Réva manages vineyards in some of the most important Langhe crus: Ravera in Novello, Lazzarito in Serralunga and Cannubi in Barolo. Réva winery focuses on producing wines of excellence with extreme attention to the particular characteristics of each grape variety and the utmost respect for diversity. All the vineyards are cultivated organically and the estate is run by a group of young professionals who value both tradition and innovation.

The grapes for this Barolo come from carefully selected vineyards in Monforte d'Alba, Novello, Serralunga d'Alba and Grinzane Cavour. Fermented spontaneously on the skins for 35 days, it has been aged in oak barrels for 24 months.

A limited series of only 4,500 bottles, this Barolo delivers aromas of sage, rose petals, red-skinned berry and a delicate hint of tobacco. The palate is full, deep and juicy, with peppery notes of Morello cherry and clove, and delicate tannins.

Pairing suggestion: Enjoy this Barolo with beef, game and stews. Classic pairing with truffles! The ageing potential is 20 years.

Fresne-Ducret is rich in family history and has been rooted in the premier cru village of Villedommange since the mid 1800s. Le Chemin du Chemin is a foray into the essence of their winery.

The first aromas are of apricot and fresh bread, with floral notes, giving way to more complex notes of praline, hazelnut and shortbread. In the mouth, delicate brioche aromas, creamy and buttery, followed by a savouriness with hints of tea. Particularly well-balanced, with a soft astringency.  Aged for a minimum of 48 months on the lees in underground cellars.

Pairing suggestion: Pair this excellent champagne with all the classics matches: oysters, light fish dishes... We also recommend to pair it with fried chicken, porchetta, potato chips or seared scallops. It really does goes with everything!

Vassaltis is the latest addition to Santorini’s long, storied winemaking history. Owner Yannis Valambous’ passion for wine drew him back to the island of Santorini, where he spent many a happy family holiday as a child. In the wake of the 2010 Greek financial crisis, a plan took root in his mind, a plan that was part dream, part folly. Yannis sought to breathe new life into the vineyards he inherited from his father.

An exceptionally complete wine with a great ageing potential, shows the true essence of what Santorini and Assyrtiko are about: aromas of basalt and pumice stone with ripe tropical fruits, honeysuckle and maritime salinity, and a palate of salty green fruits with high levels of minerality and acidity. 

Pairing suggestion: The long aftertaste adds depth and weight to the wine making it a perfect pairing for seafood and fish.

About the Winery

Champagne Fresne Ducret

Fresne-Ducret is rich in family history and has been rooted in the premier cru village of Villedommange since the mid 1800s. Originally growing grapes for the big champagne houses, it wasn’t until the end of the second world war that the family decided to make their own wine. The tradition carries on today with Pierre Fresne and his wife Daniella (an Oakville ex-pat). Their philosophy is to produce wines that best exemplify the terroir of Villedommange, and they do this with sustainability in mind.

In 2014, Pierre Fresne embarked on a new adventure by creating a limited series of champagnes based on his desire for experimentation. Since then, he has produced one or two of these wines each year. Each are unique, according to his wishes and the profile of the vintage. This unique collection is called Arquémie, the term for alchemy in the Middle Ages. In 2018 Pierre began converting the vineyards to organic viticulture, and 2021 will be their first organic certified vintage.
