1 bottle x  Matthieu Barret Ours Brut Pétillant Rosé Extra Brut 2019 (Rhone, France)
Sparkling | Grenache, Gamay

Ours Brut is Matthieu Barret's beautiful sparkling wine made from organic and biodynamic Grenache and Gamay. Made with the méthode traditionnel, the Grenache was grown in the village of Roussas, in the Drôme; while the Gamay came from Eclassan, in the highlands of Ardéche.

With a beautiful and intense salmon red colour with orange hues in the glass, this ancestral has a fine and mesmerizing perlage. Tart, nutty and intensely spicy. On the nose bitter oranges, grapefruit and blood oranges are loudly represented. Pomegranate and sour cherry are hardly inferior. Aromas of walnuts, hazelnuts and pecans give it a distinct note; and hints of orange blossom and orange zest give this ancestral softness and freshness. Ripe apples, caramelised quince and bread dough round it off.

When Michel Muré settled in Rouffach and planted his vineyard in the 17th century, he surely had little conception of the beautiful adventure that he was setting in motion for his descendants. Muré's Sylvaner is a lovely wine.  On the nose, it delivers delicate aromas and flavours of quince, green apple and mineral. On the palate, it finishes long and clean with a soft refined perfume. 

Pairing suggestion: lovely as an aperitif; a must with shellfish and asparagus dishes.

White | Pinot Bianco

The village of Bolzano is located in the middle of a valley basin surrounded by hilly vineyards that grow from 200 meters above sea level up to 1000. This elegant wine comes from selected vineyards around Bolzano and really delivers with fresh, floral aromas and a nice acidity. Expect golden delicious apples, pear; and a light scent of peaches and pineapples on the nose and palate.

Pairing suggestion: A wine like Pinot Blanc is best suited to foods with more subtle flavouring. It will match up well with soft cheeses, salads with cream dressings and flaky fish.

Located on the hills that rise from the Adriatic Sea and neighbouring the coastal town of Vasto in Abruzzo, the Jasci family has been growing grapes and producing wine for three generations.

This vegan-certified wine made from Pecorino grapes is elegant and delicate, and shows aromas of grapefruit, apricots and nectarines. On the palate is pleasant, fresh and light-bodied. This Pecorino wine has a special saltiness and an aftertaste of bitter almonds.

Pairing suggestion: Wines made from Pecorino pair extremely well with Pecorino cheeses drizzled with a bit of honey as well as vegetables, fish and white meats.

Brilliant straw colour with youthful yet intense aromas of white peach, stone fruit, green apple and citrus. Bright acidity and freshness on the palate with a round mouthfeel but it stays surprisingly refreshing. Distinctly Oregonian; a clean, fresh style of Pinot Gris.

Pairing suggestion: This Pinot Gris is zesty and fresh, and pairs amazingly with sushi, ceviche and even richer meals like fish and chips! It is also beautiful with white meats, such as chicken and turkey.

This 100% Prieto Picudo rosé is intense and fresh on the nose.  Rich and hypnotizing aromas of raspberry, strawberry, herbs, citrus and red rose petals jump out of the glass.  These flavours follow through on the palate, which is both powerful and flavourful, while maintaining great freshness.

Pairing suggestion: Enjoy this one with a homemade paella or pizza.

Red | Garnacha, Tempranillo, Graciano

Deep red with a bright rim. Spicy cherry and black raspberry on the nose, with brisk mineral and floral overtones. Juicy and focused, offering sweet raspberry and blackberry flavours and snappy acidity. Impresses with precision rather than power, and finishes with juicy berry flavours and good persistence.

Pairing suggestion: Enjoy this wine with grilled meats, roasted turkey and cured cheeses.

A classic blend of Grenache and Syrah that shows an uncanny freshness through salinity and minerality. It's loaded with strawberry, cherry and red plum jam, black pepper and liquorice. On the palate, it has firm tannins and an excellent length.

Pairing suggestion: Elegant and balanced, this cuvée is ready to drink, and it has an ageing potential of 4 to 6 years.

This red is called 'Neh! after a popular Piedmontese slang used to finish a sentence, similar to 'eh. It is a blend of Dolcetto, Barbera and Nebbiolo, the local red grapes in Piedmont. This wine has deep fruity aromas with red summer fruits, like black cherry, strawberries and raspberries. The colour is dark ruby and the wine shows good structure, acidity and medium body with a distinct earthiness.

When it opens up, the intensity of the black fruits, the elusive minerality, the elegance and great balance become dramatically evident. Julien Montagne doesn't hide his wine behind masks; he employs no tricks. This is a wine made in the vineyards — truly authentic.

Pairing suggestion: This wine is great with BBQ meats, lamb, beef, you name it.

This wine, Lèonus, is a humble but mighty Toscana IGT made from grapes that are in fact grapes cultivated to be Brunello, from vineyards in Montalcino. It is one of the best value wines from the area. ​This Rosso Toscano is juicy and fresh. Full of red cherries and dark berries on the nose, with a delicate astringency on the palate. It has such a great balance and it drinks so well that it's the perfect everyday wine.

Pairing suggestion: This wine pairs brilliantly with dishes prepared with tomato sauce and herbs, such as lasagna or pizza. It's also great with antipasti (olives, cured meats, pecorino cheese), and simply roasted meats or chicken.

It has a brilliant medium purple colour in the glass. On the nose, it's all about fresh ripe red & black fruit: cherry, strawberry, wild raspberry; with hints of intense spice, it also has a granite minerality. On the palate it is light-bodied, with a vibrant acid and grippy though delicate tannins. It intermingles with surprisingly powerful fruit & spice; punching above its weight in flavour. It is very balanced with low alcohol.

Pairing suggestion: This light red pairs with all manner of dishes: from barbecue meats to grilled salmon and veggies, to spicy dishes.

About the Winery

Azienda Agricola Jasci

Located on the hills that rise 250 meters above sea level from the Adriatic Sea just above the seaside resort town of Vasto in Abruzzo, here the Jasci family has been growing grapes and producing wine for three generations. Starting In the early 1960s, Pasquale and Maria turned the focus of their farm to producing estate wines.


In 1980, their son Giuseppe decided to convert the farm to organic, becoming one of the first ten wineries in all of Italy to be certified. Today led by grandson Donatello Jasci and his wife Piera, the family is the second largest single grower in all of the region. Donatello’s approach in the cellar is consistent with his farming: clean and simple. The wines see little or no oak and have a purity of flavor that is rare at the price. In addition to his duties at the winery, Donatello Jasci has served as President of the local Organic Growers’ Consortium.

Bodegas Exopto

Exopto is Latin for “to long for” or “to desire greatly” and it is the dream of Frenchman Tom Puyaubert and his family to endeavor to craft and assemble wines where the whole adds up to more than the sum of their parts.  Tom relocated from France to Rioja in 2000 after falling in love with the region and working for the French cooperage Saury as its Spain representative.

When Tom began Exopto, he wanted to do a project that produced wines within this historical context of Rioja - combining both worlds in a unique way.  His idea is to remain true to the blending of the principle grape varieties and to do so from the best terroirs/villages for those varieties crossing sub-regions of Rioja.   Each wine though, has a majority of a different principle grape – showcasing that variety specifically within the context of a blend.  The viticulture and winemaking model is that of the “vigneron” days – small plots of vines in the extremes, wild yeast fermentation in concrete or old oak vats and then aging in a way to showcase the fruit, minerality and terroir not the wood or aged flavours that people often associate with Rioja.

Bodegas y Viñedos Pardevalles

Pardevalles is recognized for being one of the driving forces behind the D.O Tierra de León, betting on the development of the indigenous grape varieties Prieto Picudo and Albarín Blanco. In 1949 Rafael Alonso founded Pardevalles continuing with the family tradition of growing grapes and making wine. The winemaking tradition in León goes back more than 400 years, famous for its centuries-old caves where wine was originally made.

The vineyards of Pardevalles are located between 750 and 820 metres above sea level, in an area with a Continental climate. They grow in poor, rocky alluvial soils which helps maintain the freshness in the wines. The philosophy of the Estate is grounded in making wines which express the character and identity of their origin, with a deep respect for the earth and the indigenous varieties of grape, combining tradition, innovation, and hard work.

Clos del Rey

In the foothills of the Pyrénées Mountains, not far from the Mediterranean sea, Clos del Rey is situated in the centre of almost 900 acres in the tiny village of Maury. The estate has been owned and farmed by the Montagne family since 2001. The vineyard itself is nestled among a protected area of garrigues (rosemary and thyme). The vines of up to 120 years old are allowed to grow natural and untrained, in the old-fashioned way, known as the goblet or bush style. However, it is what lies beneath the vineyard that lends much of the character and complexity found in their wines. The winery resides on an abandoned iron mine imparting red and orange hues to the soils of Clos del Rey, this Iron also adds a soft minerality and silky mouthfeel to the wines. Julien Montagne makes complex wines that truly represent his vineyards and his Catalan roots--you can almost smell the sun in the glass.

Domaine Autrand

Christine Aubert and her son Aurélien, wine-makers in Vinsobres, at the heart of the Drôme Provençale, welcome you to their family estate. As a 80Ha estate, the Autrand Wine Cellar produces AOC Vinsobres (Côtes du Rhône vintage since 2006), Côtes du Rhône Villages AOC and Côtes du Rhône AOC in each color. Vinsobres, another little known Southern Rhône commune was awarded 'Cru' status in 2006. It’s relative anonymity outside France ensures exceptional value.

Domaine du Coulet - Matthieu Barret

Matthieu Barret was born in Aix-en-Provence in 1975 and studied viticulture in Beaune.

He is the 7th generation vigneron and joined his grandfather in Cornas in 1997. Previously, his family had only been farming and selling grapes. He practices biodynamic viticulture, obtaining very low yields (23 hl/ha) and extraordinary quality. He describes his wines as being 100% grape, with a very low sulphite addition. His wines are extremely clean, and, true to the Cornas character. Domaine du Coulet was founded by Matthieu Barret’s grandfather after WWII, and over the years has supplied grapes to some of the best known producers in the Northern Rhône, including Chapoutier and Delas. While his father eschewed the agrarian lifestyle, opting instead for a career in international business, Matthieu knew early on that he wanted to be a vigneron. In 1998 at the age of only 23, he took over the family’s 25 acres of well-situated vines on the terraced hillsides of Cornas.

From the beginning, Matthieu has employed natural, organic practices and by 2002 (his second year of production) the domaine received its biodynamic certification. With each vintage, Matthieu has gained a better understanding of his vine parcels and through thoughtful experimentation, he now turns out a remarkable selection of Cornas wines that express the unique nuances of each micro-terroir. No new oak, no racking, minimal use of sulfur and no fining or filtration. Pure, sexy Syrah.

Domaine Muré

The Muré family has been winegrowers in the region of Rouffach since 1650. In 1935, Alfred Muré, René’s grandfather, bought 32 acres of family-monopole vineyard name Clos St. Landelin, an area that has been described as the best of Alsace Grand Cru since the 7th Century.

Today, René Muré, the 11th generation of the family, along with his children, Véronique and Thomas, are responsible for running their exceptional Grand Cru vineyard and neighbouring terroirs using biodynamic methods. Until this day, they persist in hand-picking every single grape, and focus on crafting wines that preserve the family’s credo. The resulting wines are some of Alsace's finest – powerful, elegant, and age-worthy.

Pearce Predhomme

Pearce Predhomme is a collaboration of like-minded individuals from around the globe. Founded with a mission to build and import wines from our favourite appellations while offering an unequaled value/quality ratio for the sommeliers & wine buyers in Ontario. This is a project between Toronto Sommelier and entrepreneur Will Predhomme and Ontario wine importer Nicholas Pearce they have partnered with Radford Dale in South Africa and NorthWest Wine Co. in Oregon to create these special cuvées.
