Blank Canvas is the personal wine range of husband and wife team, Matt Thomson and Sophie Parker-Thomson, MW. With a focus on Marlborough, Syrah from Hawkes Bay and Pinot Noir from Central Otago, the Blank Canvas wines are exciting, small-batch and increasingly recognized as the avant-garde of New Zealand wine.
A wine of wonderful, pure aromatics this Gruner exemplifies classic notes of mandarin and ripe peach with an underlying trace of white pepper. The oak featuring in the wine is only obvious if you are told about it – it is there to provide richness and weight to the mid-palate, which is why Blank Canvas chose large French oak puncheons to do the job. A model vintage in Marlborough provided warm sunny days and cool nights which enabled all-important retention of acidity and ripeness of fruit. The result is a well-structured, luscious rendition of an Austrian classic.
With its citrus and hints of white pepper, this wine is a beautiful dish with ceviche, any grilled white fish or chicken infused with orange or paired with an orange and almond salad.

Baettig is the family project of winemaker Francisco "Pancho" Baettig (Errázuriz) and Carlos de Carlos in Traiguén, some 600 kilometers south of Chile. They planted 15.4 hectares of Chardonnay and Pinot Noir on volcanic soils in 2013 and the first wines are hitting the Ontario market for the first time now.
These wines come from from a combination of parcels at Viñedo Los Suizos that deliver lively and juicy wines with tremendous fruit intensity. Los Parientes (the relatives) refers to the closeness of the different components within the same vineyard.
This Vino de Viñedo "Los Parientes" was made with Pinot Noir grapes grown in Malleco, in the appellation of Traiguén. Malleco is a land of wild forests, beautiful lakes, active volcanoes and abundant rain in the southern Chilean region of La Araucanía. The ancient volcanic soils of this area are composed of pyroclastic volcanic breccia of andesite lava, with clay to loam texture. The abundant rainfall throughout the year allows Baettig to practice a dry-farming viticulture.
The grapes were harvested during the last 10 days of March, and fermented with native yeasts and a small portion of whole cluster (8%). The wine aged for 10 months in French oak barrels—10% in new 300L casks.
Vivid red-violet in colour, the nose is clean and pure, with intense aromas of red fruits such as cherry, raspberry and delicate floral notes of hibiscus and rose-hip. Polished and fine tannins surround the palate with a mineral texture. Flavours of blueberries, strawberries and black tea are also perceived. With juicy acidity and subtle spicy notes, it is a wine with silky tannins, vibrant freshness and great fruit intensity.

‘Kadarka-man’ is how Zoltán Heimann Jr is known around town. The son of Ágnes & Zoltán Heimann completed his training in Geisenheim, Montpellier and Udine. He learned modern international techniques, and got to know many grape varieties and many vineyards on the Mosel, in Tuscany and Down Under in the Yarra Valley. What always fascinated him the most was the unmistakable flavour of each individual origin.
After returning to his native Szekszárd in southern Hungary, Zoltán got it into his head to get to the bottom of the indigenous expression of his homeland, and has taken up the old local grape variety Kadarka as a major project. The powerful counterpart to Kadarka is the spicy Kékfrankos (known in Austria as Blaufränkisch), which possesses the virtue of reflecting its soil of origin quite precisely.
His wines are sophisticated and uncompromising, and provide a contrast to the popular & charming wines of the family estate. Under the name Heimann & Fiai (Heimann & Sons), he is presenting distinctive & original creations that appeal in particular to those wine lovers who are looking for uniqueness and expression of terroir.
Kadarka is part of Hungarian heritage, but that is not the main reason why we love it. Its grace, delicate tannins and distinctive spicy character make it an excellent match with modern cuisine. Kadarka is a capricious variety, so the winery has set out to identify and cultivate rare and forgotten clones to improve its consistency. In their experience great precision and low intervention in winemaking are the key to preserving its unique character.
Ideal with spicy Asian dishes, but also perfect with pasta, dishes made with tomato and with typical examples of Hungarian cuisine made with paprika.

The grapes for the Szekszárd Kékfrankos come from younger vineyards with vines aged between 5 to 10 years. Lower in concentration and with bright fruit aromas it is a genuine expression of the Szekszárd terroir and provides the right balance for an everyday bistro red.
This wine pairs well with lamb and vegetable dishes - try layered eggplant or Hungarian layered potato with paprika.

Among all of the Kékfrankos plantings Bati Kereszt is the most protected. A north-facing plot, covered from two sides by forest where ripening and harvest are delayed by 2-3 weeks compared to other vineyards. The prolonged growing season adorns the wines with a more fragile structure and typically delicate, floral aromas. Plenty of fruit on the nose, mainly sour cherry. Pleasantly gentle, rounded, tame. This is a natural and simple, easy to drink, smooth wine with a medium finish.
Pair with suckling pig, lamb, duck or goose. A great compliment to plates garnished with fruit, beetroot, red cabbage or sweet potato.

Proudly family owned, the Borthwick vineyard is an established vineyard situated in Gladstone, the heart of the Wairarapa. Producing quality wine for over a decade, Paddy, an experienced wine maker, has gained a reputation for producing consistently great wines. The twenty seven hectares of vines bordering the Ruamahunga River are growing on stony, free draining, alluvial soils, with a micro climate giving warm daily temperatures, cool nights and low rainfall; perfect conditions for producing distinctive, quality wines.
Traditional Burgundian techniques and minimal handling has produced a Pinot Noir with an intense bouquet of cherries and plums. Flavours of earth and spice complement a rich silky palate with a purity of fruit and finely integrated tannin structure.

Garage Wine Co was literally started in a garage in 2001, by Etobicoke expat Derek Mossman and his wife Pilar Miranda. Since then, the dynamic duo have chosen to revive old vineyards in marginalized Chilean communities. They work mostly in the regions of Maule and Itata where they make highly coveted wines.
For years, Derek and Pilar watched as the small farmers with whom they grow the parcel wines were forced to accept prices fixed [illegally] by agro-giants far below their costs for working the earth. So they developed Single Ferments as a dignified means of getting more of their wonderful fruit made into wine for export.
The Single Ferment Series wines include fruit from more than one parcel or vineyard site and are co-fermented in one single tank. This wine is made with Pais from Portezuelo, and it's called '215 BC Ferment', because Pais was being cultivated in the region 215 years before Cabernet Sauvignon was documented for the first time. The wine is super fresh and clean. It is also soft, floral, slightly rustic and with a special finesse.

Having completed over fifty back-to-back vintages in both New Zealand and Europe as an award-winning winemaking consultant, Matt together with Sophie felt it was time to create and build a wine brand together, with their first vintage in 2013. Blank Canvas embodies their own expression of art-meets-science with single-vineyard, small batch wines that push the sensory boundaries and challenge winemaking orthodoxy.
Winemaker Matt Thomson’s science background defines the parameters of his winemaking canvas, allowing creativity to flow within those bounds. Together with business partner, Master of Wine student and wife Sophie Parker-Thomson, Matt is striving to achieve the unique winemaking fusion between art and science, pushing the boundaries to capture a unique expression.
Sophie recently obtained her Master of Wine title, joining 149 women MWs globally with the total number of MWs in the world now 418 in 32 countries.

Grüner Veltliner is rare enough in New Zealand, but one with six years of bottle age is unique. But what a brilliant wine this is. Part of Matt Thomson and Sophie Parker-Thomson’s off-the-wall series of small volume Kiwi whites and reds, this wouldn’t look out of place in a line up of top Austrian examples of the grape. Partially barrel fermented in larger French oak barrels, it’s bright, focused and remarkably youthful, with notes of bay leaf and white pepper, crunchy minerality and pear and citrus fruit. Now this really does have Grüner Veltliner written all over it even though the vines are still pretty young (this is the fourth harvest). It is certainly peppery but it also has the oily (in a good way) depth that I have only ever seen in the Wachau. There’s some citrus and green fruit too but also a mineral, dry texture. I do just slightly feel the residual sugar on the finish and would prefer it bone dry, even it that made it slightly more severe. But it is well balanced and remarkably full bodied given the moderate alcohol. Still incredibly fresh but starting to show the complexity of some bottle age. I look forward to tasting it again.
