Floral & Fruity

A collaboration between Nicholas Pearce and Will Predhomme to create wines from their favourite regions. This Cinsault/Syrah is made from bush vines planted in Koffieklip soils in the Southwestern of Stellenbosch, South Africa.

It has a brilliant medium purple colour in the glass. On the nose, it's all about fresh ripe red & black fruit: cherry, strawberry, wild raspberry; with hints of intense spice, it also has a granite minerality. On the palate it is light-bodied, with a vibrant acid and grippy though delicate tannins. It intermingles with surprisingly powerful fruit & spice; punching above its weight in flavour. It is very balanced with low alcohol.

This light red pairs with all manner of dishes: from barbecue meats to grilled salmon and veggies, to spicy dishes.

Pearce Family Wines

In the early 2000's Nicholas Pearce was exposed to the garagiste movement in Bordeaux and was particularly inspired by négociants like Jean Luc Thunevin (Saint Emilion), James Sichel (Margaux) and Nicolas Potel (Beaune) from Burgundy.

After returning home to Ontario and starting his own wine company, he has had a hand in making 10+ wines in two hemispheres, 3 countries and 5 different appellations since the 2013 vintage.

Pearce Predhomme is a collaboration of like-minded individuals from around the globe. Founded with a mission to build and import wines from our favourite appellations while offering an unequaled value/quality ratio for the sommeliers & wine buyers in Ontario. This is a project between Toronto Sommelier and entrepreneur Will Predhomme and Ontario wine importer Nicholas Pearce they have partnered with Radford Dale in South Africa and NorthWest Wine Co in Oregon to create these special cuvées.

This old vine, wild fermented blend of syrah and cinsault was made at Stellenbosch's Radford Dale for Toronto-based négociants Nicolas Pearce and Will Predhomme. It has very generous syrah-based pepper, caper and plummy fruit with classic Cape overlay of tar and iron oxide/rust minerality. It is medium weight, firm yet juicy and fresh on the palate, thanks to the cinsault. Love this ambiance. And the flavours stay true and hit excellent length. Tasted August 2020.

Just as it was in 2016 so too did 2017 procure an early harvest with cool nights and diurnal temperature fluctuations for linear and zippy fruit quality. These were the comments made by winemaker Jacques de Klerk back in September 2018 with respect to blending Nicholas Pearce and Will Predhomme's chenin blanc. They apply to syrah and cinsault because the wild-eyed energy and near feral activity of this wine makes us think about red wine in this manner. It's as if the whole bunches are still percolating and remain unresolved. The freshness and beauteous volatility persist with abandon. Chill this Koffieklip soil bred blend and let your inhibitions go. Drink 2020-2023. Tasted August 2020.
