The Baud estate dates back to 1742, today the 9th generation manages the winery. Siblings Clementine and Bastien, both under 30, are making some of the best value wines in the area. Jura is that narrow valley in the remote hills between Burgundy and Switzerland, which millions of years ago was covered by an Ocean and today still bares many of the fossils from that time. If you kick a stone in a Jura vineyard, it will probably be a fossil.

Seven generations of savoir-faire are behind this Crémant du Jura as seductive as it is thirst-quenching. The Crémant « Brut Sauvage » is Baud's top sparking wine. Its profile is marked by ripe apple, marzipan, and toast, thanks to a blend of Chardonnay (70%) and Pinot Noir (30%) aged at least 24 months on lees. True to its reputation, it will charm your palate with its delicate and elegant bubbles, leaving behind chalky and slightly saline notes.

This sparkling is perfect to enjoy on its own; or to pair with fried tempura or chicken.

A to Z Wineworks was started in 2002 by Oregon wine industry veterans: Deb Hatcher (Eyrie), Bill Hatcher (Domaine Drouhin Oregon), Sam Tannahill (Archery Summit) and Cheryl Francis (Chehalem). The two couples worked in the Hatcher's kitchen to build the original blend honoured by Food & Wine magazine as the Best American Pinot Noir under $20. Recognition for A to Z wines as offering dependable quality for great value continues today making A to Z the top-selling Oregon wine brand.

The lovely, pale pink A to Z Bubbles invite with juicy, ripe fruit aromas. Notes of strawberry, raspberry, watermelon, cherry, white peach, nectarine and apricot are joined by white flowers and a hint of creaminess. The bubbles dance on the tongue with mouth-watering acidity that leaves one wanting more.

Primarily Pinot Noir with a bit of Chardonnay (10%), the fruit was left in contact with the skins to get the perfect color, a traditional, natural technique preferable to blending back red wine. Several different aromatic and Rosé yeasts were used during fermentation in 100% stainless steel for freshness.

Pair with good times and sunshine! These bubbles were made to be fun and delicious regardless of glassware or setting.

Fresne-Ducret is rich in family history and has been rooted in the premier cru village of Villedommange since the mid 1800s. Originally growing grapes for the big champagne houses, it wasn’t until the end of the second world war that the family decided to make their own wine. The tradition carries on today with Pierre Fresne and his wife Daniella (an Oakville ex-pat). Their philosophy is to produce wines that best exemplify the terroir of Villedommange, and they do this with sustainability in mind.

An adventure, like the one undertaken by those who crossed the ocean to discover the New World. Made from grapes from a single year, it is a unique and free interpretation of the Fresne Ducret style, balancing freshness and aromatic complexity. Crystalline with a pale golden colour. Good effervescence and a stable “cordon” after serving. The nose is fresh, dominated by floral notes with hints of citrus. In the mouth, a savoury dimension with a balanced astringency, with aromas of orange zest and honey. The wine is lively, dynamic, and moreish, a vintage still in its youth.

Serve with goat cheese, small game, or rhubarb millefeuille.

Winemaker and proprietor Robert was born in Canada and grew up on a farm, though his family is originally from Hungary. After some years working as an architect, he found his passion in winemaking, and relocated to his grandparent's home country to start a winery.

The estate is located just a few kilometers north of Lake Balaton, near Mount Saint George. This is an ancient and little known volcanic butte in Europe’s Pannon basin. Mount Saint George is cloaked with vineyards, both old vines and more recent plantings, many of which are being cultivated organically. Robert Gilvesy's goal in the vineyard and with wine culture is to authentically preserve and express the unique character of the mountain through his wines.

This sparkling is made from Furmint grapes sourced from the organic Váradi vineyard. Aromas of white-fleshed and citrus fruit with hints of toast. Delicate on the palate with a creamy texture, fine bubbles and yeasty notes complementing the aromas. A great example on how Furmint is well-suited to make sparkling wine, especially from volcanic soil.

Furmint complements herb-crusted poultry or fish. You can also try it with delicate Asian dishes like sushi or pan-fried dumplings.

Nicolo Champagne is available at The Champagne Company and Nicolo Champagne is owned by David and Agnes Nicolo. David Nicolo, a third generation wine grower developed an extensive knowledge of the wine business over many years. Recently acquiring Camille Paradis et Fils becoming, Nicolo & Paradis, they have produced an excellent collection of Champagne under the label ‘Champagne Nicolo’ which is Decanter Award-winning and competes easily with some of the larger champagne houses.

The House of David & Agnes Nicolo was built in 1802 by the famous General Vouillemont of General Napoleon's Army and their vineyard is in Arsonval in the Aube Valley of Champagne, spanning a strong 17 hectares across the Colombé-le-sec. The vineyards are predominantly planted with Pinot Noir, together with some Chardonnay and Pinot Meunier and they promote working in harmony with nature at the heart of the community paying particular attention to the use of sustainable methods.

Vines enjoy all the benefts of a southern exposure from the ancient soils of the Cotes des Bar Terroir with grapes that have been hand harvested. Stored for at least three years to develop into the notable producer Nicolo & Paradis pedigree who have an have an approach to wine making that respects nature and sustainable methods.

Champagne Nicolo Blanc de Blanc is a bright, slightly golden colour with good effervescence. An elegant, upfront complex nose with white flowers, yellow fruit aromas. This Chardonnay Champagne is delicious as an aperitif but also recommended with shellfish and many other light fish dishes.
