Depending on the conditions vintage the proportions and grapes blended in this wine will vary. The grapes are harvested and vinified separetely. Some of them, such as Marmajuelo or Gual, grow near the Ocean and are normally harvested in early August. Vijariego Blanco is cultivated at much higher altitude, and it is not picked until late October. Once all varieties are fermented and aged independently, the Ensamblaje is blended.\u003c\/p\u003e\n\u003cp\u003eThis white blend is extremely aromatic, when aromas of honey and tropical fruits, such as apricot. It was, together with the grape Marmajuelo, the first almost extinct variety tha Viñátigo recuperated. It was brought from the island of Madeira, where it is known as Boal. In Tenerife, the grape finds the perfect environment to ripen, and is made as a dry wine.\u003c\/p\u003e\n\u003cp\u003eViñátigo's Gual is fermented 50% in stainless steel tanks and 50% in concrete eggs. It is incredibly aromatic: with layers of smokiness, floral notes such as jasmine; and tropical fruits like pineapples.
