2 bottles x Domaine de Biéville Chablis 2020 (Burgundy, France)
White | Chardonnay

Domaine de Biéville is located in the village of Viviers (8km away from Chablis), and was founded in 1970 by Jean-Jacques Moreau. The domaine boasts 45 hectares of vineyards, all in one piece, something that is quite unique in Burgundy. Jean-Jacques chose this specific location to plant such a big vineyard because of its extraordinary sun exposure South/South East, like some Premiers Crus and its altitude benefiting from a mild climat.

Golden in colour with tints of green. It is very fruity with hints of lemon and grapefruit, developing into softer fruits like apricot and pear. Quite round and ripe on the palate, with hints of pear and apple alongside the supple creaminess and mineral freshness you expect from this famous appellation.

Pairing suggestion: If ever a wine was designed to suit a roast chicken, this is surely it. A great friend of any poultry dish.

2 bottles x Château de La Chaize Pouilly-Fuissé 2020 (Burgundy, France)
White | Chardonnay

Pouilly-Fuissé lies in southern Burgundy’s Maconnais region and is produced only from Chardonnay grapes. Vineyards are planted on hillsides containing limestone-rich clay soils with a granitic subsoil. The appellation was established in 1936 and covers roughly 800 ha at altitudes around 200 - 300m a.s.l. Wines tend to be full-bodied, ripe and elegant.

For this wine, the grapes were hand harvested from a selection of different vineyard sites within Pouilly-Fuissé from ~50-year-old vines. Traditional fermentation takes place at a low temperature (62.6° F), and malolactic fermentation is blocked. 50% of the wine is aged in stainless steel, 50% in foudres.

Pairing suggestion: Notes of citrus, iodine and flowers on the nose, while on the palate the wine is balances bright acidity and minerality with an ample body and yellow fruits and spice flavours.

2 bottles x Maison Roche de Bellene Bourgogne Blanc 'Cuvée Réserve' Chardonnay 2018 (Burgundy, France)
White | Chardonnay

This rich wine offers ripe yellow fruits and touches of vanilla. Along with its warm feeling and light acidity, it has a perfumed character that makes it exciting as well as drinkable. A seriously good vintage here in 2018 as the region escaped the frosts which have plagued recent years. They have a good crop of rich, aromatic whites across the region as a result.

Pairing suggestion: A great wine to pair with seafood, roast chicken, soft, creamy cheeses or grilled fish.

2 bottles x Jeanne Marie Chardonnay California 2022 (California, USA)
White | Chardonnay

The Jeanne Marie label was created by David Gordon, one of New York’s first recognized sommeliers, and the person responsible for the Wine Spectator Grand Award-winning wine list at Manhattan’s famed Tribeca Grill restaurant. The restaurant opened in 1990 by restaurateur Drew Nieporent and actor Robert DeNiro. Gordon, who is self-taught, began learning about wine in the 1980s just as Kevin Zraly was beginning to educate America on the world of wine. At the time, there were very few non-French somms working in the city and the British-born Court of Master Sommeliers was in its infancy.

Named for his wife, the “Jeanne Marie” line sources grapes from premier winegrowing regions in northern and central California. It fermented in stainless steel (80%) and in barrel (20%) before aging for 10 months in oak. Medium-bodied and balanced, it offers restrained vanilla, pear, and apple aromas and a palate that is both fruity and buttery.

2 bottles x Domaine Baud 'Cuvée Flor' Chardonnay Côtes du Jura AOC 2020 (Jura, France)
White | Chardonnay
94 points by Wine Anorak

The Baud estate dates back to 1742. Today, ninth generation vignerons Clementine and Bastien Baud are making some of the best-value wines in Jura. This unique wine region is a narrow valley in the remote hills between Burgundy and Switzerland that was once covered by an ocean millions of years ago. If you kick a stone in a Jura vineyard, it will probably be a fossil!

Controlled oxidation at its finest. A beautiful juxtaposition of vibrant fruits aromas and nutty oxidative flavours. The Domaine Baud 'Cuvée Flor' presents an intense range of flavours, boasting concentrated honeysuckle, ripe apricot, candied meyer lemon, sourdough, honeycomb, and freshly grounded cloves. The wine attacks the palate with mouthwatering acidity, followed by citrus flesh, bruised golden delicious and burned honey, intensely mineral, with a nutty and umami finish.

Pairing suggestion: Pair this wine with comté cheese, cream-based baked fish, seafood, raclette, and poultry.

2 bottles x Domaine Louis Moreau Petit Chablis AOC 2021 (Burgundy, France)
White | Chardonnay

The terroirs of the Petit Chablis appellation are located on the higher slopes or the beginnings of the plateau. They are made up of hard limestone and sometimes silty soils, with an elevation between 230 and 280 meters above sea level. This 100% Chardonnay is fresh, focused and highly aromatic. The nose is extremely fruity, with notes of apple and citrus. On the palate, this Petit Chablis is fresh, vibrant, round and mineral. Perfect to drink on its own.

Pairing suggestion: Classically paired with seafood and salads garnished with citrus.

About the Winery

Domaine Baud Père et Fils

The history of Domaine Baud dates back to 1742, and it wasn't until 1950 when René Baud, the 7th generation, rebuilt the vineyard which had suffered from the phylloxera crisis and two World Wars.

Starting with only 4 hectares, the vineyard progressively expanded to 20 hectares with the help of successive generations. Now, managed by siblings Clémentine and Bastien, the 9th generation, the estate continues to flourish and grow, with a strong commitment to sustainable viticulture and preserving the traditions and style that makes the wines of the Jura so unique and incredible.

The estate achieved the Terra Vitis certification in 2014 for its eco-friendly work and environmental preservation.

Domaine Louis Moreau

Winemaker Louis Moreau is the master of the Chablis terroir, where he bottles 100% Chardonnay wines from all four levels of appellation: Petit Chablis, Chablis, Chablis Premier Crus and Chablis Grands Cru.

The Domaine owns parcels in five of the seven Grands Cru climats, and works with many plots throughout the region in a sustainable manner. The most prestigious of its wines is the monopole Chablis Grand Cru 'Clos des Hospices' dans Les Clos AOC 2016, acquired by the Moreau family in 1904.

Louis Moreau, who has been leading the domaine since 1994, produces wines with a unique style. Louis Moreau studied oenology-viticulture at Fresno State University and worked at different Californian wineries before he took over the Domaine's operations in 1994, representing the family's sixth generation of vignerons.
