Our favourite bubbly wine is back for its 10th vintage and as always, made in partnership with Lighthall Vineyards in Prince Edward County. This is a small batch “Brut Blanc” Cuvée, made using the Charmat method bottled as VQA Ontario.

We had an instant crush on this new vintage: the beautiful bubbles are so nicely integrated and complement the wild floral and orchard fruit aromas, all backed by the bracing acidity of the Vidal grape when grown in our cool climate. The blend als has Riesling (20%) and Pinot Gris (20%). Dangerously delicious in the glass, this wine is built for both celebration and gastronomy.

The Ward 5 Brut Blanc’s very well balanced acidity makes it perfect to pair with oily and fatty foods, such as cheese boards, salmon, roasted chicken or even fish and chips!

The Baud estate dates back to 1742, today the 9th generation manages the winery. Siblings Clementine and Bastien, both under 30, are making some of the best value wines in the area. Jura is that narrow valley in the remote hills between Burgundy and Switzerland, which millions of years ago was covered by an Ocean and today still bares many of the fossils from that time. If you kick a stone in a Jura vineyard, it will probably be a fossil.

Made from 100% Pinot Noir, this delicate sparkling wine was made using méthode champenoise and was aged 12 months on the lees. Light pink in colour with persistent bubbles, in the glass it expresses notes of strawberry wafers, red currants, and blood orange. On the palate, it has fine bubbles and freshness.

Enjoy it as an aperitif or have it with pastries and desserts.

A rising star in the Etna region, Tornatore is becoming one of the region's biggest and most respected wineries. Their vineyards are located at an altitude of 1,000 meters above sea level on the north side of this active volcano.

This sparkling wine is made form Nerello Mascalese grapes, with the Charmat method.

Fine and elegant on the nose with delicate and continuous bubbles. Savoury, dry and fragrant on the palate with a surprisingly drinkable finish.

Elegant & Crisp

Château Haut Grelot is located near the Gironde Estuaire, north of the town of Bordeaux. Haut Grelot has been making wine and taking great care of their vineyards since its establishment in 1920!

This Crémant de Bordeaux is crafted from 100 % Sémillon, cultivated at a yield of 60 hl/ha on a 1‑hectare plot with sandy‑loamy and clayey soils, giving it a distinctive terroir. The grapes are manually harvested and immediately cold‑pressed under an inert atmosphere, ensuring delicate handling and preservation of freshness. After 9 months of élevage, it is bottled with sugar liqueur and yeast, and the bottles are turned daily to gently shift the lees. Final disgorgement with liqueur enhances the mousse, culminating in a wine with a pale‑yellow robe and fine bubbles. On the palate, it presents elegant, lovely floral and fruity flavors, marrying freshness, harmony, and complexity, and finishing with a long, graceful aftertaste.

Ideal as an aperitif or with cake and pastries.

Led by wine and cheesemaker Glenn Symons, Lighthall Vineyards is proud to make products that reflect the unique qualities of Prince Edward County. The winery specializes in low-intervention winemaking using grapes grown from their 63 acres of limestone-rich vineyards. They are known for high-quality chardonnay, pinot noir, and exceptional sparkling wines.

A delicious expression of County sparkling wine. Made with 100% vidal grapes, the bubbles are created using the Charmat method to preserve the wine’s bright, youthful fruit. Progression features smooth, persistent bubbles and fresh, vibrant acidity. This sparkling displays aromatics of white grapefruit and green apple peel with delicate floral notes which are repeated on the palette.

Served well chilled, Progression is perfect as an aperitif but also plays nicely as the main event.
