The Moreau family has been settled in the heart of Chablis since 1884. Louis Moreau, the sixth generation, studied oenology and viticulture in California and took over from his father when he returned to France in 1994. Nowadays, the domaine's vineyards extend all over the four levels of the appellation: Petit Chablis, Chablis, Premier Cru and Grand Cru.

What makes Chablis so exceptional? Evidently, the composition of the soils. The limestone soils of the Chablis appellation were formed in the upper Jurassic era, or Kimmeridgian; and contain lots of fossilized oyster shells that add a great complexity, volume and structure to the wine. On the palate, this Chablis is especially floral, and displays fresh aromas of apple and pear. On the palate, it has a vibrant mineral expression, balanced by a textured roundness and finesse.

Perfect to accompany with seafood, such as oysters or lobster risotto.

Domaine Charly Nicolle was created with less than one hectare in 1979 by Robert Nicolle and Josette Laroche, who can both trace their winemaking heritage in Fleys back to the late 19th century. Since the creation of the Domaine, they have increased the size of their vineyards bit by bit, and today the Domaine produces wine from 20 hectares of vines. In 1999, they were joined by their son Charly, who had just graduated from the lycée viticole. Charly is now officially in charge of the Domaine, together with his wife Lucie, but Robert is still out in the vines nearly every day. The largest holdings of the Domaine are in AOC Chablis, located mostly around the family's beloved village of Fleys.

Named for its warm microclimate, Les Fourneaux (meaning  'The Furnace') is known for creating wines that offer ripe fruit notes alongside the classic minerality that Chablis is famous for. This rendition reveals a stirring bouquet of lush stone fruits, graceful florals, slivered almonds with a drop of honey.  Medium bodied on the palate, the developed fruit character forged by the site's terroir is effortlessly tempered by zesty acidity and hallmark flintiness that extends itself into the wine's very fine finish.

Treat yourself to a wedge of creamy brie cheese drizzled with honey-covered walnuts alongside a glass of this stunning Premier Cru wine.

Nowadays, the domaine's vineyards extend all over the four levels of the appellation: Petit Chablis, Chablis, Premier Cru and Grand Cru.

This Premier Cru site generates very fruity wines with notes of crunchy orchard fruits such as apple and pears with plenty of citrus influence. The palate is lush and complex with layered fruit aromas underscored by chalky, saline-tinged tones. There is a charming vivacity that is characteristic of the stony soil of 1er Cru Vaillons, which makes its way into each bottling.

Serve on pan-fried foie gras or a Bresse fattened chicken with morels.

Domaine de Bellene is the creation of Nicolas Potel – the son of the legendary Gérard Potel of Domaine Pousse d’Or. Potel's name has become synonymous with Burgundian wine and he is known for constantly challenging the borders of traditional winemaking in the region.

The cuvée of Nuits-Saint-Georges-Village, which has been part of Domaine de Bellene since 2009, comes from four different climats. A slightly fresher nose offers up decidedly floral-infused aromas of plum, cherries, and licorice with a mildly spicy touch. The palate offers medium weight with refined flavours all wrapped in serious if slightly rustic finale.

Pair with medium rare pan seared peppered duck breast with red wine pan sauce.
