeply influenced by the environment provided by the nearby mountain range, opening up with aromas of cassis and sweet and savoury dried herbs, as well as a bit of dried tobacco on the nose. Full-bodied on the palate with lush tannins that bloom with each sip and polished acidity that carries the ripe fruit into the finish.

Located in the Macau en Medoc region not far from the entry to the Margaux appellation, this Chateau dates back to the 18th century and now covers 22.5 hectares. The soils here are classic Garonne gravels with a clay sub-soil which provides a classic mellow character with relatively smooth tannins and an elegant and fine structure. These wines are remarkably consistent and approachable even in their youth.
Next-door neighbour to the Grand Cru Classé, Château Cantemerle, Maucamps is a blend of Cabernet Sauvignon, Merlot, and Petit Verdot. Coming from an older vintage, this a mature wine yet still very approachable. The nose offers savoury aromas of dried herbs and flower petals along with graphite and soft shades of ripe fruit. The acid on the palate is lively and the tannins are seamlessly integrated. This is a great option if you're looking to try an older vintage without having to wait!

Three Elms is an acronym for Emily, Laura and Molly - Three sisters who have curated wines that tells a story about their unity as a family and their upmost gratitude for the generations before them that showed them the way. They come from a rich history in the Frankland River region and thus have countless childhood memories growing up in the vineyard and winery. Encompassing the love and respect they have for the land on which the grapes are grown, Three Elms embraces the profound family bond that symbolizes their desire to create something beautiful.
This Cabernet Sauvignon comes from the Timbertops Range, which showcases wines of purity and complexity, which typify the Frankland River Region. Vibrant and deep crimson with ruby hues, the nose offers fresh blackberry flavours and sweet dried herbs. Dark berry fruit notes continue on the medium bodied palate with savoury dark chocolate mingling with the fine-grained dusty tannic structure. Ready to enjoy now, although with careful cellaring, will gain complexity over the next five to eight years.

Scribe Winery in Sonoma, Calif. produces vibrant, terroir-driven wines.
The winery– founded in 2007 on a property that pioneered pre-prohibition Sonoma Valley winemaking– is managed by fourth-generation California farmers and brothers, Andrew and Adam Mariani.
This Cabernet grows along the eastern slope of Atlas Peak in Napa, on an isolated vineyard composed of gravelly, volcanic soil and surrounded by lush California wilderness. Positioned above the fog line at an elevation of 1600 ft., the east and southeast-facing site sees cool morning sun followed by shade from the bright afternoon heat provided by the ridge line. It has wonderful aromas of dark fruits, leather notes and hints of baking spices. On the palate the wine is rich yet well-structured and soft.
Perfect to pair with grilled meats or vegetables with nutty flavours, such as tahini dressing.

A blend of merlot (33%), cabernet franc (33%) and cabernet sauvignon (33%). Dense, flavoursome wine with cassis, fruitcake, liquorice, chocolate-mocha, spicy oak and dark berry flavours. Richly-textured with a backbone of ripe tannins. A very impressive wine from a very serious producer.
