Fresne-Ducret is rich in family history and has been rooted in the premier cru village of Villedommange since the mid 1800s. Originally growing grapes for the big champagne houses, it wasn’t until the end of the second world war that the family decided to make their own wine. The tradition carries on today with Pierre Fresne and his wife Daniella (an Oakville ex-pat). Their philosophy is to produce wines that best exemplify the terroir of Villedommange, and they do this with sustainability in mind.

In 2014 Pierre Fresne began a new adventure in creating a series of micro-batch cuvées for connoisseurs of champagne. Each year, he creates one or two “experiments” to try techniques that he thinks will yield interesting wines. This collection of craft champagnes is called Arquémie, the French word for alchemy used in the Middle Ages and the Renaissance. Defined as a “truly regal science and an undoubtedly divine study…it makes a thousand different waters, a thousand oils, different liqueurs and infinite other things without which we could not live comfortably or even live at all”, the name Arquémie truly embodies the spirit of the collection.

This beautiful bubbly is quite intense on the nose with citrus fruit notes dominating at first, followed by almond and floral notes. Clean and crisp in the mouth. Creamy texture with delicate citrus, herbal and mineral flavours. Long and refreshing
finish.

Oysters and caviar are classic partners with Blanc de Blancs as they match the intensity and freshness of the wine. Also look to fried foods, including Fish 'n' Chips and calamari, or smoked fish such as salmon or trout.

In 2014, Pierre Fresne embarked on a new adventure by creating a limited series of champagnes based on his desire for experimentation. Since then, he has produced one or two of these wines each year. Each are unique, according to his wishes and the profile of the vintage. This unique collection is called Arquémie, the term for alchemy in the Middle Ages. In 2018 Pierre began converting the vineyards to organic viticulture, and 2021 will be their first organic certified vintage.

This is classy, bone dry, complex and complete champagne, in no need of dosage (sugar) to find ideal balance. The profile features both fresh and dried fruit and plenty of autolysis-yeasty-doughy-brioche character, and outstanding length, finishing on savoury-sotolone flavours like maple syrup and fenugreek. Classy and composed, genuinely intense and concentrated, also very breezy and representative. Superb quality sparkling wine.
