The clue is in the name—this project is the result of a long-standing friendship between Norm Doole, Mike Farmilo, and Nick Whiteway, who share decades of experience across McLaren Vale, the Adelaide Hills, and beyond. With a clear mission to craft expressive, approachable wines, their combined expertise—from award-winning winemaking to international vintages—forms the foundation of a label rooted in authenticity, regional character, and pure drinkability.

The Colab & Bloom team have long been champions of Italian varietals in Australia’s Southern Fleurieu region, and the 2021 Ross is a vibrant expression of that focus. This lively blend of Montepulciano and Sangiovese offers generous red berry fruit and layers of spice up front. Medium bodied and approachable, it’s balanced by food-friendly tannins and bright acidity that carry notes of cranberry and cherry blossom through a juicy, lifted finish.

A perfect match for bold pasta sauces or try with braised pork chops with balsamic, bitter greens and herbs to make a standout pairing.

Matías Riccitelli, born in the charming village of Cafayate, Salta, Argentina, where wine is deeply woven into the culture, embarked on a journey as a winemaker after training at one of the country’s most renowned wineries. A passionate traveler and dreamer, Matías honed his craft through global harvests, gaining invaluable experience along the way. In 2009, combining his extensive knowledge with the guidance of his father and mentor, Jorge Riccitelli, he founded Riccitelli Wines. Located in Las Compuertas, at 1,100 meters above sea level in Luján de Cuyo, Mendoza, the winery embodies Matías' vision of crafting exceptional wines from Argentina’s high-altitude terroirs.

This Malbec beautifully reflects the character of its origin. Sourced from calcareous soils in a cool-climate site at 1,500 metres above sea level, it hails from the highest and most extreme vineyard within the Los Chacayes GI in the Uco Valley.

Offering an intensely aromatic profile, with layers of black and blue fruits, herbal florals, and savoury notes of bitter chocolate and leather, balanced by sweet spice. The palate is dense and richly textured, supported by vibrant acidity and well-integrated, ripe tannins. Bold fruit flavours unfold alongside hints of tea leaf and lavender, culminating in a refined, mineral-driven finish.

Garage Wine Co was literally started in a garage in 2001, by Etobicoke expat Derek Mossman and his wife Pilar Miranda. Since then, the dynamic duo have chosen to revive old vineyards in marginalized Chilean communities. They work mostly in the regions of Maule and Itata where they make highly coveted wines.

Las Higueras is a historic vineyard planted with 115-year-old Cabernet Franc, which Derek and Pilar have been revitalizing since 2013 in collaboration with their dry-farming vigneron partners from Sauzal and Puico. The 2019, or Lot 112, opens with an intense bouquet of blackberry, maraschino cherry, bell pepper, and herbs, accented by a subtle touch of tobacco. On the palate, its rustic texture and firm tannins are lifted by bright acidity, revealing a juicy core that leads into a long, layered finish with soft, woody nuances. A serious and compelling expression of old-vine Cabernet Franc.

This will go well with grilled steaks and chops seasoned with herbs and spices like rosemary, mint, and black pepper, as well as earthy accompaniments such as mushrooms.

The Moreau family has been settled in the heart of Chablis since 1884. Louis Moreau, the sixth generation, studied oenology and viticulture in California and took over from his father when he returned to France in 1994. Nowadays, the domaine's vineyards extend all over the four levels of the appellation: Petit Chablis, Chablis, Premier Cru and Grand Cru.

Thanks to its multiple exposures to the sun, Grand Cru Valmur develops more specifically fruity and round aromas and is less marked by the calcareous and clay subsoil. In the mouth, this wine displays a robust and powerful character, feeling less steely than its neighbour, Grand Cru Les Clos. Expect soft notes of acacia and orange blossoms with nectarine and yellow pear notes to unfold on the palate with shades of salt-tinged sweet spices lasting long into the well-defined finish. 

This Grand Cru will pair nicely with roast pork with candied chestnuts and spices.

Established back in 1865, the estate continues to be run by the same family who have acted as the faithful custodians of the land for generations. Tending to high altitude vineyards on the north side of the active volcano, the conditions are ideal for indigenous grape varieties to thrive. The wines are distinctive bottlings which encapsulate the essence of Mount Etna and effortlessly reveal the unique characteristics that make the region one to watch.

The Zotorinotto Etna Bianco offers whiffs of creamy vanilla, yellow apple, and peach notes, followed by billowing aromas of honey and ginestra flowers - a local plant that thrives in the open landscapes surrounding Mount Etna. Its crunchy fruits and tangy citrus flavours are carried by mineral-laden acidity and a soft, mellow texture, imparted from time spent aging on the lees. The persistent finish highlights this wine's sophisticated and lasting character.

This will be an excellent compliment to tzatziki fish tacos and other seafood fare.

The Cortonesi family has been a cornerstone of the Montalcino region for decades. Established in the 1970s, their estate spans 138 acres in one of the area's most storied regions, with 19 acres dedicated to producing world-class Brunello. The family began commercially selling their wine in 1985, and today, third-generation winemaker Tommaso Cortonesi continues the tradition. Tommaso combines his long-standing family traditions with modern technologies to craft some of the finest expressions of Tuscan Sangiovese. 

This is a beautifully expressive Brunello from an outstanding vintage, now confidently hitting its stride. The nose is vibrant and layered, with classic aromas of spiced licorice and red cherry, complemented by subtle notes of fresh rosemary, cedar, and dried flowers. On the palate, it offers full weight and a smooth, seamless texture, with fine-grained tannins woven through a warm, elegant core of dried fruit. Rich and juicy, it showcases the signature succulence and length of Montalcino, with the structure and finesse to continue evolving gracefully for years to come.

Pair Brunello with bold, flavourful dishes such as oxtail, a nicely cooked steak, rich stews, or game served with mushroom-based sauces.

This Etna Bianco is made with the indigenous grape Carricante aged in concrete vats. The wine offers pleasant hints of grapefruit, white peach and herbs on the nose. The palate has a lovely texture and freshness complemented by an extraordinary minerality.

Established as early as the 18th century, Château Beau-Site remains an unclassified estate on Bordeaux’s Left Bank, despite its long and respected history. Local lore suggests that its wines were highly regarded during the mid-19th century when the 1855 classification was created. However, the owner at the time failed to submit samples to the brokers, resulting in the château never receiving official classification. Located near the village of St-Corbian, the estate sits on the northernmost gravel mound of the Saint-Estèphe region. Its 40-hectare vineyard slopes gently toward the Chenal de Calon, offering picturesque views over the Gironde River, thus giving the estate’s name - Beau-Site, or “beautiful site.” Primarily planted to Cabernet Sauvignon, with smaller parcels of Merlot, Cabernet Franc, and Petit Verdot, the property has undergone significant revitalization under the Casteja family, who have owned it since 1955.

Beau-Site's wine is full of power and temperament, a typical Saint-Estèphe with enough ripe tannins to allow stocking this wine for some years. The 2016 opens with a seductive nose of ripe black fruits, layered with toasted spice, hints of tar, and a touch of dark chocolate. On the palate, the fruit is vibrant and well-balanced, carried by graceful tannins and a fine thread of acidity. Notes of black currant and a subtle graphite minerality carry through to a long, expressive finish.

Pairs beautifully with red and white meats, including roasts, mutton, poultry and game

Hardy's constructed the Stonehaven Winery in 1998 with the purpose of showcasing the distinct qualities of the Limestone Coast region in Southern Australia. Following Hardy's acquisition by Constellation and subsequent brand expansion, the winery fell into dormancy after being sold. In early 2021, C.W. Wines acquired both the Stonehaven winery and brand, subsequently reintroducing the Stonehaven label to the market. Now sporting a revitalized appearance and market strategy, Stonehaven aims to appeal to contemporary wine enthusiasts, offering a wine selection suitable for any occasion.

The Limestone Coast enjoys plentiful access to water and cool evening temperatures, which remain low even as daytime temperatures rise. This diurnal shift is optimal for the gradual maturation of grapes, enhancing flavour development while maintaining acidity—a crucial factor in grape cultivation within such a warm climate.

A bold and fruit-forward wine characterized by plentiful black fruit flavours and a full, rounded palate. Its lingering notes reveal dark berry fruits, violet petals and spices with subtle oak, adding toasted nuances and a hint of brambly sweetness.
