The name "Vau Ligneau," meaning 'valley of the little brook,' refers to its vineyard's location in a side valley on the left bank of the Serein. This wine is a quintessential expression of a classic Chablis 1er Cru, where the cool morning sun enhances its elegance and highlights the minerality and richness derived from the calcareous and clay subsoil. Named Les Fourneaux as early as 1537—a reference to its excellent sun exposure—this Climat is known for producing subtle and refined wines. Blanchot is located on the east of the Grand Cru appellation, and although the sun exposure is somewhat limited, it remains a paradoxically warm terroir. Its steep slope and sheltered location result in slow ripening conditions. Exceptionally atypical, Blanchot is a real eye-catcher: it reveals itself with a great depth, predominantly floral on the nose and with a mineral, pure and magical personality. On the palate is round and powerful, with hints of undergrowth and white flowers.

Thanks to its multiple exposures to the sun, Grand Cru Valmur develops more specifically fruity and round aromas and is less marked by the calcareous and clay subsoil. In the mouth, this wine displays a robust and powerful character, feeling less steely than its neighbour, Grand Cru Les Clos. Expect soft notes of acacia and orange blossoms with nectarine and yellow pear notes to unfold on the palate with shades of salt-tinged sweet spices lasting long into the well-defined finish.

Raised amidst the vineyards, Alexandre Favier is part of a long line of winemakers in Châteauneuf-du-Pape. His grandfather, Noël Sabon, hails from one of the region’s most renowned winemaking families. Alexandre began his viticultural studies at the age of fifteen in Orange, completing his exams by 2001. Just a year later, at the age of twenty, he assumed full winemaking responsibilities at Domaine Chante Cigale when his father’s health declined. Today, Domaine Chante Cigale stands as one of the most important family estates in Châteauneuf-du-Pape.

Extrait consists of 50% Roussanne and 50% Grenache Blanc. The Roussanne for Extrait comes from a very specific plot and the vines are over 40 years old. For a wine this unctuous and textured, the palate shows remarkable balance and freshness. Aromas of apricot, peach and citrus are complemented by some perfumed florals and well integrated, savoury oak. The finish is incredibly long and fresh.

Blank Canvas is the personal wine range of husband and wife team, Matt Thomson and Sophie Parker-Thomson, MW. With a focus on Marlborough, Syrah from Hawkes Bay and Pinot Noir from Central Otago, the Blank Canvas wines are exciting, small-batch and increasingly recognized as the avant-garde of New Zealand wine. Winemaker and co-founder Rob Cameron has a colourful winemaking background – learning his craft in unique destinations such as Cyprus, Bulgaria and Hungary before moving on to France, Spain and Italy. For him, the Invivo range is all about taking some of the elegance from the old world and putting that style into amazing grapes, all the while offering wines that are fun and a bit unique.

The Hawke's Bay Chardonnay is a barrel-fermented beauty, aged for seven months on lees in French Oak. Aromas of ripe peach, golden apple and citrus zest meet hints of toasted almond, vanilla and a touch of spice. Crisp yet velvety on the palate, it bursts with juicy stone fruits, grassiness, lemon curd and a whisper of pineapple. The oak provides backbone, rounding out to a long, nutty finish.

Established in 2005, Domaine de Bellene is dedicated to crafting expressive wines from old vines, guided by a strong commitment to sustainable, organic farming. Under the stewardship of winemaker and proprietor of the late Nicolas Potel, the domaine has focused on producing wines that faithfully reflect both place and vintage, while safeguarding the land and its traditions for future generations. Today, Domaine de Bellene is widely respected among Burgundy enthusiasts for its thoughtful range of wines spanning both celebrated and lesser-known appellations.

This wine comes from a 40-acre parcel planted in 2004 within Clos Rousseau. Favourable climatic conditions and vineyard topography encourage the development of noble rot in a small portion of the fruit (approximately 2%), lending an exotic aromatic lift. Subtle oak integration adds notes of sweet spice and toasted hazelnut on the nose, while the palate delivers good density and texture, with mid-weight flavours that mirror the aromatics and lead into a gently pithy, mineral-tinged finish.

Proudly family owned, the Borthwick vineyard is an established vineyard situated in Gladstone, the heart of the Wairarapa. Producing quality wine for over a decade, Paddy, an experienced wine maker, has gained a reputation for producing consistently great wines. The twenty seven hectares of vines bordering the Ruamahunga River are growing on stony, free draining, alluvial soils, with a micro climate giving warm daily temperatures, cool nights and low rainfall; perfect conditions for producing distinctive, quality wines.

Domaine Charly Nicolle was created with less than one hectare in 1979 by Robert Nicolle and Josette Laroche, who can both trace their winemaking heritage in Fleys back to the late 19th century. Since the creation of the Domaine, they have increased the size of their vineyards bit by bit, and today the Domaine produces wine from 20 hectares of vines. In 1999, they were joined by their son Charly, who had just graduated from the lycée viticole. Charly is now officially in charge of the Domaine, together with his wife Lucie, but Robert is still out in the vines nearly every day. The largest holdings of the Domaine are in AOC Chablis, located mostly around the family's beloved village of Fleys.

Named after a Catholic institution in Autun that originally owned the entire site before the land was divided up after the French Revolution, Clos Saint Jean is an iconic Chassagne vineyard known primarily for its reds—but it also lends itself beautifully to Chardonnay. Today, about one-third of the estate’s Clos Saint Jean holdings are planted with white grape varieties.

This wine demonstrates a combination of white stone fruits and citrus on the nose. It sits between flinty Chablis and supple White Burgundy. A reference to tropical fruits with some rockmelon lurking in the background on the entry, tight acidity and some French oak stretch out to the back palate, followed by tight acidity and whispery French oak stretching out to the end.  The length and the more linear structure (and the refreshingly lowish alcohol) make this an ideal white wine with luncheon chicken: fricassee, cold, roasted, packed, drunken.
