Vassaltis is the latest addition to Santorini’s long, storied winemaking history. Owner Yannis Valambous’ passion for wine drew him back to the island of Santorini, where he spent many a happy family holiday as a child. In the wake of the 2010 Greek financial crisis, a plan took root in his mind - a plan that was part dream, part folly. Yannis sought to breathe new life into the vineyards he inherited from his father. His focus was to transform the family vineyards into a thoroughly modern, state-of-the-art boutique winery and craft exquisite wines which showcase the quality of Santorini’s grapes. 

Made from 100% Assyrtiko, this wine ferments in steel tanks and is then aged in 3rd use 500lt French oak barrels on it lees. It ages for a further seven months in stainless steel tanks and eight months in the bottle before its release. This wine defeats criticism that Assyrtiko shouldn’t be aged in oak to preserve its volcanic characteristics by giving a perfectly balanced wine with great complexity and great ageing potential. Expect this wine to offer tons of the classic citrus zest this grape is known for, tempered by textural richness and notes of sliced almonds. This is a wine that will continue to evolve over time if you can be patient. 

This will be a fabulous accompaniment to cheeses like Gruyère and Provolone or smoked fish.

Vassaltis was the dream and now life's work of Yannis Valambous who resurrected his father's vineyards and turned them into some of Santorini's finest tracts. As of 2012 the project has taken root, launched forward and come to a most profound and exciting place. The consulting oenologists are Elias Roussakis and Yannis Papaeconomou who along with Valambous drill down into the island's volcanics to create haute assyrtiko with the greatest sense of place. The barrel aged style is of course Burgundian but it is impossible to smother Santorini and fully assimilate assyrtiko. Richness abounds, intensity magnifies and here assyrtiko takes on a whole next level of purpose. The methodology does allow for movement not wholly restricted to the salty and the mineral but the wine shows no lack of those elements. In the end this is about as big and rich as the grape will get. Drink 2023-2028. Tasted January 2023
